Chicken Fajita Grilled Cheese Recipe

Chicken Fajita Grilled Cheese
Ingredients
  • 1 tablespoon butter
  • 2 slices bread
  • 1 slice cheddar or 1/4 cup shredded
  • 1 slice jack or 1/4 cup shredded
  • 1/2 cup chicken fajitas
  • guacamole optional
  • salsa optional
  • sour cream optional
Instructions
  1. Heat a pan over medium heat.
  2. Butter one side of each slice of bread, place one slice in the pan with buttered side down, top with half of the cheddar followed by the chicken fajitas, the remaining cheddar and finally the other slice of bread with buttered side up.
  3. Grill until golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
  4. Serve with guacamole, salsa and sour cream for dipping.
  5. Option: Stuff the chicken fajita grilled cheese with the guacamole, salsa and sour cream.

  • dry breadcrumbs
  • 1/2 cup milk
  • 1 egg mixed with the milk
  • 8 ounces swiss cheese cubed
  • 8 ounces ham diced
  • 1 10 3/4 oz can cream of chicken soup
  • 1 cup milk
Instructions
  1. Dip chicken in egg and milk mixture, then toss with bread crumbs, coating well. Brown in a little oil until golden.
  2. Place chicken in a baking dish, add cheese and ham.
  3. Mix soup with 1 cup of milk and pour over all.
  4. Bake at 350°F for 30-35 minutes, or until tender and bubbly.

No Bake Cherry Cheesecake
Ingredients
  • 1 can cherry pie filling
  • 1/2 cup butter
  • 16 ounces Sour Cream
  • 8 ounces Cream Cheese
  • 16 ounces marshmallows
  • 2 regular size keebler ready graham pie crusts save plastic as cover
Instructions
  1. In med-large bowl mix together sour cream and cream cheese until smooth and set aside.
  2. On stove top melt stick of butter and mix in marshmallows little at a time until smooth.
  3. Quickly add marshmallow mix into the sour cream/cream cheese mix and quickly mix those together.
  4. Pour equal amount of cheesecake into each of the ready pie crusts. Cover the pies with the plastic that came with the pie. Place in fridge overnight.
  5. Once pie is firm you may top with cherry pie filling or any other fruit you may want to top pie with.

  • 4 ounces linguine cooked al dente

Butterscotch Apple Pecan Cobbler
Ingredients
  • 1 12 ounce Butterscotch Flavored Morsels (2 cups)
  • 1/4 cup brown sugar firmly packed
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 2 1/2 lbs tart apples peeled and diced
Topping
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar firmly packed
  • 4 tablespoons butter 1/2 stick
  • 1 cup pecans chopped
  • 3/4 cup quick oats or 3/4 cup old fashioned oats uncooked
Instructions
  1. Preheat the oven to 375.
  2. In a small bowl, combine butterscotch morsels, brown sugar, flour and cinnamon; set aside.
  3. Place apples in a 13x9 inch baking pan-sprinkle morsel mixture over the apples.
  4. Bake for 20 minutes.
  5. To make the topping, combine the flour and brown sugar; cut in butter with pastry blender or two knives till mixture is crumbly.
  6. Stir in pecans and oats. Sprinkle over apple mixture. Bake 30-40 minutes or until apples are tender.

Serve warm with vanilla ice cream or whipped cream.

  • 1/2 cup milk
  • 16 oz refrigerated breakfast biscuits I used the Pillsbury flaky kind

  • 1 pound bacon cooked and broken into pieces
Instructions
  1. Prepare an 8 1/2 x 11 baking pan by spraying with nonstick spray. Preheat your oven to 350 degrees.

  2. Mix eggs and milk in a large bowl. Cut each biscuit (I’m all about scissors in the kitchen) into fours and add it to the bowl. I like to do this before I cook the bacon or cut up the scallions – give the biscuits some time to really soak in the eggs.

  3. Cut up the scallions, shred the cheese, cook and break up the bacon (or sausage). Add everything to the bowl.

  4. Mix it all up and pour it into the pan. Bake at 350 for 45 to 50 minutes .. closer to 50 so it isn't runny.

Tips and Tidbits

Make ahead: You can make up this casserole the night before. Leave it in the mixing bowl and cover with plastic wrap and refrigerate. If using bacon don’t add it in or it will get excessively soggy. The ham and sausage will be ok.

In the morning, give it a good stir (add the bacon) and then pour it into the prepared baking dish and proceed to bake as directed.

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 3/4 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups shredded carrots
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 1 8 ounce cans crushed pineapple, drained
Carrot Cake Frosting
  • 1 8 ounce package cream cheese, softened
  • 1/4 cup butter softened
  • 2 cups icing sugar
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).  Grease and flour two 10 inch cake pans.
  2. Mix flour, baking soda, baking powder, salt and cinnamon; make a well in the center and add sugar, oil, eggs and vanilla. Mix with wooden spoon until smooth.
  3. Stir in carrots, coconut, walnuts and pineapple. Pour into prepared pans and bake for about 45 minutes. Don't panic, the center will sink a little.
  4. Allow to cool; when cool, ice the cake. You can certainly use your favorite cream cheese frosting to ice this cake, but the one I've included is highly recommended
  5. To make the frosting: Cream the butter and cream cheese until smooth; add the icing sugar and beat until creamy.

Crock Pot Beef and Broccoli
Ingredients
  • 1 pound boneless beef chuck roast sliced into thin strips
  • 1 cup beef consume
  • 1/2 cup soy sauce
  • 1/3  cup brown sugar or honey
  • 1 tablespoon sesame oil
  • 3 garlic cloves minced
  • 2 tablespoons cornstarch
  • 2 tablespoons cooled sauce from the crock pot after being cooked
  • Fresh broccoli florets as many as desired
  • Hot cooked rice
Instructions
  1. Place beef in a crock pot.
  2. In a small bowl, combine consommé, soy sauce, brown sugar/honey, oil, and garlic. Pour over beef. Cook on low for 6-8 hours.
  3. In a cup, stir cornstarch and sauce form the crock pot until smooth. Add to crock pot. Stir well to combine. (If your sauce is not thickening, try bringing your sauce to a boil on the stove top with the corn starch mixture. Boil until your desired consistency is reached).
  4. Add broccoli to the crock pot. Stir to combine.
  5. Cover and cook an additional 30 minutes on high (the sauce has to boil for it to thicken).
  6. Serve over hot cooked rice.

  • 1 pound cauliflower
  • 1 cup cheddar cheese
  • 1/2 teaspoon garlic salt

  1. Steam or boil cauliflower until soft. Frozen or fresh is fine, whichever is easiest for you. I like to use frozen, cooked according to package directions.
  2. While cauliflower is cooking, brown hamburger. Drain off grease. Add cauliflower, seasonings and cheese. Mix until cheese is melted.

  • 4 lbs country-style pork ribs trimmed

  • 3 garlic cloves minced
  • 1/2 teaspoon cumin

  • 1 18 ounce bottles hickory flavored barbecue sauce
  • 1 teaspoon green chili sauce Tabasco Makes a green Jalapeno sauce but use any hot sauce of choice
Instructions
  1. Place beans in a 5-quart electric slow cooker; set aside.
  2. Cut ribs apart; sprinkle with garlic powder, salt, and pepper.
  3. Place ribs on a broiling pan. Besides browning for taste this removes some of the fat.
  4. Broil 5 1/2 inches from heat 18 to 20 minutes or until browned, turning once.
  5. Add ribs to slow cooker, and sprinkle with onion, garlic, and pepper.
  6. Combine jelly, barbecue sauce, and hot sauce in a saucepan; cook over low heat until jelly melts. (I just added right to the beans and it melted in with no problem).
  7. Pour over ribs; stir gently.
  8. Cover and cook at HIGH 5 to 6 hours or at LOW 9 to 10 hours.
  9. Remove ribs.
  10. Drain bean mixture, reserving sauce.
  11. Skim fat from sauce.
  12. Arrange ribs over bean mixture; serve with sauce.
  13. Serve on a bed of rice.
