  • 1 roll crescent rolls
  • 1 pkg. white country gravy mix (1 Cup)
  • 4 eggs scrambled...
  • 5 slices cooked bacon crumbled
  • 5 slices canadian bacon diced
  • 1 C. mozzarella cheese
Instructions
  1. Roll out crescent roll dough onto a greased cookie sheet and flatten out. Place in a preheated 350 degree oven for 7 minutes. Remove from oven and set aside.
  2. Prepare packaged gravy mix according to directions. Spoon gravy over dough and spread around to cover completely. Top with eggs, both bacons, and cheese.
  3. Return to oven for 10 minutes.

 

Serve breakfast pizza up to some smiling little faces around your breakfast table.

Pork Chops Casserole – No Hassle Dinner

This is a really good pork chops casserole. Even with lean pork chops. The potato and soup add some texture and a little fat to the dish.

 

Pork chops were a special treat in my family when I was growing up. Mostly we had chicken on Sundays and during the week it was pinto beans, potatoes, and cornbread.

Well, I can afford pork chops now and they’ve bred all the fat out of today’s hogs! Darn. I can’t win for losing.

However, this casserole is really good and not hard at all. In fact, it’s fall down easy!

Angel Biscuits – My Favorite Biscuit Recipe

Angel Biscuits are one of my favorite biscuits, among many. My cousin first served these to me. Thanks, Cuz for these delicious biscuits!

 

I admit it. I love biscuits. I was raised on Southern buttermilk biscuits. Since that time I’ve had all kinds of biscuits.

There’s just a couple of ingredients that changes a plain old biscuit into an angel biscuit with its light fluffy texture and sweetness.

Cuz says she learned the recipe from our grandmother. But I swear I don’t ever remember having them at her house.

Nevertheless, I’ve got the recipe now and I make them all the time. Delish.

Give them a try yourself and I think you’ll agree that they are properly named. Angel Biscuits!!!

Those two ingredients that change these biscuits, by the way, are sugar and yeast.

  • 4 cups self-rising flour
  • 3 tablespoons granulated sugar
  • ½ teaspoon salt
  • ½ cup vegetable shortening
  • 1 1/4-ounce packet yeast
  • 3 tablespoons warm water
  • 2 cups buttermilk
  • 2 tablespoons butter melted
Instructions
  1. Preheat oven to 475º F. Lightly grease rimmed baking sheet pan with about a tablespoon of shortening.
  2. Whisk together flour, sugar, and salt in a large bowl. Cut in shortening with a pastry blender or two forks. Add the packet of yeast to a small glass bowl.
  3. Add warm water and allow the yeast to sit for a few minutes.
  4. Pour buttermilk and yeast mixture into the dry ingredients. Stir until well combined, but do not over mix.
  5. Dust countertop lightly with flour and turn biscuit dough out. Lightly flour the top of the biscuit dough and pat into a ½-inch thick circle. Cut dough into biscuits and place onto prepared baking sheet pan and place into the oven.
  6. Bake 10 - 12 minutes or until the biscuits turn a light golden brown. Remove from oven and brush the tops lightly with melted butter. Serve warm.

  3. Drain strawberries and blot dry. Carefully just fold in strawberries and nuts. The dough mixture will be thick.
  4. Grease and flour a 9x5 inch loaf pan. Bake in a 350-degree oven for 50 to 60 minutes. Let bread mellow for one day and then serve.

  • 3/4 lb Boneless Skinless Chicken Thighs cut into bite-size pieces
  • 12 oz Linguine or Pasta of your Choice

  • 8 oz Cremini Mushrooms sliced

  • 4 Tbsp Unsalted Butter

Instructions
  1. Fill a large pot with water, add a generous sprinkle of salt and bring to a boil.

  2. Season the chicken thighs with the Cajun seasoning and set aside. In a large skillet with high sides, add 2 Tbsp of butter and allow it to melt over medium heat.

  3. Add the chicken thighs and cook them for about 4 to 5 minutes or until they develop some color on all sides, remove from the pan to a plate.

  4. Add remaining butter to the skillet and add the peppers, onions, garlic, and mushrooms. Cook the veggies for about 5 to 6 minutes or until they begin to cook down and develop some color.

  5. Add the chicken stock, turn the heat down to medium-low and cook for about 10 minutes or until the sauce has reduced by half. At this point, add the pasta to the boiling water and cook according to the package instructions.

  6. Add the half and half and season lightly with salt and pepper, toss in the cooked pasta and cook everything together for about a minute or until the sauce thickens.

  7. Add the parsley and serve!

Wendy’s Copycat Chili Recipe

It’s chili time anytime. I pulled out my Wendy’s Copycat Chili recipe to make a big batch. Most will go in the freezer but I’ll eat a big bowl too. I’m just chili hungry!

 

A friend that used to work for Wendy’s gave me this recipe years ago when she found out how much I liked it. I was surprised to see how simple it was! Yummy to my Tummy!

How To Make This Wendy’s Copycat Chili Recipe

Making chili of any kind is not very difficult and this Wendy’s Copycat chili is no different. Very easy!

The ground beef can make a difference. I prefer 80/20 ground chuck.

The 80/20 means that it’s 80% lean and 20% fat. I feel like that’s the perfect proportion of lean to fat.

Ground chuck is from the front shoulder section of the animal. Now it’s probably just bits and pieces of the shoulder but at least you know where it comes from and that its quality should be very good.

Don’t buy what’s labeled as ground beef! The only thing about ground beef that you know for sure is that’s it’s beef. It can be from anywhere on the animal and when you’re talking about bits and pieces you don’t really know what you’re getting!

As far as making chili it couldn’t be easier. Just brown the beef, add it to a stockpot with the other ingredients, and simmer for an hour or so.

  • 1/2 cup diced celery
  • 1/4 cup diced green bell pepper
  • 1/4 cup chili powder use less for milder chili
  • 1 teaspoon ground cumin use more for real flavor
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sugar
  • 1/8 teaspoon cayenne pepper
Instructions
  1. In a large skillet, brown the ground beef. Drain off the fat. Put the beef and the remaining ingredients in a 6-quart pot. Cover the pot and let the chili simmer for 1 to 1 1/2 hours, stirring every 15 minutes.

 

Tips And Tidbits About Wendy’s Copycat Chili

If you’ve got the time cooking beans from scratch is better for chili than canned beans.

Canned beans have a high sodium content. So if you do decide to use them rinse them first. You might also wait until close to the end of cooking time to keep them from turning to mush.

I do use canned beans and I prefer using the ones labeled “chili beans”. They have flavoring cooked in so when I use them I don’t rinse for that reason!

Lemon Lush

Ingredients

1 cup flour
1/2 cup butter
1/2 cup chopped pecans
8 ounces cream cheese
1 cup powdered sugar
1 (8 ounce) container whipped topping, divided
1 (3 ounce) box lemon pudding mix
1/2 cup sugar
2 1/4 cupswater, divided
2 egg yolks

Directions

Mix flour, butter & chopped pecans together like biscuit dough and press into 8 x 8 inch baking pan. Bake at 400° for 20 minutes or until brown.

Mix together cream cheese, powdered sugar and 1 cup whipped topping and spread over first layer while still warm. Stir lemon pudding mix, sugar, 1/4 cup water and egg yolks together in a medium saucepan. Stir in 2 cups water. Stirring constantly, with wire whisk, cook on medium heat until mixture comes to a full boil.

(NOTE: if you are using instant pudding or a different flavor, use the ingredients & directions for preparation on the package!).

Cool 5 minutes, stirring twice. Cool about 30 minutes more and spread over two previous layers. Cool completely and top with remaining whipped topping. Chill.
