Bacon Egg Lasagna

Woah – this Bacon Egg Lasagna is amazing! Creamy, cheesy and packed with eggs and bacon – which of course makes everything better!

Bacon Egg Lasagna

I love how easy it is to put together. It’s even better as leftovers the next day.

Everyone I’ve served this to has loved it. It’s also easy to feed to a crowd at holiday time because it can be made ahead.

Bacon Egg Lasagna
Ingredients
  • 1 lb diced bacon
  • 1 large onion chopped
  • 1/3 cup flour
  • 1/2 - 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups milk
  • 12 lasagna noodles cooked and drained
  • 12 hard-boiled eggs sliced
  • 2 8 ounce cups shredded Swiss cheese
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons minced fresh parsley
Instructions
  1. In skillet, cook the bacon until crisp. Remove with a slotted spoon to paper towels.
  2. Drain, reserving 1/3 cup drippings. In the drippings, saute the onion until tender. Stir in the flour, salt and pepper until blended. Gradually stir in the milk. Bring to boil and cook and stir for 2 minutes. Remove from the heat.
  3. Spread 1/2 cup of the sauce in a greased 13x9x2" baking dish. Layer with four noodles, a third of the egg and bacon, cheese and sauce.
  4. Repeat the layers twice. Sprinkle with Parmesan cheese.
  5. Bake uncovered at 350 degrees for 35-40 minutes or until bubbly. Sprinkle with parsley. Let stand 15 minutes before cutting.
Recipe Notes

*Can be made the night before and refrigerated. To serve, remove from the refrigerator 30 minutes before baking. Bake as above.

Redneck Breakfast – Down South Goodness

You might like this Redneck Breakfast even if you’re not a redneck. It’s redneck comfort food. But don’t eat it too often, or you jest might catch yourself talkin’ like Jeff Foxworthy!

 

If you’re really not a spam fan you can substitute breakfast sausage. Sausage gravy is redneck too!

The roasted potatoes are great but the dish is also good over toast or southern biscuits.

Ingredients
Potatoes
  • 2 1/2 cups potatoes peeled and diced into 2 inch chunks
  • 1 1/2 tablespoons vegetable oil
  • 3 tablespoons parmesan cheese the stuff in the green shaker
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt or to taste
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper or to taste
Spam Gravy
  • 6 ounces diced Spam
  • 3 tablespoons margarine
  • 3 tablespoons all-purpose flour
  • 1 cup milk
Instructions
  1. Preheat your oven to 450 degrees.

  2. In a 3 cup bowl with lid, add all the potato ingredients, cover and shake until potatoes are well coated.

  3. Place on a cookie sheet that has been lined with aluminum foil and sprayed with cooking spray, bake for 25 minutes, stirring once or twice during baking.

  4. While potatoes are baking, melt margarine in a medium sized skillet add Spam and lightly brown.

  5. Add flour and cook until " flour taste " is gone about 5 minutes.

  6. Then add a little milk at a time, stirring until desired thickness is reached ( you might need a little bit more milk ) add salt and pepper to taste.

  7. Divide potatoes between two plates, and cover with gravy.

Strawberry Coffee Cake

Delicious! I bake a lot of cakes, and my friends rated this Strawberry Coffee Cake among my best. It’s easy and delicious.

I served it to friends with coffee at a morning get-together and they raved.

Strawberry Coffee Cake
Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg beaten
  • 1/2 cup milk
  • 1 teaspoon vanilla optional
  • 2 tablespoons butter melted
  • 1 1/2-2 cups sliced fresh strawberries
Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup cold butter
  • 1/4 cup chopped pecans
Instructions
  1. In a mixing bowl, add the flour, sugar, baking powder and salt; stir to mix.
  2. In a second bowl, add the egg, milk and butter; stir to mix; add to the dry ingredients and stir just until moistened.
  3. Pour mixture into a greased 8-inch square baking dish. Place the strawberries evenly over the top of the batter.
  4. To make the topping: Combine the flour and sugar in a bowl. With a pastry blender, cut in the butter until consistency of coarse crumbs. Stir in the pecans.
  5. Sprinkle the mixture evenly over the strawberries.
  6. Bake at 375° for 30-35 minutes or until wooden pick comes out clean.

These Orange Cinnamon Biscuits make up in no time and they smell so good while baking. The flavor of the orange and cinnamon are a perfect combination.

 

This is a variation of My New Go-To Cinnamon Biscuits and they are not really like a biscuit at all, but more of an orangy cinnamon roll.

  4. Roll the dough out, on a lightly floured surface, into a 1/4 inch thick rectangle. Brush the top with butter (I prefer to use soft butter and spread it).
  5. Combine 1 teaspoon orange zest and sugar, stir to distribute the zest, mix in the cinnamon; sprinkle evenly over dough.
  6. Roll up, starting on the long side. Cut into 1/2 inch thick rounds.
  7. Place the rounds, with sides just touching, in greased 9" round pan.
  8. Bake at 425°F for 18-20 minutes or until golden brown.
  9. Remove from the oven, cool for about 10 minutes and drizzle with glaze, serve warm.

My New Go-To Cinnamon Biscuits

I’ve now found my new Go-To Cinnamon Biscuits recipe! I made these for breakfast for some friends and then brought the extras to the neighbors. Everyone raved about them.

Cinnamon Biscuits

My neighbor thought it was an “heirloom” recipe!! So easy to make.

This is basically a kicked up biscuit dough. But you would think they are fancy cinnamon rolls from a high class bakery.

A good variation of this recipe is Cinnamon Orange  Biscuits. Delicious!

Definitely a keeper!

Cinnamon Biscuits
Ingredients
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup shortening
  • 3/4 cup milk

  • 1/2-3/4 pound bulk pork sausage
  • 1 medium onion chopped (optional)
  • 1 pinch crushed red pepper flakes or to taste, adjust to suit heat level
  • 1/4 cup all-purpose flour plus

  • 2 cups milk
  • 1 -2 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt or to taste

  • 8 prepared biscuits
Instructions
  1. Cook the sausage meat with onion (if using) in a large skillet over medium heat until sausage meat is no longer pink; drain the fat. Add in the crushed red pepper flakes and cook stirring until the meat is lightly browned (about 12-15 minutes, the meat must be browned).
  2. Stir in 1/4 cup plus 2 teaspoon flour into the skillet and mix until dissolved with the meat (about 2 minutes).
  3. Add in the cream and Worcestershire sauce; cook over medium-low heat until thickened and bubbly (about 5 minutes). Add in salt and ground black pepper.

This Cheesy Egg Potato and Ham Frittata Brunch Casserole is perfect for lazy weekends. I have made it many times in the past and it’s so very easy to make.

Cheesy Egg Potato and Ham Frittata Brunch Casserole

I especially like this recipe because there are a lot of possibilities as far as ingredient substitutions go.

You can make this using cold cooked finely diced potatoes in place of hash browns. I have made it with leftover potatoes with great success!

Feel free to add in green bell pepper, jalapeno peppers, sliced mushrooms, or whatever you wish!

This is so good! Give it a try and expect it to “knock your socks off”.

Cheesy Egg Potato and Ham Frittata Brunch Casserole
Ingredients
  • 3 tablespoons butter
  • 3 tablespoons oil
  • 4 cups frozen hash brown potatoes use the shredded hash browns
  • 1 medium onion finely chopped
  • 4 -5 green onions chopped
  • cayenne pepper optional
  • 2 teaspoons seasoning salt divided (or to taste)
  • black pepper
  • 1 lb cooked ham cubed (can use more or less)
  • 12 large eggs
  • 1/4 cup whipping cream or use full-fat milk or 18% table cream
  • 1 pinch italian seasoning
  • 2 cups grated old cheddar cheese or to taste
Instructions
  1. Set oven to 375 degrees (set oven rack to second-lowest position). Butter a 13 x 9-inch baking dish.
  2. Heat oil and butter in a skillet; add in the frozen shredded potatoes, both onions, cayenne pepper (if using) 1 teaspoon seasoned salt and black pepper to taste; cook for about 8-10 minutes or until just very lightly browned.
  3. Add in the ham and cook for 3 minutes more, mixing occasionally with a wooden spoon or spatula; transfer the mixture to the prepared baking dish.
  4. In a bowl whisk together the eggs with the whipping cream, Italian seasoning and 1 teaspoon seasoned salt and then pour the egg mixture into the baking dish; toss with the potatoes.
  5. Bake for 20-22 minutes.
  6. Remove from the oven and sprinkle with about 2 cups grated cheddar cheese; return to the oven uncovered for another 5-8 minutes until the cheese is melted and eggs are set.
  7. Cool for about 10 minutes before slicing.

This Oven Denver Omelet is quite delicious, and so easy to make (much easier than a regular skillet omelet). The recipe also lends itself well to variations, adding different ingredients to change the flavor according to your mood.
