One Pot Homemade Creamy Mac and Cheese
Ingredients
  • 4 tbsp unsalted butter
  • 6 tbsp flour
  • 3 cups of milk
  • 2 cups of water
  • 1 tsp salt
  • Black pepper
  • 1/2 lb of dried macaroni elbow pasta
  • 2 cups grated tasty or cheddar cheese
  • 1 cup grated provolone cheese
Topping
  • 1/4 cup panko breadcrumbs or ordinary breadcrumbs
  • 1/4 cup parmesan cheese grated
  • 1/2 tbsp fresh parsley finely chopped (optional)
Instructions
Preheat your oven to 350 degrees F.
  1. Melt the butter in a deep fry pan or skillet over medium heat. Add the flour and stir until combined so a thick paste forms (“roux”). Cook, stirring constantly, for 1 minute.
  2. Add half the milk and use a whisk to dissolve the roux into the milk. It will thicken quickly, then add the remaining milk. Whisk in small circles, rotating around the pan, to dissolve all the roux into the milk.
  3. Add the water, salt and 5 grinds of pepper, then turn the heat up to medium high. Whisk leisurely so the bottom doesn’t stick to the pan. When the white sauce starts to steam and thickens such that you can see it coating the edges of the pan (around 2 to 3 minutes), add the macaroni.
  4. Turn the heat down to medium and stir gently with a wooden spoon to mix the macaroni through and ensure the bottom doesn’t stick. Cook it for 1 minute. Be sure not to cook it for longer than this after adding the macaroni – this really impacts the “sauciness” of the dish and ensuring the macaroni isn’t overcooked.
  5. Cover the fry pan, then transfer it immediately to the oven on the middle shelf.
  6. Bake for 12 minutes, then remove from the oven. It will seem like there is too much sauce but it reduces and thickens in the next steps. The pasta should be just cooked (al dente). It will continue cooking from the residual heat.
  7. Turn the oven off and turn the broiler on high.
  8. Stir through the cheese, just enough to disperse it through the macaroni. As you stir, this will melt the cheese and thicken the sauce. Don’t stir too much because otherwise the sauce will thicken too much due to the evaporation.
  9. Sprinkle over the panko and parmesan cheese, then place under the grill/broiler for a few minutes to brown.
  10. Remove from the broiler and let it rest for 5 minutes before serving.

Low Calorie Low Fat Broccoli Salad
Ingredients
  • 4 cups broccoli florets or 4 cups Broccolini
  • 1/4 cup red onion minced
  • 2 tablespoons splenda artificial sweetener Granulated
  • 2 tablespoons cider vinegar
  • 2 tablespoons light mayonnaise
  • 2 tablespoons sunflower seeds roasted and salted
  • 3 tablespoons seedless raisins
Instructions
  1. Discard the broccoli stems and finely chop the florets or broccolini. Set aside.
  2. In a medium mixing bowl, whisk the Splenda, vinegar and mayonnaise toghether until it is an even, smooth consistency.
  3. Stir in the broccoli and the remaining ingredients. Toss until well coated.
  4. Chill until ready to serve.

  • 2 1/2 tablespoons olive oil
  • 2 1/2 teaspoons garlic powder
  • 2 tablespoons balsamic vinegar
  • pepper to season
Instructions
  1. Drain the cooked green beans and cool to room temperature.
  2. Add all the other ingredients together and mix with the green beans thoroughly. Put in the refrigerator to chill for at least 2 hours.
  3. Don't saturate the green beans in the liquid, add just enough to moisten and for flavor.

Everyone knows you are supposed to eat black-eyed peas for luck on New Years Day. This is a great recipe to use your crock pot. You can use the stove to cook your collards (for money).

I’m from the south and I’ve eaten black-eyed peas all my life. I serve black-eyed peas and champagne every New Year’s Eve for good luck, and then have them again as part of the New Year’s Day dinner.

Being able to just throw this together into a crock pot and not have to worry about it is great.

Crock Pot Black Eyed Peas

Ingredients

1 (16 ounce) bag dried black-eyed peas
1 small ham hock
1 (14 1/2 ounce) can Del Monte zesty jalapeno pepper diced tomato
1 (14 1/2 ounce) can diced tomatoes with green chilies
2 (10 1/2 ounce) cans chicken broth
1 stalk celery, chopped

Directions

Pre-soak black-eyed peas according to the instructions on the bag. Combine all the ingredients and cook on low for 9-10 hours.

Southern Sweet Potato Casserole

In the past, I’ve always had baked sweet potatoes with holiday dinners. This year I’m switching up with this Southern Sweet Potato Casserole.

  4. Bake 25 minutes at 350 degrees.

Such a tasty way to start the new year! I like to serve black-eyed peas over plain cooked rice but you can serve as a side dish if you like. The dish is a little bit spicy as is, but even so I like to add some Tabasco or hot green pepper sauce to give it a little more punch.

I’ve been cooking and eating black-eyed peas on New Year’s Day for years and I think this is one of the best recipes I’ve run across.

Leftovers are even better!

Spicy Ham Hocks and Black-Eyed Peas

Ingredients

1 (16 ounce) package dried black-eyed peas
3 cups low sodium chicken broth
2 cups water
1 lb smoked ham hock
1 large onion, chopped
2 celery ribs, chopped
2 carrots, diced
1 -3 jalapeno pepper, seeded and minced
1 teaspoon salt
1 teaspoon black pepper

Directions

Place the black-eyed peas in a large deep pan. Cover with enough water to be about 2-inches deep over the peas. Bring to a boil and boil about 3 minutes, then remove from the heat. Cover the pot and allow the peas to sit for 1 hour.

Drain the water off of the black-eyed peas.

Add the broth, 2 cups of water, ham hocks, onions, celery, carrots, jalapenos, salt and pepper to the black-eyed peas and bring to a boil.

Reduce the heat and cook, covered, for about 1 hour at a slow simmer, or until the black-eyed peas are tender, stirring occasionally.

Tips And Tidbits For Best Ever Black-Eyed Peas

I find pork the secret to a good black-eyed pea recipe. A double dose of ham for flavor and slow and gentle cooking creates this perfect side dish.

Like I said before,  these peas are traditionally served on New Year’s Day to bring good luck and there are a lot of different recipes.

My mother’s recipe didn’t use ham. She made hers with bacon, garlic, and thyme! I think that makes them extra special.

Great served with Southern Style Fried Cornbread as a side.

Mac and Cheese With Fontina and Gorgonzola

I enjoy this more sophisticated mac and cheese once in a while! In my opinion you can never have too many mac and cheese recipes. I love the flavors of the two cheeses used in this one. Another great thing is that this one is very quick to make.

In fact it’s much quicker than any other homemade Mac-n-cheese I’ve made. Just cook the noodles and stir everything together, all on the stove top.

Don’t worry, the kids will still love it.

Macaroni with Fontina and Gorgonzola Cheese

Ingredients

1 lb elbow macaroni, uncooked
1/4 lb Fontina cheese, shredded
1/4 lb gorgonzola, crumbled
2 tablespoons butter
1/2 cup half-and-half
fresh ground black pepper
1/2 cup fresh chives, Chopped

Directions

In a medium pot, bring 4 quarts of water to a boil. Add a pinch of salt and the macaroni. Cook until tender, about 8 to 10 minutes.

In a colander, drain the macaroni and return it to the pot.

Fold in the cheese, butter and half-and-half. Season with the pepper. Warm through.

Garnish with chopped chives.

New Year’s Hopping John – Traditional

This New Year’s Hopping John is a tried and true traditional recipe for New Year’s Day in the South. This recipe is tops!

 

Now there are a lot of recipes for hopping John. So before you holler that this ain’t traditional just think about it. Maybe it’s not your traditional but it’s somebody’s!

It wasn’t mine until I gave it a trial run.

I normally use smoked hog jowls. But my fatty pork days are over and I was looking for a substitute and came across this recipe.

This is the one for my New Years tradition from now on!!!

I serve it over rice liberally sprinkled with Tabasco sauce. I like it spicy. A great meal with some greens and cornbread!

  • 1 cup sliced celery
  • 1 medium onion
  • 2 cloves garlic minced
  • 1 tablespoon oil bacon drippings or 1 tablespoon butter
  • 4 cups water
  • 2 10 1/2 oz cans chicken broth (or 2 1/2 cups)
  • 16 ounces black-eyed peas fresh or frozen, thawed
  • 1/2 lb cooked ham cubed
  • 1/4 teaspoon dry crushed red pepper
  • 3 bay leaves
  • 3 cups cooked long-grain rice
Instructions
  1. Saute the first three ingredients in a large Dutch oven in hot oil, bacon drippings, or butter until tender.
  2. Add the water and the next five ingredients.
  3. Bring to a boil; cover, reduce heat, and simmer 40 minutes or until the peas are tender.
  4. Remove and discard the bay leaf.
  5. Serve over rice.

Simple Brussels Sprouts in Garlic Butter

This simple Brussels sprouts recipe has totally changed my mind about Brussels Sprouts! Normally my Brussels sprout standard recipe is to steam the sprouts and then saute in browned garlic butter and sprinkle with Parmesan.

So I figured this was just another avenue to the same thing. WRONG!!.

These are fabulous and far superior to the way I made them before. It’s the brown roasty part that is such an excellent touch. Even with exactly the same ingredients this technique produces a much better result.

It’s imperative that you use fresh sprouts, the texture would be way off with the frozen ones. I did swirl in another pat of butter.

This will be my sprout standard from now on.

Simple Brussels Sprouts in Garlic Butter
Ingredients
  • 15 Brussels sprouts halved lengthwise
  • 1 1/2 Tbsp butter
  • 1 1/2 Tbsp olive oil
  • 3 cloves garlic smashed with the flat of a knife
  • freshly grated Parmesan cheese optional
  • salt and pepper
Instructions
  1. Melt the butter and olive oil in a medium skillet (over medium-high heat) until butter is foamy. Reduce the heat to medium, add the smashed garlic and cook until lightly browned.
  2. Remove the garlic and discard.
  3. Add the sprouts to the skillet cut side down, cover, and cook without stirring on medium-low heat 10-15 minutes or until tender when pierced with a knife.
  4. The cut side of the sprouts should get nice and browned, with a nutty, buttery flavor enhanced by garlic.
  5. Top with freshly grated Parmesan and salt and pepper to taste.
