  • 1/2 cup firmly packed brown sugar

  • 1 teaspoon vanilla extract
  • 3 Granny Smith apples peeled, cored and finely chopped

  • 1/4 teaspoon ground nutmeg

  • 1/2 cup jarred caramel topping
Streusel Topping:
  • 1 cup firmly packed brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup quick cooking oats
  • 1/2 cup 8 Tablespoon butter, softened
Instructions
  1. Preheat oven to 350°.
  2. In a medium bowl, combine flour and brown sugar. Cut in 1 cup butter with a pastry blender until mixture is crumbly. Press evenly into a 13 x 9 x 2 inch baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.
  3. In a large bowl, beat cream cheese with 1/2 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, one at a time, and vanilla. Stir to combine. Pour over warm crust.
  4. In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with streusel topping. Bake 30 minutes, or until filling is set. Drizzle with caramel topping.
  5. For streusel topping: in a small bowl, combine brown sugar, flour and oats. Cut in butter until crumbly. (Yields about 3 cups)

Tips and Tidbits

Definitely use Granny Smith apples, as they are so nice and tart.

These aren’t very sweet. You might want to add 1/8 cup brown sugar to the cream cheese mix. It adds a tad more sweetness for those with a sweet tooth.

  • 18 1 ounce squares bittersweet chocolate

  1. Preheat oven to 300 degrees F (150 degrees C). Grease one 10 inch round cake pan and set aside.
  2. In a small saucepan over medium heat combine the water, salt and sugar. Stir until completely dissolved and set aside.
  3. Either in the top half of a double boiler or in a microwave oven melt the bittersweet chocolate. Pour the chocolate into the bowl of an electric mixer.

  5. Pour the batter into the prepared pan. Have a pan larger than the cake pan ready, put the cake pan in the larger pan and fill the pan with boiling water halfway up the sides of the cake pan.
  6. Bake cake in the water bath at 300 degrees F (150 degrees C) for 45 minutes. The center will still look wet.
  7. Chill cake overnight in the pan. To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert onto a serving plate.

 

Tips and Tidbits For Flourless Cake

Use a lot of heavy-duty foil to seal the pan and keep the water bath out. Heavily used springform pans or cheap pans could leak.

Use parchment paper in the bottom of your springform pan. Spray the parchment and sides of the pan with PAM.

Ingredients
For the dough:
  • 2 C. self rising flour
  • 1 T. white sugar
  • 1/4 C. lard or shortening
  • milk
For the filling:
  • 6 oz. dried apples
  • water
  • 1 C. white sugar
  • oil for frying
Instructions
  1. In a mixing bowl combine the flour and sugar, cut in the lard using a pastry blender or 2 forks until crumbly. Add in just enough milk to form a dough.

  2. Knead just a bit, cover with plastic wrap, and place in the fridge for 1 hour.

  3. Meanwhile, put the dried apples in a pot and cover with water. Stir in the sugar and bring to a boil. Reduce heat to medium and cook until the apples are nice and tender and can be broken down with a fork. Add more water, if needed, to keep them from sticking and burning on the bottom.

  4. Once tender, remove from heat.

  5. Take half of the dough and place it on a well-floured surface. Using your hands press it out to a disk-like shape then use a dough roller and roll it very thin. Use a saucer or a 5" cookie cutter and cut the dough into rounds.

  6. Continue this until you have all the rounds that the dough will make.

  7. Take each round and place 2 spoonful's of the apple filling on the lower half. Fold the top half over and with a floured fork pinch around the edge to seal. Repeat with remaining dough and filling.

  8. Heat 1/2" oil to 300 degrees in a large skillet. Place a few in the oil and fry until nice and golden on one side, flip and do the same with the other. Drain on paper towels. Repeat with remaining pies.

  9. Makes approx. 8-10 pies.

Cheesecakes, unlike other cakes where beating air into the batter is key, suffer if over-mixed. For best results, have all the ingredients (cheese, eggs, liquids, and flavorings) at room temperature before blending.

The big bugaboo with cheesecake is cracking. Cheesecakes, like custards, rely heavily on eggs to set, which means they must cook gently and slowly. Otherwise, the eggs puff, overcook and get grainy, then constrict when cooled, resulting in an undesirable split in your smooth cake.

The main trick with cheesecake is gentle, coaxing heat. Just as you want them to cook slowly, you also want them to cool gradually. Quick changes of temperature upset the structure of the cake, causing cracks. For a moister, creamier cake, turn off the heat when the center’s still loose and let cool in the oven.

Many cheesecakes are baked in a water bath (a pan of water) to moderate the temperature. Since water remains at a constant temperature, the cake sets slowly, resulting in a super-creamy cheesecake.

With richly flavored cheesecakes, like chocolate, the same result can be achieved by baking slowly at low temperatures.

To prevent the cheesecake from cracking as it cools, run a thin knife around the edge of the cake as soon as it comes out of the oven. After chilling, remove the springform ring (but not the metal base).

A crack in your cheesecake is not the end of the world. Simply use it as a starting point when cutting your first slice.

Snickers Rice Krispie Treats Tips and Tidbits

For best results, use fresh marshmallows. 1 jar (7 oz.) of marshmallow creme can be substituted for the marshmallows but it will not setup as well.

Diet, reduced calorie or tub margarine is not recommended. Use real butter!

Store no more than two days at room temperature in an airtight container.

To freeze, place in layers separated by wax paper in an airtight container. Freeze for up to 6 weeks. Let stand at room temperature for 15 minutes before serving.

You can use this recipe for Popcorn Balls as well.

Just substitute the cereal with popped corn. And you can add food coloring or flavoring to the butter & marshmallows. Then just form into balls with greased
hands. You will probably want to double or triple the recipe. Much tastier than the Karo syrup kind of popcorn balls!

  2. Butter a 13" by 9" baking dish (I use the butter wrapper) and set aside.
  3. Melt butter on low in small sauce pan or skillet.
  4. Add lemon juice to sliced apples, set aside.
  5. Open can of crescent rolls and pull apart where the dough is perforated.
  6. Toss apple slices with the cinnamon and nutmeg.
  7. Starting at the large end of the crescent dough add 4-5 apple slices and roll dough into crescent shape. Place in prepared baking dish. Continue this until you have eight apple dumpling in your baking pan.
  8. Spoon melted butter over the top of each dumpling. Sprinkle sugar evenly over buttered dumplings. Pour the Mountain Dew carefully around the dumplings.
  9. Bake for 45 minutes. Do not open oven door during baking time.

Cool and ENJOY!!!

Tips and Tidbits

REMOVE DUMPLINGS FROM PAN WHILE HOT AND IMMEDIATELY AFTER TAKING OUT OF THE OVEN. Once cooled, the sugar and soda caramelizes and it is extremely difficult to remove dumplings.

  3. Beat cream cheese, sugar, flour and vanilla with mixer until blended. Add chocolate; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  4. Bake 45 min. or until center is almost set. Cool completely. Refrigerate 4 hours. Use foil handles to lift cheesecake from pan before cutting into pieces. Serve topped with berries.

  3. Over medium heat, stir constantly until the mixture comes to a boil. Boil and stir for 1 minute. Reduce heat to low if necessary.
  4. Into the egg yolks, add about two tablespoons of the hot liquid and whisk quickly with a fork. Repeat until eggs are heated. Add heated egg mixture to the pot while stirring constantly. Cook and stir for 1 minute.
  5. Remove from heat. Stir in the chocolate chips until melted. Add the vanilla extract and stir to combine. Add the butter and mix through.
  6. Spoon or ladle mixture into serving cups. Place plastic wrap directly on pudding to prevent skin from forming. Place in the fridge until chilled.
  7. Serve topped with whipped cream, chopped nuts, some chocolate shavings and a cherry!
