Chicken Fajita Grilled Cheese Recipe

Chicken Fajita Grilled Cheese
Ingredients
  • 1 tablespoon butter
  • 2 slices bread
  • 1 slice cheddar or 1/4 cup shredded
  • 1 slice jack or 1/4 cup shredded
  • 1/2 cup chicken fajitas
  • guacamole optional
  • salsa optional
  • sour cream optional
Instructions
  1. Heat a pan over medium heat.
  2. Butter one side of each slice of bread, place one slice in the pan with buttered side down, top with half of the cheddar followed by the chicken fajitas, the remaining cheddar and finally the other slice of bread with buttered side up.
  3. Grill until golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
  4. Serve with guacamole, salsa and sour cream for dipping.
  5. Option: Stuff the chicken fajita grilled cheese with the guacamole, salsa and sour cream.

  3. Mix soup with 1 cup of milk and pour over all.

  • 4 ounces linguine cooked al dente

Recipe For Orange Chicken

Better Than Takeout Orange Chicken
Ingredients
For The Sauce
  • 1 cup water
  • 1/2 cup orange juice...
  • 1/4 cup lemon juice fresh squeezed
  • 1/3 cup rice vinegar
  • 2 1/2 tablespoons soy sauce
  • 1 tablespoon grated orange zest
  • 1 cup packed brown sugar
  • 1/2 teaspoon minced fresh gingerroot
  • 1/2 teaspoon minced garlic
  • 2 tablespoons chopped green onions
  • 1/4 teaspoon red pepper flakes
  • 3 tablespoons cornstarch
  • 2 tablespoons water
For The Chicken
  • 2 lbs boneless skinless chicken breasts cut into 1/2 inch pieces
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons olive oil
Instructions
  1. Pour into saucepan water, orange juice, lemon juice, rice vinegar, and soy sauce; and set over medium-high heat. Stir in orange zest, brown sugar, ginger, garlic, red pepper, and chopped onion.
  2. In a small bowl Mix 3 Tablespoons of cornstarch with 2 Tablespoons of cold water mix well and add it to your sauce. Bring to a boil. Remove from heat, and let cool 10 to 15 minutes.
  3. Place chicken pieces into a resealable plastic bag. When contents of saucepan have cooled, pour 1 cup of sauce into bag. Reserve remaining sauce. Seal bag, and refrigerate at least 2 hours.
  4. In another resealable plastic bag, mix the flour, salt, and pepper. Add marinated chicken pieces, and shake to coat.
  5. Heat the oil in a large skillet over medium heat. Place chicken in skillet, and brown on both sides. Remove to paper towels, and cover with aluminum foil.
  6. Wipe out the skillet, and add the sauce. Bring to a boil over medium-high heat. Mix together cornstarch and 2 tablespoons water, and stir into sauce. Reduce heat to medium low; stir in chicken pieces, and simmer, about 5 minutes, stirring occasionally.

This is definitely not the stuff of fast food joints. The Parmesan cheese and the spices make these tenders way beyond what you get at the drive through.

Another reason I like this recipe is that it’s so quick. It’s ideal for a weeknight dinner. 10 or 15 minutes prep time and 20 to 30 minutes baking time and dinner is ready.

Quick and Easy Parmesan Chicken Tenders
Ingredients
  • 2 lbs chicken tenders
  • 1 cup grated Parmesan cheese
  • 2 tablespoons dried parsley
  • 1 tablespoon dried oregano
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup butter
Instructions
  1. Preheat oven to 350F and line a shallow pan with foil.
  2. Combine all the dry ingredients. Melt the butter in a shallow dish.
  3. Dip each chicken piece in the butter and then roll in the seasoning mixture and place in the pan.
  4. Bake for 20-30 minutes or until chicken is done.

Sesame chicken is one of my favorite takeout dinners. I can’t count the times I’ve ordered it. But with this recipe in my arsenal I’ll probably never order it again!

Crock Pot Sesame Chicken
Ingredients
  • 1 1/2 pound boneless/skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons dried onion
  • 2 tablespoons ketchup
  • 1 tablespoon oil
  • 1/2 teaspoon garlic powder
  • 2 teaspoons cornstarch dissolved in 3 Tablespoons water
  • Sesame seeds
Instructions
  1. Put chicken into crock pot.
  2. Combine honey, soy sauce, onion, ketchup, oil, and garlic. Pour over chicken.
  3. Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through.
  4. Remove chicken from crock pot, leave sauce.
  5. Dissolve 2 teaspoons of cornstarch in 3 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened.
  6. Cut chicken into bite size pieces and return to crock pot - can leave chicken in and simmer on low or serve.
  7. Sprinkle with sesame seeds and serve over rice.

Ingredients
  • 3/4 lb Boneless Skinless Chicken Thighs cut into bite-size pieces
  • 12 oz Linguine or Pasta of your Choice
  • 1 Red Bell Pepper cut into strips
  • 1 Yellow Bell Pepper cut into strips
  • 1 Yellow Onion cut into half-moon slices
  • 8 oz Cremini Mushrooms sliced
  • 4 Cloves Garlic
  • 2 Tbsp Cajun Seasoning
  • 1 cup Chicken Stock
  • 1/4 cup Heavy Cream
  • 2 Tbsp Fresh Chopped Parsley
  • 4 Tbsp Unsalted Butter
  • Salt and Pepper to taste
Instructions
  1. Fill a large pot with water, add a generous sprinkle of salt and bring to a boil.

  2. Season the chicken thighs with the Cajun seasoning and set aside. In a large skillet with high sides, add 2 Tbsp of butter and allow it to melt over medium heat.

  3. Add the chicken thighs and cook them for about 4 to 5 minutes or until they develop some color on all sides, remove from the pan to a plate.

  4. Add remaining butter to the skillet and add the peppers, onions, garlic, and mushrooms. Cook the veggies for about 5 to 6 minutes or until they begin to cook down and develop some color.

  5. Add the chicken stock, turn the heat down to medium-low and cook for about 10 minutes or until the sauce has reduced by half. At this point, add the pasta to the boiling water and cook according to the package instructions.

  6. Add the half and half and season lightly with salt and pepper, toss in the cooked pasta and cook everything together for about a minute or until the sauce thickens.

  7. Add the parsley and serve!

4 boneless chicken breast, halves
1 cup plain greek yogurt (calls for mayo but I always sub yogurt)…
1/2 cup parmesan cheese, freshly grated
1 1/2 tsp seasoning salt (I add a dash of pink himalayan)
1/2 tsp black pepper, ground
1 tsp garlic powder

Directions

Mix yogurt, cheese and seasonings.

Spread mixture over chicken breast and place in baking dish.

Bake at 375°F for 45 minutes. Serve with fresh steamed veggies.

  3. Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken.
  4. Cook on LOW for 3 to 4 hours. Add cashews and stir. Serve over rice.

 

Good To Know

If you want to have some extra sauce to pour over the chicken and the rice, double the sauce ingredients.

Saltine Crusted Chicken Fingers are so simple and so delicious you would not believe it. The crackers work out perfectly. So much better for the crunch factor than plain flour or even bread crumbs.

The base of the recipe is very simple.

One thing I would like to say is that if you have the time let them marinate overnight. The flavor is so much better that way.

Ingredients
  • 1 lb of Chicken Tenders cut in half lengthwise
  • 1 cup of Buttermilk
  • 3/4 tsp of Seasoned Salt
  • 1/2 tsp of Paprika
  • 1/2 tsp of Granulated Garlic
  • 1 tsp of Dried Parsley Flakes
  • 1 Sleeve of Saltine Crackers pulsed until coarse crumbs
Instructions
  1. In a bowl, toss the chicken with the buttermilk, seasoned salt, paprika, garlic and parsley flakes, cover and refrigerate for a couple of hours or up to overnight.
  2. Allow your chicken tenders to come to room temperature for about 10 minutes before cooking.
  3. Add about one inch of vegetable oil to a large skillet, preheat the oil over medium high heat until it’s really hot.
  4. Shake as much of the buttermilk off of the chicken as you can and dredge them in the cracker crumbs.
  5. Fry them in the hot oil for about 3 to 4 minutes on each side or until they develop good color and are fully cooked through.
  6. Remove them from the skillet, and place them on a paper towel lined plate to absorb some of the oil.
