It's a Southern tradition to have Black-Eyed Peas on New Years Day.

chicken stock

chopped

ham hock or 2 cups cooked ham
cut into small cubes

seeds removed and chopped

Sort and wash peas; place in a large Dutch oven. Add the remaining ingredients and bring to a boil.
