Ingredients
  • 1 1/4 pounds medium asparagus tough stem ends trimmed
  • 1/2 pound medium white button mushrooms stemmed and quartered
  • 2 tablespoons extra virgin olive oil
  • salt and freshly ground pepper to taste
  • 2 -3 teaspoons balsamic vinegar or 2 -3 teaspoons sherry wine vinegar
Instructions
  1. Preheat oven to 425 degrees.
  2. In a non-stick baking sheet with sides, toss the asparagus and mushrooms with the oil and season with salt and pepper. Spread the vegetables in a single layer.

  3. Roast for 10 minutes or until the vegetables are tender and browned, turning once or twice.

  4. Place the vegetables on a serving platter. Sprinkle with vinegar and toss gently to combine. Season with additional salt and pepper as desired.

  • 4 medium potatoes
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1 teaspoon paprika

  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon Tabasco sauce
  • 1 tablespoon vegetable oil
Instructions
  1. Preheat oven to 400 degrees F.

  2. In a small bowl, combine the oregano, thyme, paprika, cayenne, black pepper, sugar, cumin, salt, garlic powder, onion powder, Tabasco sauce, and oil; mix well into a paste.

  3. Line a large baking sheet with aluminum foil; pour a small amount of oil onto the foil and spread with a paper towel.

  4. Peel the potatoes and slice into french fry shapes. Place the fries in a plastic bag with the paste and work paste onto fries; alternatively, you can do this in a bowl, but the bag method is easier.

  5. Place the fries on the lined baking sheet, trying not to let edges touch.

  6. Bake in preheated oven for approximately 30-35 minutes (your time may vary with the size fry you cut); turn once during cooking to brown the underside.

  • 1 16 ounce bag frozen green beans or 2 (14 ounce) cans green beans, do not drain
  • 4 -6 slices bacon
  • 1 large onion sliced large chunks
  • 1 dash red pepper flakes optional
  • salt and pepper
Instructions
  1. Put the green beans in pot- if canned add the juices, if frozen add water enough to see but not cover beans- cook on medium heat.
  2. Fry the bacon until cooked but not too crisp- drain on paper towel.
  3. Cut the onion in large (thick) slices and break rings apart in to beans.
  4. Crumble or rip the bacon apart and add to the beans. Add spices to taste. Let cook for a few hours on low heat.
  5. If want to serve sooner- turn the heat up and cook until the water boils down.
  6. You can put in the crock pot on low all day long and let simmer.

  5. (Casserole can be prepared to this point, covered and refrigerated for up to 2 days or frozen for up to 1 week. Let thaw in refrigerator for 24 hours. Add 10 minutes to baking time.)
  6. Bake in 400 degree oven for about 20 minutes or until heated through and top is lightly golden.

Crock Pot Collard Greens and Ham
Ingredients
  • 1 smoked ham hock
  • 4 -6 slices thick bacon optional
  • 8 cups collard greens tough ribs and stems removed, torn into thin strips (kale may also be used)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups water
Serve With
  • 1/2 cup minced mild onion optional
  • red wine vinegar amount to taste (optional)
  • hot pepper sauce I like Tabasco, amount to taste (optional)
Instructions
  1. Note: be sure to rinse collards thoroughly before using.
  2. Remove any thick stems and tear or chop leaves into strips.
  3. Cook the bacon in a skillet until the fat renders and bacon becomes translucent.
  4. Place the bacon, with its drippings, into the bottom of the crock pot. Add the greens, ham hock, salt, pepper, and water into crock pot. Cover and cook on low for 6 hours or on high for 3 hours.
  5. Remove the ham hock, discard the skin and shred the meat, returning meat to crock pot.
Recipe Notes

Serve the greens with minced onion, vinegar and Tabasco, if desired.

  1. Scrub the potatoes, or peel them if you don't like skins. Cut into 1-inch cubes and cook in boiling water about 15 minutes or until almost starting to fall apart.
  2. While the potatoes are cooking, slice the spring onions very finely, including the green part.
  3. Drain the potatoes and transfer to a bowl. While they're still hot, pour in the olive oil and mix well.
  4. They should start to lose their shape a bit- this is the secret of this salad!
  5. Add the spring onions, vinegar, salt, and black pepper.
  6. Taste as you go along and adjust the amounts of salt, pepper, vinegar, and oil to your taste.
  7. Leave to cool; chill if you wish, and serve.

Easy Marinated Coleslaw
Ingredients
  • 2 1 lb packages coleslaw mix
  • 1 medium onion chopped
  • 3/4 cup sugar
  • 2 tablespoons salt
  • 1 tablespoon garlic powder
  • 1 cup cider vinegar
  • 2/3 cup Crisco cooking oil I use canola oil
Instructions
  1. Bring to boil, the cider vinegar, oil, sugar, salt & garlic powder, stirring.
  2. Pour the hot dressing over the 2 lbs of cabbage mixture and onions and stir (It will look like there is not enough dressing for the amount of cabbage, but as the cabbage breaks down, you will have plenty).
  3. Cover tightly.
  4. Let sit on the counter for 2 hours (stirring occasionally during the 2 hours while it marinates), then refrigerate.

Ingredients
  • 5 slices bacon
  • 5 -6 small yellow squash sliced
  • 1 medium onion chopped
  • salt
  • pepper
Instructions
  1. Fry the bacon until crisp and remove from the skillet.
  2. Add the chopped onion and cook until translucent. Add the sliced squash fry stirring frequently until the squash is tender.
  3. Season with salt and pepper.
  4. Crush the bacon and add back to pan. Serve it up!
