Skillet Baked Ziti – One Pan & Delicious

Only one pan, easy clean-up, and very good flavor. This Skillet Baked Ziti pasta dish is truly one of my favorites and my friends all love it, too!

 

It’s easy to make, yet fancy enough to impress your guests.

One of the easiest, if not the easiest pasta recipes I’ve ever made. I love the simplicity and one-pan factor with this dish.

Ingredients
  • 1 tablespoon olive oil
  • 6 garlic cloves minced
  • 1/4 teaspoon red pepper flakes
  • salt & fresh ground pepper
  • 1 28 ounce can crushed tomatoes
  • 3 cups water
  • 12 ounces ziti pasta 3 3/4 cups
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese grated
  • 1/4 cup fresh basil leaf minced
  • 1 cup mozzarella cheese shredded
Instructions
  1. Adjust oven rack to middle position and preheat oven to 475.
  2. Combine oil, garlic, pepper flakes, and 1/2 teaspoon salt in 12-inch ovensafe nonstick skillet and saute over medium-high heat until fragrant, about 1 minute. (If your skillet is not ovensafe, transfer the pasta mixture into a shallow 2-quart casserole dish before sprinkling with the cheese and baking).

  3. Add crushed tomatoes, water, ziti and 1/2 teaspoon salt.
  4. Cover and cook, stirring often and adjusting heat as needed to maintain vigorous simmer, until ziti is almost tender, 15-18 minutes.
  5. Stir in cream, Parmesan, and basil. Season with salt and pepper to taste.
  6. Sprinkle mozzarella evenly over ziti. Transfer skillet to oven and bake until cheese has melted and browned, about 10 minutes. Serve.

Saucy Seafood Dinner
Ingredients
  • 1 lb scallops I prefer the small ones
  • 1 lb shrimp peeled and deveined
  • 1 1/2 pounds cod or other mild white fish
  • 1 16 ounce jar salsa (mild or hot, your choice)
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 1 lemon
  • 2 tablespoons butter not margarine
  • 1 -2 tablespoon olive oil
  • kosher salt
  • ground black pepper
Instructions
  1. Heat olive oil and butter over medium heat.
  2. Cut fish into large chunks and sprinkle with salt and pepper, to taste and brown lightly in oil and butter (about 1 minute per side). Remove fish from pan and set aside.
  3. Add wine (careful to keep wine from direct heat while pouring into pan) and deglaze pan.
  4. Stir in jar of salsa and chicken broth. Let broth simmer over medium heat until liquid begins to bubble.
  5. Add scallops and shrimp to broth, stir gently, cover, and let simmer for 10 minutes.

Ingredients
  • 1 lb ground beef
  • 1 8 ounce can tomato sauce
  • 1 14 ounce can kidney beans, undrained
  • 1/2 cup water
  • 1 1 1/4 ounce package taco seasoning
  • 1 8 ounce package corn muffin mix
  • 1 cup shredded cheddar cheese
  • 1/4 cup sliced green onion
Instructions
  1. In a large skillet, brown ground beef over medium-high heat; drain.
  2. Stir in tomato sauce, beans, water and taco seasoning mix. Bring to a boil; reduce heat, cover and simmer 5 minutes.
  3. Prepare corn muffin mix according to package directions. Drop small spoonfuls of muffin batter over meat mixture in a skillet.
  4. Cover and cook over medium-low heat 15-17 minutes or until corn bread is done.
  5. Top with cheese and green onion. Cover and cook over low heat until cheese melts.

Great! Very good flavor! Tex/Mex Ground Beef-Rice Skillet is not a fancy dish, but it comes together quickly. A very good base recipe that you can adjust!

Very good as is but it’s also a recipe that you can play around with different ingredients and come out with a fantastic, easy meal.

Everybody agrees that this is definitely a “do again” recipe.

  • 1 lb ground beef
  • 1 small onion chopped
  • 1 -2 tablespoon fresh minced garlic
  • 1 green bell pepper seeded and chopped
  • 1 -2 jalapeno pepper seeded and finely chopped
  • 1 1 1/4 ounce package taco seasoning mix (can use more to taste)
  • 1 1/2 cups chicken broth can use water
  • 1 small zucchini diced (about 4 cups)
  • 1 14 1/2 ounce can stewed tomatoes
  • 1 1/2 cups frozen corn or 1 1⁄2 cups peas
  • 1 1/2 cups instant Minute Rice
  • 1 -2 teaspoon seasoning salt or to taste
  • 1 teaspoon fresh ground black pepper or to taste
  • 2 cups shredded cheddar cheese divided (you may use more cheese)
Instructions
  1. In a medium 4-quart heavy pot over medium heat cook the ground beef or sausage meat with onion, garlic, bell pepper and jalapeno pepper; cook until browned then drain fat.
  2. Add in the taco seasoning mix with a wooden spoon until well combined.
  3. Add in all remaining ingredients except the cheese; stir with a wooden spoon to combine and bring to a simmer over medium heat. Reduce heat to medium-low or low.
  4. Cover and simmer for 25 minutes or until the rice is tender.
  5. Season with seasoned salt and pepper.
  6. Mix in 1 cup shredded cheddar cheese until melted, then sprinkle the top with 1 cup; let stand for 5 minutes until melted.

Pork Cutlet Parmigiana

This Pork Cutlet Parmigiana is an easy comfort-dinner for a busy (or lazy) night. A delicious and much cheaper alternative to Veal Parmesan.

I really love this recipe! Super easy to do it, and the taste is very good.

If there’s any leftover pork it goes great in sandwiches the next day.

Ingredients
  • 2 lbs pork tenderloin sliced into medallions
  • 1 egg
  • 1 cup breadcrumbs
  • 1 tablespoon italian seasoning
  • 4 cups spaghetti sauce
  • 2 cups mozzarella cheese
  • 1/2 cup Parmesan cheese
  • oil to fry
Instructions
  1. With a meat mallet, pound the pork into thin patties.
  2. In a shallow dish beat the egg, in another shallow dish, combine breadcrumbs and seasoning.
  3. Dip each pork medallion into beaten egg and then into bread crumbs.
  4. Fry over med hi heat till browned- it does not need to be fully cooked.
  5. In a 9 X 13 baking dish, put in 1 cup sauce and half the pork, top with half of the cheese. Top with half the remaining sauce. Repeat again for balance of ingredients.
  6. Bake covered at 350 for 1/2 hour, remove top and bake 10 more minutes.
  7. Serve over pasta.

Creamy Spaghetti Pie
Ingredients
  • 8 ounces thin spaghetti broken in half, cooked and drained (about 4 cups)
  • 1/3 cup green onions with top finely chopped
  • 1/4 cup chopped fresh parsley
  • 2 garlic cloves minced
  • 3 ounces fresh Parmesan cheese grated, divided (3/4 cup)
  • 1 15 ounce container part-skim ricotta cheese (or use cottage cheese)
  • 1 egg lightly beaten
  • 3 tablespoons butter optional
  • 3/4 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese divided (4 oz.)
  • 1 26 ounce jar spaghetti sauce
  • 1 14 1/2 ounce can diced tomatoes, drained
  • parsley chopped to garnish
Instructions
  1. Save out 1/4 cup of the Parmesan cheese and 1/4 cup shredded mozzarella cheese. Set aside.
  2. Mix together the green onions, garlic,chopped parsley, 1/2 cup Parmesan cheese, ricotta cheese, egg, butter(if using), salt, Italian seasoning, and 3/4 cup mozzarella cheese.
  3. Mix cheese/egg mixture with cooked spaghetti and place on the bottom of a shallow casserole dish.
  4. In a bowl, mix spaghetti sauce with tomatoes. Pour over spaghetti mixture.
  5. Sprinkle with remaining 1/4 cup Parmesan cheese and 1/4 cup mozzarella cheese that was set aside.
  6. Bake about 30 minutes at 350 degrees. After pulling out of oven pie will feel firm to the touch.
  7. Garnish pie with chopped parsley.

Serve and enjoy!

This Brown Rice Lentil Casserole is a great meal that is in my regular rotation so I eat often. It’s a vegetarian dish and I’m not a vegetarian but I absolutely love this recipe just as it is.

It’s delicious, easy, low-calorie, high-protein….

Another nice thing about the dish is there’s very little prep work. If you can dice an onion you can make this dish!

With some dark bread and maybe a salad this dish makes a really hearty meal.

Brown Rice Lentil Casserole
Ingredients
  • 3 cups chicken broth or 3 cups vegetable broth
  • 3/4 cup lentils
  • 1/2 cup brown rice
  • 3/4 cup chopped onion
  • 1 teaspoon italian seasoning
  • 1/4 teaspoon garlic powder I use more
  • 1 cup grated cheese cheddar or a blend is preferable
Instructions
  1. Preheat the oven to 300 degrees.
  2. Mix all ingredients except the cheese in a baking dish (I use an 11 x 7). Cover with foil and bake for 1 hour 10 minutes.
  3. Then remove the foil, add the cheese, and bake for an additional 20 minutes.

Super Simple Meatball Casserole
Ingredients
  • 12 large frozen meatballs
  • 16 ounces tomato sauce
  • 16 ounces crushed tomatoes or use fresh cut up
  • 1 6 ounce can tomato paste
  • 1 medium chopped onion
  • 1 jalapeno pepper optional
  • 1/4 cup water
  • boiling water
  • 1 tablespoon basil
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1 tablespoon garlic powder
  • 8 ounces shredded mozzarella cheese
  • 4 ounces shredded mozzarella cheese
  • 16 ounces ziti pasta any pasta with a grab- ridges to hold sauce
Instructions
  1. Thaw the meatballs in the microwave to just warmed.
  2. Put the tomato sauce, crushed tomatoes tomato paste, chopped onion, jalapeno pepper, 1/4 cup water, 8 oz of cheese, and seasonings in a 9 x 13 casserole dish and blend together.
  3. In the meantime, boil water and cook the noodles to al dente. Drain the noodles, add to casserole dish and blend in, making sure sauce covers all the noodles.
  4. Add the meatballs and gently blend in cheese. Sprinkle 4 oz of cheese on top, covering casserole dish.
  5. Put in oven at 350°F for 30 minutes. Check for burning of cheese (may cover with aluminum foil gently to prevent some burning or browning of cheese).
  6. Cooking is to warm through and through and to melt cheese. If your oven cooks hot or altitude is high, adjust time in oven.

This easy baked ziti is incredible! A great recipe. It’s cheesy and creamy and easy! I made it for my neighbors and they couldn’t thank me enough.

It also freezes well.

  • 1 lb ziti pasta cooked al dente
  • 1 lb Italian sausage cooked and chopped
  • 1 15 ounce container ricotta cheese
  • 1 egg
  • 2 tablespoons parsley
  • 2 cups mozzarella cheese shredded, divided
  • 1/4 cup parmesan cheese
  • 1 28 ounce jar pasta sauce, divided
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Cook the ziti according to the package directions; drain; set aside.
  3. Mix the ricotta, egg, parsley, 1-1/2 cups of the mozarella cheese, and parmesan cheese in a large bowl.
  4. Mix cooked sausage and pasta in with ricotta mixture. Mix in 3/4 jar of sauce. Transfer the mixture into a 2 quart casserole dish. Top with the rest of the sauce and mozarella cheese.
  5. Bake for 30 to 35 minutes, or until hot and bubbly.

To freeze: Cover the unbaked dish with foil and freeze. When frozen you can pop it out of the container and put in a freezer bag if desired.

To heat from frozen: Thaw. Preheat oven to 350 degrees Fahrenheit. Cover and bake for 20 minutes. Uncover and bake for 10-15 minutes more.
