3sliceschopped bacon
1tablespoonolive oil
2shallotsminced
1 1/2poundssmall Brussels sproutstrimmed but left whole
salt and pepper
1cupchicken broth
Instructions
Brown the bacon. When crisp, remove the bacon from the pan and drain the fat. Add the olive oil and shallots and saute 1-2 minutes. When the shallots are tender, add the Brussels sprouts and cook for 2-3 minutes on medium high heat until they are soft.
Add the broth and bring to a boil. Cover the pan and turn the heat down to medium low.
Cook for 10 minutes or until tender. Top with bacon and serve.
