Cheeseburger Cauliflower
Ingredients
  • 1 1/2 pounds ground beef
  • 1 pound cauliflower
  • 1 cup cheddar cheese
  • 1/2 teaspoon garlic salt
  • salt and pepper to taste
Instructions
  1. Steam or boil cauliflower until soft. Frozen or fresh is fine, whichever is easiest for you. I like to use frozen, cooked according to package directions.
  2. While cauliflower is cooking, brown hamburger. Drain off grease. Add cauliflower, seasonings and cheese. Mix until cheese is melted.

This Cheesy Ham and Broccoli Bubble-Up Bake is a really good breakfast recipe. I love breakfast casseroles. I can bake one on Sunday and eat it all week.

This is another bubble up recipe. The bubble up recipes begin with Grands canned Biscuits and then adds some type of topping. As the dish bakes, the biscuits rise and bubble up through the filling.

Cheesy Ham and Broccoli Bubble-Up Bake
Ingredients
  • 1 box 10 oz frozen broccoli & zesty cheese sauce
  • 1 can 10.2 oz Grands!™ Flaky Layers refrigerated original biscuits
  • 9 eggs
  • 1 1/2 cups whole milk or 2% milk
  • 1 3/4 cups diced cooked ham
  • 1/3 cup chopped green onions
  • 1 1/2 cups shredded extra sharp Cheddar cheese 6 oz
Instructions
  1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  2. Microwave broccoli 1 to 2 minutes or just until thawed.
  3. Separate dough into 5 biscuits; cut each into 8 pieces. Place evenly in dish.
  4. In large bowl, beat eggs and milk with wire whisk until blended. Stir in ham, onions, broccoli and 1 cup of the cheese.
  5. Pour over biscuits in dish.
  6. Bake 20 minutes. Cover loosely with foil sprayed with cooking spray; bake 35 to 40 minutes longer or until center is set.
  7. Top with remaining cheese during last 5 minutes of bake time. Garnish with additional chopped green onions, if desired.

Slow Cooker Enchiladas
Ingredients
  • 1 pound ground beef
  • 1 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 can 16 ounces pinto or kidney beans, rinsed and drained
  • 1 can 15 ounces black beans, rinsed and drained
  • 1 can 10 ounces diced tomatoes and green chilies, undrained
  • 1/3 cup water
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup 4 ounces shredded sharp cheddar cheese
  • 1 cup 4 ounces shredded Monterey Jack cheese
  • 6 flour tortillas 6 inches
Instructions
  1. In a large skillet, cook the beef, onion and green pepper until meat is no longer pink; drain. Add the next eight ingredients; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Combine cheeses.
  2. In a 5-qt. slow cooker, layer about 3/4 cup beef mixture, one tortilla and about 1/3 cup cheese. Repeat layers. Cover and cook on low for 5-7 hours or until heated through.

Nannies Squash Casserole
Ingredients
  • 2 med. yellow squash sliced
  • 1 med. zucchini squash sliced
  • 1 med. onion chopped
  • 1 carrot peeled and sliced
  • 2 T. butter
  • 2 T. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 large egg beaten
  • 1/2 C. fresh breadcrumbs
  • 3/4 C. shredded cheddar cheese
Instructions
  1. In a pot, add the yellow and zucchini squash, onion and carrot. Cover with water and bring to a boil, cooking for 6 minutes. Drain well.
  2. Mash the veggie mixture (I used an my immersion blender for this) then stir in the remaining ingredients.
  3. Once combined, pour into a 1.5 quart, lightly greased, casserole dish.
  4. Bake in a 350 degree oven for 25-30 minutes or until the top begins to brown.

Redneck Casserole – Really Quick and Easy

In spite of the name Redneck Casserole and the fact that there’s only four off the shelf grocery store items in this recipe… It’s delicious!!!

Baked beans, hot dogs, tater tots and cheese. It has to be good.

And quick. This is a perfect weeknight dinner. A very short prep time and about 30 minutes in the oven and dinner is ready.

It’s nice to have a dish that you don’t have to be a master chef to put together.

  • 1 28 ounce can baked beans
  • 6 -8 hot dogs
  • 4 cups tater tots
  • 1 cup sharp cheddar cheese shredded
Instructions
  1. Set your oven to 450.
  2. Dump your can of baked beans into a medium sized casserole dish. Set the dish aside.
  3. Cut up your hot dogs into bite sized pieces and throw those into your casserole dish and mix until dogs are well coated with baked bean sauce.
  4. Cover the bean and dog mixture with tater tots. Use as many as you'd like. Just make sure to cover the mixture completely.
  5. Place the casserole dish in the oven for 1/2 an hour or until tater tots are golden brown. When Redneck Casserole is all cooked up, turn off the oven and sprinkle the top with cheese.
  6. Redneck Casserole is completely done when cheese is melted and you just can't take it anymore -- dig in!

(You can mix pretty much anything with this dish. Sour cream, ketchup, mustard, hot sauce, etc. in this Redneck Casserole).

Mexican Stuffed Shells – Tex/Mex Deluxe

These Mexican stuffed shells would probably not be recognized in Mexico but in Texas, it’s just the sort of thing that you could expect.

 

When I was a youngster my family moved from Alabama to Texas. I developed a love for Tex/Mex food there and even though I live in Alabama now my love still lives.

They are really economical too. One pound of ground beef is stretched to serve 6 very generous servings or eight with a side and a salad.

I like to have refried beans and a simple lettuce and tomato salad along with some tortillas.

  • 1 lb ground beef
  • 1 1 1/4 ounce package taco seasoning (can use low-sodium)
  • 1 4 ounce package cream cheese
  • 14 -16 large pasta shells
  • 1 cup salsa
  • 1 cup taco sauce
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey jack cheese shredded
  • 1 1/2 cups tortilla chips crushed (optional)
  • 3 green onions chopped
  • 1 cup sour cream
Instructions
  1. Preheat oven to 350°.
  2. In a frying pan cook ground beef; add taco seasoning and prepare according to package directions. Add cream cheese, cover, and then simmer until cheese is melted. Blend well. Set aside and cool completely.
  3. While the ground beef is cooking, cook the pasta shells according to directions; drain. Set shells out individually on a baking sheet so that they don’t stick together.
  4. Pour salsa on the bottom of a 9×13 inch baking dish. Stuff each shell with the meat mixture placing shells in dish open side up. Cover shells with taco sauce. Cover with foil and bake for 30 minutes.
  5. After 30 minutes, add shredded cheese and bake for 10-15 more minutes, with the foil removed. Top with green onions and serve with sour cream and/or more salsa.

This is a really good pork chops casserole. Even with lean pork chops. The potato and soup add some texture and a little fat to the dish.

 

Pork chops were a special treat in my family when I was growing up. Mostly we had chicken on Sundays and during the week it was pinto beans, potatoes, and cornbread.

Well, I can afford pork chops now and they’ve bred all the fat out of today’s hogs! Darn. I can’t win for losing.

However, this casserole is really good and not hard at all. In fact, it’s fall down easy!

This Cajun Chicken Pasta is most certainly not a traditional Italian pasta dish. I really don’t know how traditional Cajun it is either.

 

Cajuns dishes normally lean toward rice more than pasta.

But it does have all the traditional Cajun seasonings so I guess it’s Cajun-style anyway!

  • 3/4 lb Boneless Skinless Chicken Thighs cut into bite-size pieces
  • 12 oz Linguine or Pasta of your Choice
  • 1 Red Bell Pepper cut into strips
  • 1 Yellow Bell Pepper cut into strips
  • 1 Yellow Onion cut into half-moon slices
  • 8 oz Cremini Mushrooms sliced
  • 4 Cloves Garlic
  • 2 Tbsp Cajun Seasoning
  • 1 cup Chicken Stock
  • 1/4 cup Heavy Cream
  • 2 Tbsp Fresh Chopped Parsley
  • 4 Tbsp Unsalted Butter
  • Salt and Pepper to taste
Instructions
  1. Fill a large pot with water, add a generous sprinkle of salt and bring to a boil.

  2. Season the chicken thighs with the Cajun seasoning and set aside. In a large skillet with high sides, add 2 Tbsp of butter and allow it to melt over medium heat.

  3. Add the chicken thighs and cook them for about 4 to 5 minutes or until they develop some color on all sides, remove from the pan to a plate.

  4. Add remaining butter to the skillet and add the peppers, onions, garlic, and mushrooms. Cook the veggies for about 5 to 6 minutes or until they begin to cook down and develop some color.

  5. Add the chicken stock, turn the heat down to medium-low and cook for about 10 minutes or until the sauce has reduced by half. At this point, add the pasta to the boiling water and cook according to the package instructions.

  6. Add the half and half and season lightly with salt and pepper, toss in the cooked pasta and cook everything together for about a minute or until the sauce thickens.

  7. Add the parsley and serve!

  • 1/4 cup chopped onion

  • 1 package 1 lb 8 oz refrigerated garlic mashed potatoes (or your own recipe)
  • 1 cup shredded Cheddar cheese 4 oz

  • 2 slices precooked bacon chopped, if desired
  • 2 medium green onions chopped (2 tablespoons), if desired
Instructions
  1. Heat oven to 350°F.
  2. In large bowl, mix beef, onion, bread crumbs, sage, salt and egg until well blended.
  3. Press in bottom of ungreased 8-inch square (2-quart) glass baking dish. Spread mashed potatoes evenly over top. Sprinkle evenly with cheese.
  4. Bake uncovered about 50 minutes. Sprinkle with tomato, bacon and green onions.
