Ingredients
  • 3 pounds lean ground beef
  • 1 can 15 ounces tomato puree
  • 1 can 10 3/4 ounces condensed cream of mushroom soup
  • 1 can 10 1/2 ounces condensed French onion soup with beef stock
  • 3/4 cup water
  • 1 bag 28 ounces frozen O'Brien potatoes with onions and peppers, thawed
  • 4 medium carrots diced (2 cups)
  • 1 teaspoon salt
Instructions
  1. Cook beef in 12-inch skillet over medium-high heat about 10 minutes, stirring occasionally, until brown; drain.
  2. Mix tomato puree and mushroom soup in medium bowl. Stir in onion soup and water.
  3. Spray 5- to 6-quart slow cooker with cooking spray. Reserve 1 cup of the potatoes. Gently mix beef, remaining potatoes, carrots, salt and soup mixture in cooker. Sprinkle with reserved 1 cup potatoes.
  4. Cover and cook on low heat setting 8 to 9 hours or until vegetables are tender.
  5. Hash will hold on low heat setting up to 2 hours.

Instructions
  1. Cook macaroni according to package directions.
  2. Meanwhile, in a separate large skillet over medium high heat, saute the ground beef and the onion for 5 to 10 minutes, or until meat is browned and crumbly. Drain thoroughly and leave the meat and onion in the skillet. Pour the two cans of tomato soup into the skillet and stir well to combine.
  3. When noodles are done, drain thoroughly and return noodles to the pot. Add the hamburger mixture from the skillet to the pot. Mix well and season with salt and pepper to taste.

  5. Take the remaining half cup of shredded cheese and cover the potatoes
  6. Bake uncover in the preheated oven for 20 minutes

These Hearty Stuffed Shells are very easy to make and they freeze very well. I do a lot of “once a week” cooking. What I mean by that is I cook freezer foods on the weekend and then freeze to have meals during the week.

I was extremely excited to find this great recipe. I love Italian type foods and stuffed shells are one of my favorites. Well any pasta for that matter!

Whenever I need some for a meal I just take a few out the night before and let ’em thaw in the fridge. Come dinner time I just zap ’em in the microwave.

Ingredients
  • 18 jumbo pasta shells
  • 1 lb. ground beef
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 3 oz. fresh baby spinach
  • 24 oz. pasta sauce
  • 1/2 C. whole milk ricotta cheese
  • 1/4 C. small curd cottage cheese
  • 1 large egg beaten
  • 1/4 C. Parmesan cheese
  • 4 oz. shredded mozzarella cheese
Instructions
  1. Bring a pot of water to a boil, add a good pinch of salt and the shells and cook according to pkg. directions. Drain, rinse to cool, and set aside.
  2. Meanwhile, brown the ground beef in a skillet, drain the grease, stir in the onion and cook for 5-6 minutes till tender, stir in the garlic and spinach. Cook until spinach has wilted and add in all but 1 C. of the pasta sauce. Remove from heat.
  3. In a bowl, stir together the ricotta, cottage cheese, egg and Parmesan cheese.
  4. Spread the remaining cup of pasta sauce in the bottom of a casserole dish (I used individual serving size ones since I was freezing mine).
  5. Take each shell and fill with 1 T. of the ricotta mixture, then a good spoonful of the meat mixture, place in the casserole dish, repeat with remaining shells. Top with the mozzarella cheese and bake uncovered at 375 degrees for 25-30 minutes or until the cheese is golden brown and bubbly. 3 stuffed shells per serving.

  2. Spray a non-stick skillet, and brown patties on both sides. Add dry onion soup mix and 1 1/2 cup water. Cover pan tightly and simmer for 20 minutes.
  3. Remove patties to a plate.
  4. In a gravy shaker or jar, combine 1/2 cup water with 2 tbs. flour.
  5. Stir flour and water into onion gravy. Stir constantly with a whisk until it comes to a boil. Boil 1 minute.
  6. Return patties to pan until reheated.

This Cajun Spiced Roast Beef is slow roasted for two hours in the oven and comes out juicy and tender.

 

Roasts such as rump, chuck or brisket are considered to be less tender than tenderloin or sirloin because they are leaner and have less marbling (layers of fat that occur evenly distributed in the meat).

Marbling makes the meat tender, juicy, and flavorful after cooking.

To compensate for marbling, such roasts can be braised (cooked in a small amount of liquid, covered with a lid, for an extended period of time over low heat). The result is moist, tender and delicious.

Ingredients
  • 2 1/2 - 3 lb. beef roast any cut you like
  • Cajun seasoning my recipe is below
  • 1 T. olive oil
  • carrots, celery, onion and potatoes
Instructions
  1. Rub the toast with the olive oil, then rub with a generous helping of the Cajun spice. I probably used a good 3 T. of the mixture.
  2. Place the roast in a Ziploc bag or covered dish and allow to marinate overnight or at least 6 hours in the fridge.
  3. Cut up the veggies and place in the bottom of a dutch oven. Place the roast and any juice on top of the veggies.
  4. Cover and place in a 325 degree oven for 2 hours. Remove and allow the roast to rest for 10 minutes before serving.

Cajun Seasoning

2 tsp.. salt
1 tsp. black pepper
1 T. garlic powder
1 1/2 tsp. onion powder
1 tsp. cayenne pepper
1 1/2 tsp. oregano
1 tsp. thyme

Mix together and store in an airtight container.

Cajun Spiced Roast Beef Tips and Tidbits

I like to use a pot roast for this recipe. Most often a chuck roast. They’re less expensive and when cooked right come out juicy and tender and deliciously flavored.

Because pot roast is a leaner, tougher meat than sirloin, it should be braised at a lower temperature — no more than 300 degrees Fahrenheit — over a long period of time.

A Dutch oven or slow cooker is good options for braising. With both, you can easily add broth, vegetables that go well with beef, such as carrots and potatoes, and whatever seasonings you enjoy.

One hour of low temperature braising per pound of pot roast is a good rule to go by.

  • 2 8 oz. Beef Tenderloin Steaks – about 2 inches thick – at room temperature rinsed and patted dry.
  • Vegetable oil
  • Kosher salt
  • Freshly ground pepper
  • Cast iron skillet or heavy bottom pan – oven safe
  • Instant read thermometer
Instructions
  1. Place oven rack in the center position. Preheat oven to 400 degrees F
  2. Brush meat thoroughly with vegetable oil on all sides
  3. Season top and bottom with a layer of the kosher salt and freshly ground pepper. Be generous. The meat is thick.
  4. Set the meat aside and preheat your pan to medium high heat. It’s ready when a few spats of water dance on the top and quickly dry up. Be sure your oven is preheated before you put the meat into the pan.
  5. Place the meat into the pan. It should sizzle. And it will smoke slightly, so turn on the exhaust fan. Cook the meat for 2-3 minutes or until it becomes brown and has somewhat of a crust.
  6. This side will be your presentation side: the side the faces up on the plate. If it’s browning too quickly or burning, turn the heat down a bit. Turn the meat over and cook for 2-3 minutes until it get brown.
  7. Now brown the sides of the meat, but for only about a minute each. It’s ok if there’s a little bit that you missed.
  8. Once browned, place the pan into the oven and cook for about 5-7 minutes for medium rare. You should check it after 5 minutes, as oven temperature may vary. Use the finger test to check the doneness.
