Simple, Quick and Easy Cincinnati Chili

Cincinnati Chili is not the chili you’d get in Texas, but I’m really glad I gave it a try! This recipe is super simple to make, and everyone really enjoyed it.

It’s a simple recipe without a long list of ingredients, but it produces a rich, satisfying chili. Kiddies love this chili better than regular chili!!!

Simple, Quick and Easy Cincinnati Chili
Ingredients
  • 1 lb ground beef
  • 1 1 1/4 ounce package mild chili seasoning mix
  • 1 teaspoon ground cinnamon
  • 1 15 ounce can tomato sauce
  • 1 15 ounce can kidney beans, drained and rinsed
  • 8 ounces about 4 cups cooked spaghetti cooked
Garnish
  • shredded cheddar cheese
  • chopped onion
Instructions
  1. Cook ground beef in large saucepan until no longer pink; drain. Add the chili seasoning, cinnamon, beans and tomato sauce.
  2. Add the water to bring to correct consistency. Bring to a boil. Reduce the heat and simmer 10 minutes.
  3. Serve over spaghetti, topped with cheddar and onions.

Spicy Meatloaf – A Different Twist

This Spicy Meatloaf recipe has a different twist on a favorite comfort food. Spicy salsa gives this loaf a blast of mouth-tingling Mexican flavors.

 

Heat-enthusiasts rejoice!

You can use spicier sauce if you like an even bigger kick. The recipe calls for carrots, so if you want your kids to eat more veggies this is a good way to sneak them in!

When I make it, I sometimes add salsa that contains black beans and corn to the loaf ingredients.

Picante sauce adds a little heat and a Mexican twist to this Spicy Meatloaf

Ingredients
  • 1 lb ground chuck
  • 2/3 cup breadcrumbs
  • 1/3 cup chopped onion
  • 1/4 cup coarsely chopped carrot
  • 2 egg whites
  • 1/4 teaspoon salt
  • 1/4 teaspoon rubbed sage
  • 1/4 teaspoon pepper
  • 1/2 cup Picante sauce
Instructions
  1. Combine the first 8 ingredients. Shape into a loaf and place on a rack coated with cooking spray. Place rack in a shallow roasting pan.
  2. Bake at 400°F for 35 minutes. Brush Picante sauce over loaf. Bake an additional 5 minutes.
  3. Let stand 5 minutes before slicing.

Boston Market Meatloaf

I’m a big Boston Market Meatloaf fan and with this recipe I can now make it at home. Love it! This recipe just couldn’t be easier to make.

Boston Market Meatloaf

I’ll be making this recipe a lot and it will replace my old recipe for meatloaf.

The secrets to this meatloaf is the combo of tomato and barbecue sauces and the ground sirloin or round versus ground chuck.

Holds together very well. Nothing like a meatloaf sandwich with this with sharp cheddar cheese on a Kaiser roll.

Boston Market Meatloaf
Ingredients
  • 1 cup tomato sauce
  • 1 1/2 tablespoons kraft barbecue sauce
  • 1 tablespoon sugar
  • 1 1/2 pounds lean ground sirloin
  • 6 tablespoons all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1 dash garlic powder
Instructions
  1. Preheat oven to 400°F.
  2. Combine the tomato sauce, barbecue sauce and sugar in a small saucepan over medium heat. Heat the mixture until it begins to bubble, stirring often, and then remove it from the heat.
  3. In a large bowl, add all but 2 tablespoons of the tomato sauce to the meat. Use a large wooden spoon or your hands to work the sauce into the meat until it is very well combined.
  4. Combine the remaining ingredients with the ground sirloin-- flour, salt, onion powder and ground pepper. Use the wooden spoon or your hands to work the spices and flour into the meat.
  5. Load the meat into a loaf pan (preferably a meatloaf pan with two sections which allows the fat to drain, but if you don't have one of those a regular loaf pan will work). Wrap foil over the pan and place it into the oven for 30 minutes.
  6. After 30 minutes, take the meatloaf from the oven, remove the foil and, if you aren't using a meatloaf pan, drain the fat.
  7. Pour the remaining 2 tablespoons of sauce over the top of the meatloaf, in a stream down the center.
  8. Don't spread the sauce.
  9. Place the meatloaf back into the oven, uncovered, for 25-30 minutes or until it is done. Remove and allow it to cool for a few minutes before serving.

This Slow-Cooker Meatloaf is a breeze to make, holds together and slices nicely plus it’s delicious!

Five pantry-friendly ingredients and a slow-cooker are all you need to complete this hands-free meatloaf.

This is a sure winner from my mother-in-law, who is a fabulous cook. Feel free to experiment with Ro-Tel tomatoes or other ingredients.

Slow-Cooker Meatloaf
Ingredients
  • 2 eggs beaten
  • 3/4 cup milk
  • 3/4 cup dry breadcrumbs
  • 1 1 ounce envelope dry onion soup mix
  • 2 lbs lean ground beef
Instructions
  1. To remove the loaf when it's done, line your crock with a wide strip of aluminum foil, coming up the sides of the crock.
  2. In a large bowl combine the eggs, milk, bread crumbs, and soup mix. Mix well, then add the meat. Mix thoroughly and then shape into a rectangle or oval that won't touch the sides of the crock. Place in crock. Cover and cook on low for 6 hours or high for 3 hours.

Crock Pot Roast With Horseradish Sauce
Ingredients
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 lbs beef eye round
Horseradish Sauce
  • 1 8 ounce carton sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon prepared horseradish or fresh would be even better
  • 1 clove of crushed garlic
  • 1 teaspoon beef bouillon granules I didn't use. (optional)
Instructions
  1. For the roast: Combine the seasonings and rub the mixture over the roast. Place in the slow cooker, cover and cook on low for 8-10 hours.
  2. Remove the meat and let it rest for 15 minutes.
  3. Cut diagonally across the grain into thin slices.
  4. Serve with horseradish sauce.
  5. While the roast is cooking, prepare the horseradish sauce by combining all ingredients. Cover and chill.

Savory Braised Short Ribs
Ingredients
  • 4 lbs beef short ribs with bones and cut into serving-size pieces
  • 1 10 1/2 ounce can condensed beef broth
  • 1 cup onion Coarsely Chopped
  • 1 cup water
  • 4 peppercorns
  • 2 teaspoons Worcestershire sauce
  • 1 garlic clove Crushed
  • 1/2 teaspoon dried marjoram
  • 3 tablespoons unbleached flour
  • 1/2 cup water
Horseradish Sauce
  • 1/4 cup sour cream
  • 1 tablespoon prepared mustard
  • 2 1/2 tablespoons prepared horseradish
  • 1/8 teaspoon salt
Garnishes
  • tomatoes cut into wedges
  • 1 sprig parsley
Instructions
  1. Brown short ribs well on all sides (about 30 minutes) in Dutch oven over medium heat.
  2. Add the broth, onion, 1 cup of water, peppercorns, Worcestershire sauce, garlic, bay leaf and marjoram.
  3. Bring to a boil; reduce heat, cover and cook slowly 2 to 2 1/2 hours or until tender, turning once.
  4. Meanwhile, prepare the Horseradish Sauce.
  5. Place short ribs on serving platter and keep warm.
  6. Skim the fat from the cooking liquid. Combine the flour with 1 /2 cup water, mixing until smooth; combine with the cooking liquid, bring to a boil, stirring constantly, reduce heat and cook slowly 3 minutes.
  7. Strain, if necessary, and serve with short ribs.
Recipe Notes

Garnish the platter with tomato wedges and parsley.

Serve Horseradish sauce with short ribs.

  4. Bake at 350° for 20 minutes.

Buffalo sauce is a mixture of melted butter and hot sauce. It’s a big claim to food fame for Buffalo, New York.

It’s normally served on fried chicken wings (Buffalo wings), but this burger is a great variation of the theme.

  • 4 tablespoons butter cut in small pieces
  • 1/3 cup hot sauce
  • 1/2 cup finely crumbled blue cheese
  • 1 tablespoon minced garlic
  • 2 lbs 85% lean ground beef or 2 lbs ground buffalo meat
  • 1/2 teaspoon celery seed
  • 1/3 cup finely chopped onion
  • 6 hamburger buns split
Instructions
  1. Melt the butter and whisk in the hot sauce.
  2. Mix the blue cheese and garlic in a small bowl.
  3. Using your hands, gently mix the ground beef, celery seed, onion and 1/4 cup hot sauce mixture in a medium bowl until blended. Form into 12 patties, using a light touch; the patties should be about 4 1/2 inches in diameter and no more than 1/2 inch thick.
  4. Spoon about 2 teaspoons of the cheese-garlic mixture in the center of 6 patties, then top with remaining patties and press together, sealing edges.
  5. Cover and refrigerate until ready to grill. (Even if you aren't making these ahead of time, I think they hold together better after a little chill time).
  6. Heat grill to medium and oil grate.
  7. Grill burgers about 4-5 minutes on each side, or until cooked to taste. Brush with the remaining hot sauce mixture during last 2 minutes of cooking. Toast buns if you like.

Deliciously Crispy Beef Tostadas

These Crispy Beef Tostadas are delicious and so easy to make! They remind me of Navajo Tacos that I had when I was growing up in Texas.

 

The texture of the tostada is so thick and delicious – very filling. I’ve also listed all the toppings that I like.

I’ve also substituted leftover shredded beef for the ground beef and they are delicious too!

These are in my regular rotation and I make them at least once a month.

Crispy Beef Tostadas
Ingredients
Tostadsos
  • 3 cups flour
  • 5 teaspoons baking powder
  • 1 1/4 cups milk
Beef Mixture
  • 1 lb ground beef
  • 2 garlic cloves minced
  • 1 4 ounce can diced green chilies
  • 2 tablespoons taco seasoning
  • salt and pepper
  • 1/2-3/4 cups water
  • 1 16 ounce can refried beans
Optional Toppings
  • chopped tomato
  • shredded lettuce
  • sliced olive
  • shredded cheddar cheese
  • sliced green onion
  • salsa
  • sour cream
  • guacamole
  • vegetable oil for frying
Instructions
  1. In a large bowl, combine the flour and baking powder; add the milk and form a soft dough. Knead until mixed thoroughly. Cover and let rest 30 minutes.
  2. Meanwhile, brown the beef and garlic in large skillet until meat is no longer pink; drain well. Add the chilies, taco seasoning, salt and pepper if desired, and water. Simmer uncovered for 10 minutes.
  3. Stir in the beans and heat through; keep warm.
  4. In a deep fat fryer or skillet, preheat oil to 375.
  5. Separate the dough into 6 equal portions. Roll over lightly floured surface into a 7 inch circle.
  6. Fry the tostadas in hot oil until golden, turning once; drain on paper towels.
  7. Immediately top each tostada with meat mixture and desired toppings.
