Easy Peasy Oven Roasted Asparagus
Ingredients
  • 1 lb asparagus
  • olive oil
  • Parmesan cheese
Instructions
  1. Clean and break off the tough ends of the asparagus.
  2. Roll the asparagus in olive oil, coating each one. Place the asparagus on cookie sheet.
  3. Bake at 400 for 15-20 minutes, until tender and crisp.
  4. Take out and sprinkle the Parmesan cheese over them. Return to the oven for 5 minutes.

This is my all-time favorite recipe for Hot German Potato Salad. The combination of tangy, sweet and savory flavors is fantastic!

Hot German Potato Salad

This was passed down from my friends Great-Great-Grand Mother who came from Germany in the 1800’s.

This recipe is almost identical to my neighbors recipe. She was born and raised in Regensburg Germany. So I’m guessing it’s authentic!

This can also be served at room temperature and cold. It doesn’t have to be hot.

Hot German Potato Salad
Ingredients
  • 10 slices bacon diced
  • 1 cup sugar or less
  • 1 cup distilled white vinegar
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon prepared mustard
  • 1 dash cayenne pepper
  • 10 large potatoes boiled
  • 1 medium onion sliced (optional)
Instructions
  1. Dice and fry the bacon.
  2. In a small bowl, add the eggs, salt, mustard, sugar, vinegar and cayenne pepper. Beat well and pour into hot pan with bacon and bacon grease stirring till thickened.
  3. Add the diced cooked potatoes and sliced onion (or onion powder).

  • 1/4 pound sliced bacon cut into 1-inch pieces
  • 3 14 1/2 ounce cans green beans, with liquid
  • 1/4 yellow onion peeled and chopped
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
Instructions
  1. In a 2-quart saucepan over medium heat, cook the bacon until lightly brown but not crisp. When the bacon has browned, add the green beans. Add the salt, sugar and pepper and mix well. Place the onion on top of green beans.

  2. Cover saucepan with a lid and bring to a light boil.

  3. Turn heat down to low and simmer beans for 45 minutes.

I love these Easy Baked Potato Wedges. They are so simple to make and yet they taste so great! They also have a great color from the paprika, and the spices are just right.

I almost always serve these when I have a backyard BBQ. In fact one of my main menus include these potatoes along with Amarillo Grilled Steaks and Special Cucumber Salad. Grilled Stuffed Jalapenos is usually the appetizer.

Easy Baked Potato Wedges
Ingredients
  • 4 large potatoes
  • 1/4 cupe cooking oil
  • 1 tablespoon parmesan cheese
  • 1 teaspoon salt
  • 1 tablespoon paprika
  • 1/2 teaspoonj pepper
  • 1/2 teaspoon garlic powder
Instructions
  1. Wash potatoes and cut into wedges. Place the potatoes skin down in a baking dish.
  2. Mix the next 6 ingredients together and brush onto the potatoes.
  3. Bake at 350 for 1 hour.

I watched Rachael Ray make Brussels Sprouts with Bacon and Shallots on TV. After watching that show I knew I had to give the recipe a try!

 

I love Brussels sprouts and love finding new ways to make them. Rachael’s recipe is so simple to make and the flavor is divine!

These are DELICIOUS! Even my neighbor’s two year old loves them!

I’ve yet to find a Brussels sprouts recipe I didn’t like, and this one is no exception! This was quick and easy to prepare, and the more I keep typing.. the more I’m craving them now!

How To Make Brussels Sprouts with Bacon and Shallots

Making the dish couldn’t be easier.

Just crisp up the bacon in a skillet and then saute the shallots in the bacon grease.

Add the Brussels sprouts to the pan and cook for a few minutes and then add the chicken broth.

Simmer the sprouts in the broth for a few minutes and then sprinkle the bacon over the top and serve.

That’s got to be the easiest side dish in the world. Plus, it’s absolutely delicious!

Ingredients
  • 3 slices chopped bacon
  • 1 tablespoon olive oil
  • 2 shallots minced
  • 1 1/2 pounds small Brussels sprouts trimmed but left whole
  • salt and pepper
  • 1 cup chicken broth
Instructions
  1. Brown the bacon. When crisp, remove the bacon from the pan and drain the fat. Add the olive oil and shallots and saute 1-2 minutes. When the shallots are tender, add the Brussels sprouts and cook for 2-3 minutes on medium high heat until they are soft.
  2. Add the broth and bring to a boil. Cover the pan and turn the heat down to medium low.
  3. Cook for 10 minutes or until tender. Top with bacon and serve.

 

Tips and Tidbits About Brussels Sprouts

I used fresh Brussels Sprouts when I made this dish. However, I think frozen would work just fine.

If you go the fresh route pick out sprouts that are on the small side. They will be more tender and will cook up faster.

In addition to the size, you want to pick out sprouts that seem heavy for their size and have tightly packed leaves.

Avoid brussels sprouts that have yellowing leaves or black spots. Yellowing indicates age and the black spots could be a sign of fungus.

The best sprouts will make the best Brussels Sprouts with Bacon and Shallots!

Simple Roasted Asparagus is such an easy and elegant way to cook asparagus.  The asparagus gets a slightly nutty flavor after roasting.

 

The nutty flavor makes asparagus even yummier!

I’m a big asparagus fan and I’m always on the lookout for new ways to make it. I absolutely love asparagus cooked this way.

I find it easier to put the asparagus in a bowl to toss with the oil. Sometimes I sprinkle with Parmesan as soon as it comes out of the oven.

Ingredients
  • 1 lb asparagus
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon kosher salt or 1/4 teaspoon regular table salt
Instructions
  1. Preheat oven to 425°F.
  2. Cut off the woody bottom part of the asparagus spears and discard. With a vegetable peeler, peel off the skin on the bottom 2-3 inches of the spears (this keeps the asparagus from being all "stringy" and if you eat asparagus you know what I mean by that).
  3. Place asparagus on a foil-lined baking sheet and drizzle with olive oil. Sprinkle with salt.
  4. With your hands, roll the asparagus around until they are evenly coated with oil and salt. Roast for 10-15 minutes, depending on the thickness of your stalks and how tender you like them.

 

Simple Roasted Asparagus should be tender when pierced with the tip of a knife. The tips of the spears will get very brown but watch them in order to prevent burning.

They are great plain, but sometimes I serve them with a light vinaigrette if I want something acidic to balance out my meal.

I love these Oven Steak Fries! I don’t know if I will ever make any other kind of oven fries ever again .

I was making some fried fish and wanted some fries to go with it, but didn’t want to actually fry them, so I did a search and found that I had all of the ingredients to make these.

I’m so glad I did. The Montreal steak seasoning along with the thyme and oregano, really add wonderful flavors to these potatoes.

This is a favorite side dish of mine. Especially with Spicy Catfish Tenders With Cajun Tartar Sauce.

Oven Steak Fries
Ingredients
  • 5 russet potatoes cut into thin wedges
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme eyeball it
  • 1 teaspoon dried oregano eyeball it
  • 1 tablespoon steak seasoning such as montreal steak seasoning or,salt and pepper
Instructions
  1. Preheat oven to high. Cut potatoes and spread out on a cookie sheet. Coat potatoes with extra-virgin olive oil, dried herbs and steak seasoning or, salt and pepper.
  2. Spread potatoes to the corners of the cookie sheet. Cook potatoes in very hot oven 25 minutes.
  3. Turn potatoes once, half way in the cooking process.
  4. Serve fries hot from the oven.

Oven-Roasted Asparagus
Ingredients
  • 1 tablespoon lite olive oil
  • 1/2 teaspoon Italian seasoning
  • 1 1/2 lbs asparagus washed, tough stems removed
  • 3 tablespoons balsamic vinegar good quality
  • salt and pepper
  • 1/4 cup grated Parmesan cheese optional
Instructions
  1. Heat an Oven proof pan (about 10") in a hot oven for 5 minutes. Pour in the oil & Italian seasoning.
  2. Coat the whole pan. Roll the asparagus in the oil to coat all sides.
  3. Bake in 400F degrees oven for 5-7 min Do not over cook!
  4. The asparagus should just be heated through but still very crisp. Remove from the oven, drizzle with the vinegar. Add salt & pepper. Sprinkle with Parmesan (if desired).
  5. Serve immediately or serve at room temperature.

Ingredients
  • 2 8 ounce fresh mushrooms
  • 1/2 cup unsalted butter melted
  • 1/2 ounce ranch dressing mix hidden valley, 1/2 package
  • 2 tablespoons Parmesan cheese as much as desired
Instructions
  1. Put the mushrooms in the crockpot.
  2. Melt the butter in a bowl and add 1/2 of the Hidden Valley Ranch Dressing mix. Mix well and pour over the mushrooms in the Crockpot.
  3. Sprinkle with about two tablespoons of Parmesan Cheese or more to your liking.
  4. Cook in crockpot at low for 4 hours.

Twice Baked Potato Casserole
Ingredients
  • 6 medium potatoes baked
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 lb bacon cooked and drained
  • 3 cups sour cream
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded cheddar cheese
  • 2 green onions chopped
Instructions
  1. Cut peeled potatoes in 1 inch cubes. Place half in greased 13x9 baking dish. Sprinkle with half the salt, pepper, and bacon. Top with half the sour cream and cheeses.
  2. Repeat layers.
  3. Bake, uncovered at 350* for 25 minutes.
  4. Sprinkle with onions.
