Easy Baked Ziti – Really Quick Dinner Dish

This easy baked ziti is incredible! A great recipe. It’s cheesy and creamy and easy! I made it for my neighbors and they couldn’t thank me enough.

It also freezes well.

I will definitely be making this recipe often. Good Italian comfort food!

This Baked Ziti dish is not only quick to make it tastes awesome.

Ingredients
  • 1 lb ziti pasta cooked al dente
  • 1 lb Italian sausage cooked and chopped
  • 1 15 ounce container ricotta cheese
  • 1 egg
  • 2 tablespoons parsley
  • 2 cups mozzarella cheese shredded, divided
  • 1/4 cup parmesan cheese
  • 1 28 ounce jar pasta sauce, divided
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Cook the ziti according to the package directions; drain; set aside.
  3. Mix the ricotta, egg, parsley, 1-1/2 cups of the mozarella cheese, and parmesan cheese in a large bowl.
  4. Mix cooked sausage and pasta in with ricotta mixture. Mix in 3/4 jar of sauce. Transfer the mixture into a 2 quart casserole dish. Top with the rest of the sauce and mozarella cheese.
  5. Bake for 30 to 35 minutes, or until hot and bubbly.

To freeze: Cover the unbaked dish with foil and freeze. When frozen you can pop it out of the container and put in a freezer bag if desired.

To heat from frozen: Thaw. Preheat oven to 350 degrees Fahrenheit. Cover and bake for 20 minutes. Uncover and bake for 10-15 minutes more.

Ingredients
  • 1 lb penne pasta
  • 1 lb broccoli floret I use frozen
  • 8 ounces Italian sausage cut in bite-size chunks (sweet & mild)
  • 2 tablespoons garlic minced (you can use less if you want)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup grated pecorino Romano cheese
Instructions
  1. Boil the water and cook the penne according to package directions.
  2. Meanwhile, heat the oil (medium-high heat) in a large skillet and saute the broccoli, sausage and garlic until tender and starting to brown, about 15 to 20 minutes.
  3. Toss the butter, hot pasta, sausage mixture and Romano cheese together and serve. Pass the grated cheese at the table.

Pasta with Mushroom Garlic Sauce
Ingredients
  • 1 lb linguine cooked ala dente,drain
  • 6 tablespoons butter
  • 10 cloves garlic minced
  • 6 cups mushrooms sliced
  • 1 teaspoon dried basil
  • 1/4 teaspoon teaspoon salt
  • pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley chopped
  • Parmesan cheese grated
Instructions
  1. In a skillet melt 2 tbsp of the butter. Add the garlic, allow to brown, then add the mushrooms, basil, Salt& Pepper. Cook until the mushrooms are just tender.
  2. Add the remaining butter and olive oil. Stir and remove from heat.
  3. When Pasta is cooked reheat the sauce and add the parsley.
  4. Mix with Pasta and enjoy!

Meatless Baked Spaghetti Pie
1⁄2 lb spaghetti 2 large eggs 1 (15 ounce) container part-skim ricotta cheese 3⁄4 cup fresh parmesan cheese, grated 1⁄2 cup mozzarella cheese, shredded 2 tablespoons fresh romano cheese, grated 3 -4 cups marinara sauce
Ingredients
  • 1/2 pound spaghetti
  • 2 large eggs
  • 1 15 ounce container part-skim ricotta cheese
  • 3/4 cup fresh parmesan cheese grated
  • 1/2 cup mozzarella cheese shredded
  • 2 tablespoons fresh romano cheese grated
  • 3 -4 cups marinara sauce
Instructions
  1. Cook the spaghetti according to package directions; drain.
  2. Meanwhile, preheat oven to 350 degrees F.
  3. Grease a 9-inch glass pie plate.
  4. In large bowl, with fork, beat eggs. Stir the ricotta and Parmesan cheese until blended. Add the spaghetti to the ricotta mixture and stir until well coated.
  5. Transfer the spaghetti mixture to prepared pie plate; top with marinara sauce. Sprinkle with the mozzarella and remaining Romano cheese.
  6. Bake the pie 25 minutes.
  7. Remove from the oven and let stand 10 minutes for easier serving.
  8. Cut into wedges to serve.

A really good friend shared this Creamy Ramen Noodles recipe with me several years ago. It’s her trick for dressing up those inexpensive noodles for her kids, and I think it’s very good.

Creamy Ramen Noodles

It’s great on its own as a quick meal, but can be an easy side for many dishes.

This is especially good if you break up a slice of American cheese and melt it in, giving the Ramen a creamy cheese sauce!

Creamy Ramen Noodles
Ingredients
  • 1 3 ounce package ramen noodles, any flavor, with seasoning packet
  • 2 cups water
  • 2 tablespoons butter
  • 1/4 cup milk
Instructions
  1. Bring water to boil in a small sauce pan. Add the dried noodles and cook 3 minutes, or until the noodles are tender. Stir occasionally.
  2. Drain away the water. Return the noodles to the sauce pan. Add the butter, milk and contents of the seasoning packet.
  3. If your tastes desire, you may not use all of the seasoning packet.
  4. Heat on low heat and stir until the butter is melted and the noodles are coated with creamy sauce.

Serve.

  • 2 tortillas
  • 1/2 cup prepared macaroni and cheese leftovers work fine
  • 1 slice cheese if you like it extra gooey
Instructions
Microwave Directions:.
  1. Place 1 of the tortilla shells on a microwave plate.
  2. Place the Mac and Cheese (and the sliced cheese if desired) on top of the shell.
  3. Place the 2nd shell over the Mac and Cheese.
  4. Cook for 1 minute and 45 seconds or until cheese is melted.
  5. Cut into quarters and let cool for about 1 minute.
Stove Top Directions.
  1. Place Mac and Cheese (and extra cheese desired put it closer to the bottom) on 1 of the shells.
  2. Place Mac and Cheese covered shell in warm pan over medium heat.
  3. Cook about 3 minutes, or until the cheese gets gooey.
  4. Place 2nd shell on top of the Mac and Cheese.
  5. Flip over and cook for another 2 to 3 minutes.

Easy Macaroni Salad
Ingredients
  • 8 ounces elbow macaroni
  • 1 cup light mayonnaise can use lowfat
  • 3 tablespoons low-fat milk
  • 2 tablespoons vinegar
  • 1 tablespoon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon teaspoon pepper
  • 1 cup celery sliced thin
  • 1 cup green bell pepper can use red if you like, chopped
  • 1/4 cup onion chopped
Instructions
  1. Cook and drain the pasta according to the package directions; rinse with cold water to cool.
  2. In large bowl combine the mayonnaise, milk, vinegar, mustard, sugar, salt and pepper.
  3. Add the macaroni, celery, green pepper and onion; toss to coat.
  4. Cover; chill to blend flavors.

I found this Smoked Turkey Sausage With Pasta recipe in an issue of Taste of Home’s Light and Tasty. I was very pleased with the results when I made it. The leftovers are even better.

I just made this recently and it was very quick to come together, and so full of flavor!

I did add a couple pinches of crushed red peppers and topped it off with some shredded Parmesan cheese.

The dish was colorful with the fresh spinach against the red of the tomato and sausage, and the browned mushrooms.

Smoked Turkey Sausage With Pasta
Ingredients
  • 4 ounces uncooked angel hair pasta
  • 1/2 pound reduced-fat smoked turkey sausage cut into 1/2 inch slices
  • 2 cups fresh sliced mushrooms
  • 2 cloves garlic minced
  • 1 1/2 teaspoons dried basil
  • 1 tablespoon olive oil
  • 2 cups julienned seeded plum tomatoes
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
Instructions
  1. Cook the pasta.
  2. On another burner, in a large non-stick skillet saute the sausage, mushrooms, garlic, and basil in oil until mushrooms are tender.
  3. Drain the pasta and add to the sausage mixture. Add the tomatoes, salt, and pepper. Toss gently and heat through.

Pasta Puttanesca ( the Madame’s Pasta )

Wow! I would rather have a plate of this Pasta Puttanesca over tomato sauce spaghetti any day. In the absence of a tomato sauce… the flavors really stand out.

This dish originated in the red light districts of Italy when the ladies of the night needed a quick and cheap meal after a long nights work “at the office.”

Great recipe. Very versatile and adaptable too, whatever veggies or meat that is on hand can be used.

Pasta Puttanesca
Ingredients
  • 1/2 pound spaghetti
  • 1 14 ounce can Italian tomatoes
  • 1/2 teaspoon sugar
  • 4 tablespoons flat leaf parsley
  • 4 garlic cloves minced
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup olive oil
  • 1 teaspoon anchovy paste optional
  • 2 tablespoons black olives minced
  • 2 tablespoons green olives minced
  • 1 tablespoon capers
  • 3 green onions chopped
  • 3 ounces red wine
  • parmesan cheese
  • fresh basil leaf chopped
Instructions
  1. Sauté the onions, garlic, and pepper flakes in the olive oil for about two minutes until fragrant.
  2. Add the tomatoes and half of their juices, sugar, wine, fresh parsley, olives, capers, anchovy paste,(or anchovies)and Italian seasoning.
  3. Bring to a boil and simmer about 25 minutes, stirring occasionally, and adding more reserved juice if it becomes dry. Break up large chunks of tomatoes but please leave a chunky consistency, we're NOT making spaghetti!
  4. While this is simmering, prepare the spaghetti until done and drain.
  5. Sauce should be ready now so combine pasta and sauce and toss well.
  6. Top with Parmesan cheese and fresh basil.
