Ingredients
  • 6 boneless skinless chicken breasts
  • 1 10 3/4 ounce can condensed cream of chicken soup, undiluted
  • 1 large egg
  • 1/2 teaspoon seasoning salt
  • 10 tablespoons all-purpose flour 1/2 cup plus 2 tablespoons
  • 10 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon seasoning salt
  • 1 teaspoon ground black pepper
  • 1 pinch cayenne pepper optional
Instructions
  1. In a shallow dish or bowl combine the egg with the soup and 1/2 teaspoon seasoned salt; mix until thoroughly combined.
  2. Add the chicken pieces and using your clean hands toss to coat completely; set aside or you may refrigerate until ready to finish making the recipe.
  3. In a medium bowl mix together the flour with the cornstarch, 1 teaspoon garlic powder, paprika, 1 teaspoon seasoned salt and black pepper.
  4. Working with one piece of chicken at a time, place the soup-coated chicken into the flour mixture and toss to coat completely.
  5. Add more flour and/or cornstarch if necessary adding them in equal parts (there should be an equal amount of each in the mixture, if you add in 2 tablespoons flour you must add in 2 tablespoons cornstarch with the flour).
  6. Place the coated chicken on a rack and allow to sit until it becomes doughy (THIS IS A CRUCIAL STEP to ensure crispiness when fried).
  7. Heat oil in a deep skillet over medium heat (be certain to use enough oil to cover the chicken pieces).
  8. Once the chicken is doughy test oil by dropping in a piece of the "dough" into it. The oil is ready when it starts to fry immediately.
  9. Fry the chicken pieces in oil for about 10 minutes or until cooked through and juices run clear.
  10. Drain on a rack.

Mom’s Special Chocolate Cake with With a Surprise Ingredient

Ingredients

2⁄3 cup margarine
1 1⁄2 cups sugar
3 eggs
2 1⁄4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1⁄2 cup cocoa
1⁄2 teaspoon salt
1 cup water
1 tablespoon vanilla
2⁄3 cup sauerkraut, well drained and finely chopped

Frosting

1⁄2 cup margarine
6 ounces Philadelphia Cream Cheese
2 1⁄2 cups powdered sugar
1⁄4 cup cocoa
1 teaspoon vanilla

Directions

Cake:

Cream the margarine and sugar well. Add the eggs, one at a time, beating well.

Sift the dry ingredients. Add to the first mixture alternating with the cup of water. Add vanilla. When well mixed, add sauerkraut.

Bake at 350 degrees in desired pan.

Frosting:

Mix ingredients well. Spread over cooled cake.

  2. For the frosting, melt the butter in a saucepan on medium heat. Stir in the sugar and milk and bring to a boil, stirring frequently. Boil and stir 1 minute, then remove from heat.
  3. Stir in the chocolate chips and marshmallows until melted. Add the vanilla and quickly spread over brownies.
  4. Sprinkle with walnuts if desired.

  • 1/2 cup almond butter
  • 1/2 cup unrefined coconut oil
  • 3 tablespoons cocoa powder

Instructions

  5. Place into the freezer for about 15 minutes to harden.
  6. Store in fridge or freezer in a tightly sealed container.

Hobo Adobo Foil Dinner

This hobo adobo foil dinner takes the typical hobo dinner and dials up the flavor. Busy moms can make these foil dinners one night, and serve them the next.

 

The traditional adobo marinade with ground beef gives it a smoky, southwest taste.

Red peppers and green onions add a little kick to the potatoes. Monterrey Jack cheese is the fun surprise in the middle!

The neat little foil packets will keep for a few days in your refrigerator until it’s time to bake them.

Ground Beef in Adobo Sauce
  • 1 cup chicken stock
  • 1/2 teaspoon paprika
  • 1 teaspoon oregano

  • 1/2 red bell pepper minced

  • 1/4 cup apple cider vinegar
  • 1 1/2 pounds lean ground beef thawed
Hobo Dinner Potatoes
  • 4 medium potatoes peeled and diced

  • 2 green onions sliced

  • 1/4 cup olive oil
Additional Ingredients
  • Reynolds Wrap Foil
  • 4 ounces monterey jack cheese

Instructions
For the Ground Beef in Adobo Sauce:
  1. Mix the first seven ingredients well in a medium-sized bowl. Soak the ground beef in the adobo sauce for 1-2 hours. After soaking, strain excess moisture off using a colander (it's fine to have a little excess moisture, as it will steam your potatoes. Too much, and your meat patties will fall apart).
For the Hobo Dinner Potatoes:
  1. In a small bowl, whisk together the lemon juice and olive oil. Toss with potatoes, red peppers and onions.
To Assemble:
  1. Preheat oven to 375 degrees.
  2. To assemble the meat patties, divide the ground beef in adobo sauce into 8 balls. Press into patties. Place 1 oz. Monterrey Jack cheese (cut in squares) on each patty. Place another patty on top, and press together to seal.
  3. To assemble your hobo dinners, tear off a large piece of aluminum foil. Place one adobo patty on the bottom, and spoon potato mixture on top. Sprinkle with salt and pepper. Seal well.
  4. Bake for 1 - 1 1/4 hours or until potatoes are tender.

This Impossible Coconut Pie is well named. The first time I saw this I thought, how can this turn out as it claims, but it does!!

The flour will settle to the bottom to form a crust, the coconut rises to the top and forms the topping, the center is an egg custard filling.

Impossible! Nope. Works every time plus it’s delicious.

I wanted a basic way to cook drumsticks since they are cheaper than the breasts. This Simple Baked Chicken Drumsticks recipe filled the bill!

There’s not a lot of spice or sauce on it so if you are looking that, this is not the recipe for you.

We found it just right for us, the flavor of the chicken really comes through.

I served with corn and twice baked potato casserole.

Simple Baked Chicken Drumsticks
Ingredients
  • 5 -6 chicken drumsticks
  • garlic powder
  • pepper
  • salt
  • olive oil
Instructions
  1. Put some olive oil in the bottom of a 9X13 pan (just enough to put the drumsticks on ). Add the drumsticks (space enough apart so they aren't touching each other). Sprinkle generously with pepper and garlic powder. Sprinkle lightly with salt.
  2. Bake at 375 for half an hour. Turn drumsticks over and add more garlic powder, pepper and salt (same as before).
  3. Bake another half an hour (or until cooked til 160 degrees)).

The name of this recipe says it all as this is The Ultimate Greek Salad! This makes a nice large family salad that is enjoyed by all.

But even though this salad is Ultimate it’s not a true Greek salad. You never get lettuce of any kind in a salad in Greece!

We like lettuce in my family so I add it and I could literally drink this salad dressing.

The Ultimate Greek Salad
Ingredients
Dressing
  • 6 tablespoons olive oil
  • 1 1/2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 2 garlic cloves minced
  • 1 teaspoon dried oregano Mediterranean is best
Salad
  • 1 head lettuce torn into bite-size pieces ((I use Romaine)
  • 3 large plum tomatoes seeded and coarsely chopped
  • 1 English cucumber peeled and coarsely chopped (the long, thin, almost seedless ones)
  • 1 medium red onion cut into thin rings and soaked for 10 minutes in a small bowl of ice water to make it less sharp
  • 1 small green pepper cut into thin rings
  • 3/4 cup kalamata olive
  • 3/4 cup crumbled feta cheese
Instructions
  1. Whisk dressing ingredients together until blended. Season to taste.
  2. Drain the onion from the ice water and pat dry with paper towels.
  3. Combine all the salad ingredients, except cheese, in large bowl. Toss with the dressing.
  4. Sprinkle with cheese and serve.

OMG! This Bourbon Chicken is so tender, juicy and delicious. When my friends ate this all I heard was, oh, my god how delicious and tons of moans, not to mention plenty of finger licking.

It’s named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.

Bourbon Chicken
Ingredients
  • 2 lbs boneless chicken breasts cut into bite-size pieces
  • 1 -2 tablespoon olive oil
  • 1 garlic clove crushed
  • 1/4 teaspoon ginger
  • 3/4 teaspoon crushed red pepper flakes
  • 1/4 cup apple juice
  • 1/3 cup light brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon cider vinegar
  • 1/2 cup water
  • 1/3 cup soy sauce
Instructions
  1. Heat oil in a large cast iron skillet. Add the chicken pieces and cook until lightly browned. Remove the chicken.

  2. Add the remaining ingredients, heating over medium heat until well mixed and dissolved. Add the chicken back in and bring to a hard boil. Reduce the heat and simmer for 20 minutes.

No-Bake Chocolate Peanut Butter Cornflakes Bar

For some reason, guys always seem to go gah-gah over these No-Bake Chocolate Peanut Butter Cornflakes Bar. They are very easy to make, and it’s a great way to use up the end of the corn flakes.

I also like this recipe because it uses fewer ingredients than all the other ones I have seen.

They are very tasty, very easy, and very cost efficient. Tastes just like a Crispy Crunch bar!!!

No-Bake Chocolate Peanut Butter Cornflakes Bars
Ingredients
  • 3 cups corn flakes crushed
  • 1 cup crunchy peanut butter
  • 1/2 cup sugar
  • 1/2 cup white corn syrup
  • 6 ounces chocolate chips
Instructions
  1. Heat the peanut butter, sugar and corn syrup over low heat to melt. Stir in the cereal.
  2. Pat into a 8x8 lightly greased pan. (I line my pan with foil and then lightly spray it. When it is time to cut them, the foil lifts right out.).
  3. Melt the chocolate chips over low heat or in the microwave and spread over the top. Cool until firm.
