Slow-Cooker Chicken and Gravy
Ingredients
  • 4 large boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 2/3 ounce package Good Seasonings Italian salad dressing mix
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon chicken bouillon
  • 1 10 3/4 ounce can cream of chicken soup (I use 98 percent Fat Free)
  • 1 7/8 ounce package chicken gravy mix
Instructions
  1. Spray the crock pot with Pam Cooking Spray. Add the 2 tablespoons of olive oil to crock pot. Put the chicken breast in crock pot. Sprinkle the Italian Dressing mix, onion powder, garlic powder over the chicken breast.
  2. Cook on low for 4 hours.
  3. (At the 4 hour mark, IF NEEDED, you may add a little water to make more gravy in the end, don't add too much water if you do.).
  4. Sprinkle the 1/2 teaspoon bouillon in the liquid in crock pot. Pour the cream of chicken soup over the breast. Turn the crock pot to high and cook 1 more hour.
  5. Remove the chicken, scraping the soup off the breast and back into the crock pot. Add the gravy mix to to 1/4 cup cold water and mix well, add to crock pot and mix well.

World’s Best Shepherd’s Pie

My friends who had this with me declared it the World’s Best Shepherd’s Pie! Two things they said, first, not to lose the recipe and second, did I only make one pie?

World's Best Shepherd's Pie
Ingredients
Filling
  • 1 1/2 cups frozen corn kernels
  • 2 tablespoons butter
  • 1 large onion chopped
  • 1 stalk celery chopped
  • 1 1/4 pounds ground beef
  • 1 garlic clove minced
  • 2 tablespoons flour
  • 1 cup beef broth
  • 1 cup diced canned tomatoes or 1 cup crushed tomatoes in puree
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 1/2 teaspoons Worcestershire sauce
  • salt and pepper
Mashed Potato Topping
  • 6 cups peeled and chopped potatoes
  • 2 teaspoons salt plus salt to taste
  • 4 tablespoons butter
  • 1/2 cup sour cream
  • 1/4-1/2 cup cup milk
  • 1 -1 1/2 cups grated white cheddar cheese
  • paprika
Instructions
  1. Cook the corn according to the package instructions. Drain and set aside.
  2. Start the potatoes for the topping. Put them in a large pot with enough water to cover them by a couple of inches. Add about 2 teaspoons of salt to the water. Bring the potatoes to a boil, uncovered, over high heat. Cook them for 10 to 13 minutes.
  3. Meanwhile, make the meat filling. Melt the butter in a large skillet over medium heat. Sauté the onion and celery in the butter, stirring often, for about 5 to 6 minutes. Add the ground beef to the pan and break it up with a wooden spoon as it browns.
  4. Remove the skillet from the stove and, resting it on a heatproof surface so it won't feel so heavy, tilt the pan so that the excess fat runs to the side. Carefully spoon out the fat and discard it (this will make the dish leaner and healthier, as well as lighter tasting).
  5. Put the skillet back on the burner and set the heat to medium low. Stir the garlic and flour into the beef mixture. Stir in the beef broth, then the canned tomatoes, then the herbs, reserved corn, and Worcestershire sauce.
  6. Gently simmer the mixture for several minutes, partially covered, then add salt (1/4 teaspoon, give or take a little) and pepper to taste. Transfer the mixture to a large buttered casserole. Set the oven to 400°, and while it heats, check to see if your boiling potatoes are done.
  7. To test the potatoes, use a slotted spoon to transfer a cube from the water to a cutting board and allow it to cool for 30 seconds or so. If you can slice through the chunk easily with a butter knife, the potatoes are done.
  8. Set a large colander in the sink and drain the potatoes in it (this job can generate a lot of steam, so it is best done by an adult or under adult supervision).
  9. Transfer the drained potatoes to a large mixing bowl and scatter the butter pieces over them. Spoon the sour cream here and there over the hot potatoes as well. Wait several minutes for the butter to melt and the sour cream to warm so the ingredients will be easier to blend, then partially mash the potatoes with a hand masher.
  10. Switch to an electric mixer set at medium speed and continue to mash, adding enough milk to make medium-soft mashed potatoes. Don't make them too soft, however; you want them to have some body.
  11. Salt the potatoes to taste and spoon them evenly over the filling. Sprinkle the cheese over the top, then sprinkle on some paprika (be sure to wash your hands right afterward so you don't accidentally rub any of the spice in your eyes).
  12. Bake the pie on the center oven rack for about 20 minutes, until the top is golden brown. Cool for several minutes before serving.

  • 1 lb lean kielbasa cut in 2 inch thick slices
  • 2 large red potatoes chopped into 1-inch pieces
  • 1 medium yellow onion roughly chopped
  • 1 tablespoon olive oil

  • 1 tablespoon fresh rosemary roughly chopped
  • 2 sheets heavy-duty aluminum foil 18 x 16 inches
Instructions
  1. Preheat barbecue grill.
  2. Place the kielbasa, potatoes, and onion on a double layer of foil and drizzle with oil. Sprinkle with salt, pepper, and rosemary and toss.
  3. Fold edges of foil together to seal packet.
  4. Cover and grill 30 minutes or until veggies are tender. Alternatively, you can bake in the oven - 375 degrees for 50 min

Easy Crock Pot Ravioli
Ingredients
  • 1 25 ounce bag beef ravioli
  • 1 26 ounce jar pasta sauce
  • 1 8 ounce can tomato sauce
  • 1 cup water
  • 2 -3 teaspoons red peppers
  • Italian spices
  • 1 cup shredded mozzarella cheese
Instructions
  1. Pour about half of the pasta sauce in the bottom of crock pot. Add the frozen ravioli. Pour additional pasta sauce, tomato sauce, water, and red pepper over ravioli (I usually pour the pasta sauce on first and then shake together the tomato sauce, water, and red pepper in the empty pasta sauce jar to mix them).
  2. Sprinkle Italian seasonings over sauces.
  3. Sprinkle cheese on top.
  4. Turn the crock pot on low and cook for 4-5 hours (until ravioli are tender).

1⁄2 lb spaghetti 2 large eggs 1 (15 ounce) container part-skim ricotta cheese 3⁄4 cup fresh parmesan cheese, grated 1⁄2 cup mozzarella cheese, shredded 2 tablespoons fresh romano cheese, grated 3 -4 cups marinara sauce
Ingredients
  • 1/2 pound spaghetti
  • 2 large eggs
  • 1 15 ounce container part-skim ricotta cheese
  • 3/4 cup fresh parmesan cheese grated
  • 1/2 cup mozzarella cheese shredded
  • 2 tablespoons fresh romano cheese grated
  • 3 -4 cups marinara sauce
Instructions
  1. Cook the spaghetti according to package directions; drain.
  2. Meanwhile, preheat oven to 350 degrees F.
  3. Grease a 9-inch glass pie plate.
  4. In large bowl, with fork, beat eggs. Stir the ricotta and Parmesan cheese until blended. Add the spaghetti to the ricotta mixture and stir until well coated.
  5. Transfer the spaghetti mixture to prepared pie plate; top with marinara sauce. Sprinkle with the mozzarella and remaining Romano cheese.
  6. Bake the pie 25 minutes.
  7. Remove from the oven and let stand 10 minutes for easier serving.
  8. Cut into wedges to serve.

Ingredients
  • 1/2 pound extra lean ground beef
  • 1 cup chopped sweet onion
  • 2 garlic cloves finely chopped
  • 1 medium zucchini cut in half lengthwise, sliced 1/4 inch thick
  • 1 15 ounce can tomato sauce
  • 1 14 1/2 ounce can fire roasted diced tomatoes, drained
  • 2 teaspoons chopped fresh oregano leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces ziti pasta cooked and drained
  • 3/4 cup shredded reduced-fat mozzarella cheese
  • cooking spray
Instructions
  1. Heat oven to 375.
  2. Spray a 2 quart rectangular glass baking dish with cooking spray.
  3. In a 10 inch non stick skillet, cook the beef, onion and garlic over medium heat, stirring frequently,until cooked. Add the zucchini, cook 2 minutes.
  4. Stir in the tomato sauce, diced tomatoes, oregano, salt and pepper. Heat to boiling.
  5. Toss the sauce with the pasta. Spread in the baking dish. Cover with foil; bake 20 minutes. Sprinkle with the cheese. Bake uncovered, about 5 minutes more or until the cheese is melted.

Easy Pizza Pasta Casserole
Ingredients
  • 2 lbs ground beef
  • 1 large onion chopped
  • 1 garlic clove minced
  • 1 teaspoon italian seasoning
  • 2 tablespoons olive oil
  • 2 26 ounce jars spaghetti sauce
  • 16 ounces rotini pasta cooked and drained
  • 5 cups shredded mozzarella cheese 20 oz
  • 8 ounces sliced pepperoni
Instructions
  1. Brown the ground beef, onion, garlic and seasoning in oil. Drain.
  2. While the beef is browning, cook the pasta according to the package directions.
  3. Stir in the pasta, spaghetti sauce and 3 cups cheese. Place the mixture in 2 greased 9x13x2 inch baking pans or 4 square pans. Sprinkle with the remaining mozzarella. Top with pepperoni.
  4. Cover and freeze up to 3 months.
  5. To cook now: Bake uncovered at 350 degrees for 25-30 minutes, until heated through.
  6. To bake frozen casserole: Thaw in refrigerator overnight and bake at 350 for 35-40 minutes, till hot.

Ingredients
  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 2 cups shredded cheddar cheese
  • 1 20 ounce can enchilada sauce
  • 8 flour tortillas
Instructions
  1. Brown the meat and onions in large skillet. Add 1 cup enchilada sauce and 1 cup cheese. Mix well.
  2. Put the filling along center of each tortilla. Roll up and place seam side down in a 9x13 pan. Pour the remaining sauce over.
  3. Sprinkle remaining cheese over.
  4. Bake at 350F degrees for about 30 minutes till cheese is bubbly.

  • 1/4 cup flour

  • 3 cups cooked chicken breasts cubed
  • 8 ounces cooked spaghetti
  • 2 teaspoons paprika
  • extra parmesan cheese
  • chopped fresh parsley
Instructions
  1. Melt the butter in a saucepan and add the flour stirring constantly. When the mixture thickens, add the chicken broth, half and half, sour cream, Parmesan cheese, wine, garlic, lemon juice, dry mustard and salt and pepper.
  2. Stir over medium heat until the mixture again starts to thicken. Add the chicken and spaghetti noodles and stir well.
  3. Place in a baking dish and sprinkle with paprika and extra Parmesan cheese. Bake for 30 minutes at 350°.
  4. Sprinkle with parsley and serve.

Cheap and Easy Cabbage Beef Bake
Ingredients
  • 1 small cabbage shredded
  • 1 1/2 pounds lean ground beef can use lean ground turkey
  • 1 large onion chopped
  • 1/2 cup chopped red bell pepper
  • 1 15 ounce can diced tomatoes, undrained
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon sugar
  • 1 teaspoon caraway seed
  • 1 8 ounce can tomato sauce
  • 1 cup reduced-fat sour cream
  • 1 cup shredded swiss cheese can use mozzarella, cheddar, etc
Instructions
  1. Preheat oven to 350. Lightly grease/spray a deep 13 x 9 baking dish.
  2. Place the shredded cabbage in the bottom of the baking dish; set aside.
  3. Brown and crumble the ground beef (or turkey) with the onion and red bell pepper; drain and return to the skillet.
  4. To the drained beef mixture, add the diced tomatoes (undrained), salt, pepper, sugar and caraway seeds. Stir together well and spread this mixture over the cabbage in the baking dish.
  5. In a small bowl, stir together the tomato sauce and sour cream, blending well. Spread this mixture over the beef mixture in the baking dish.
  6. Cover and bake for 1 hour.
  7. Uncover, evenly sprinkle with the 1 cup of shredded Swiss cheese and bake (uncovered) for an additional 15-20 minutes.
