Zucchini Bread
Ingredients
  • 2 1/2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 3 teaspoons vanilla
  • 1 cup oil
  • 2 cups zucchini grated
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 cup nuts optional
  • 3 teaspoons cinnamon
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients. Pour into two greased loaf pans.
  3. Bake for one hour.

Julia Child’s Herb Biscuits are fantastic biscuits!!!!! I love this recipe because it includes eggs, which I have never had in a biscuit.

The recipe also includes herbs which really enhance the flavor.

Delicious biscuits! Tender and moist with a beautiful texture and unbelievable taste!

  2. Turn onto a floured surface & knead mixture briefly. Pat or roll out to 1/2" thickness & cut into rounds.
  3. Bake on an ungreased baking pan at 450 degrees for 10-15 minutes.

These Southern Buttermilk Biscuits are authentic. This recipe came from my great-great-grandmother and handed down to all in my family.

 

I would put these biscuits up against anyones. They are great with sawmill gravy and Paula Deen’s alrighty then scrambled eggs.

Ingredients
  • 2 cups unbleached all-purpose flour plus more for dusting the board
  • 1/4 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt or 1 teaspoon salt
  • 6 tablespoons unsalted butter very cold
  • 1 cup buttermilk approx
Instructions
  1. Preheat your oven to 450°F.
  2. Combine the dry ingredients in a bowl, or in the bowl of a food processor. Cut the butter into chunks and cut into the flour until it resembles a coarse meal. If using a food processor, just pulse a few times until this consistency is achieved.

  3. Add the buttermilk and mix JUST until combined.

  4. If it appears on the dry side, add a bit more buttermilk. It should be very wet. Turn the dough out onto a floured board.

  5. Gently, gently PAT (do NOT roll with a rolling pin) the dough out until it's about 1/2" thick. Fold the dough about 5 times, gently press the dough down to a 1 inch thick.

  6. Use a round cutter to cut into rounds.

  7. You can gently knead the scraps together and make a few more, but they will not be anywhere near as good as the first ones.

  8. Place the biscuits on a cookie sheet- if you like soft sides, put them touching each other. If you like"crusty" sides, put them about 1 inch apart- these will not rise as high as the biscuits put close together.

  9. Bake for about 10-12 minutes- the biscuits will be a beautiful light golden brown on top and bottom.

Recipe Notes

Do not over bake.

  • 1/2 cup chopped nuts
Instructions
  1. Mix well in a bowl the dates, brown sugar, butter and boiling water. Stir until the butter melts.
  2. Allow to cool a bit and then stir in the egg, baking soda, flour, salt and nuts.
  3. Place in a buttered loaf pan (9x5) and bake at 350° for about 40 minutes, or until a knife inserted in the middle comes out clean.

Tabasco Cheddar Biscuits
Ingredients
  • 1/2 teaspoon baking soda
  • 1 1/2 cups cake flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons cold unsalted butter cut into small pieces
  • 1/2 cup sharp cheddar cheese grated
  • 1/2 cup low-fat buttermilk
  • 1 teaspoon red pepper sauce Tabasco brand
Instructions
  1. Preheat oven to 400 degrees F, and coat baking sheet with cooking spray.
  2. Whisk together flour, baking soda, baking powder, and salt in large bowl. Stir in butter and cheese. Stir in buttermilk, and mix until dough just comes together.
  3. Scrape out onto well-floured work surface, and pat dough to ½-inch thickness. Cut out biscuits with 2 ½-inch diameter round cutter.
  4. Repeat with remaining scraps of dough until you have 8 biscuits, and transfer biscuits to prepared baking sheet.
  5. Sprinkle red pepper sauce on tops of biscuits. Bake 12 to 15 minutes, or until puffed and golden. Serve hot.

Lazy Irish Beer Bread – Only 3 Ingredients

You’re gonna’ love Lazy Irish Beer Bread. Great bread for St. Patricks day. It’s light and fluffy and closer to a yeast bread than a quick bread.

 

With just 3 ingredients it doesn’t get any easier!

It smells and tastes slightly of beer but so slightly that no one will know there is beer in it unless you tell them.

It’s light-textured inside, slightly crusty outside and about the same sweetness as any white yeast bread. And when it’s baking… Oh, the smell!!!

It also has some versatility to it. Try adding herbs like thyme or a pinch of rosemary. Seeds like celery seeds or caraway are great, too!

  • 6 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder

  1. Preheat your oven to 375 degrees Fahrenheit.

  4. It might be a little lumpy, but don't worry about it at this point.

  6. Shape each portion into a round loaf with lightly flattened tops. Put the loaves on a large ungreased baking sheet, preferably the nonstick kind. Sprinkle some additional flour on top of each loaf and with a sharp knife, cut a cross in two slashes across the top of each loaf.
  7. Let the loaves sit for 10 minutes.
  8. Bake for 40 minutes or until golden brown.
  9. Makes 2 loaves.

Paula Deen’s Mexican Cornbread

Paula Deen’s Mexican Cornbread is really yummy cornbread. The jalapenos add just the right amount of heat. Not overly hot, but with a nice kick.

It’s also not overly sweet. Just plain good. Great with chili.

If you’ve ever tried to make cornbread and it didn’t rise correctly, don’t worry. This turns out beautifully every time. I use pickled peppers from my garden.

I made this in my 8 inch cast iron skillet I’ve had for many years. Cornbread is the only thing I use this pan for and wouldn’t think of making cornbread any other way.

I guess that’s the southern in me.

I love potato rolls! Up until I found this recipe I bought them from a bakery. But now I make my own that are, if anything, better than the bakeries. They’re crusty on the outside and light as a feather on the inside.

They are also very easy to make because the dough requires no hand kneading. Not only are they easy to make you can make them up in advance. Baking them right before you need them. Perfect for dinner parties.

Potato Rolls
Ingredients
  • 5 cups all-purpose flour
  • 1 1/4 ounce package active dry yeast
  • 1 1/2 cups water 105 to 115 F
  • 1/2 cup mashed potatoes
  • 1/2 cup butter melted
  • 1/4 cup sugar
  • 1 teaspoon salt
Instructions
  1. In large bowl combine 2 cups of the flour and the yeast.
  2. In small mixing bowl combine the warm water, potatoes, butter, sugar and salt.
  3. Add to the dry ingredients in the mixing bowl. Beat with electric mixer for 30 seconds on low, scraping side of bowl. Beat on high speed for 3 minutes.
  4. Stir in the remaining flour with a dough hook (or knead by hand), as needed (with most bread recipes the actual amount of flour required depends on humidity, etc. so add slowly until dough pulls away from sides of pan and forms a ball).
  5. Cover and refrigerate for 2 to 24 hours.
  6. Punch the dough down. Turn out on lightly floured surface. Cover and let rest for 10 minutes.
  7. Grease a 13x9-inch baking pan. Shape the dough into 24 rolls. I divide by cutting dough piece in half and then each of those pieces in half--continuing until I have 24 pieces. That helps to get a more uniform size.
  8. Make balls by holding the dough in both hands and gently smoothing by pushing the edges towards the back. Place the rolls in prepared pan.
  9. Cover and let rise in a warm place until nearly doubled in size (about 40 minutes).
  10. Bake at 400°F for 16 to 20 minutes or until golden brown.

11 Minute Easy Cheesy Bread Sticks
Ingredients
  • 1 10 ounce can prepared pizza crust
  • 1 tablespoon butter melted
  • 1/2 cup provolone cheese shredded
  • 1 tablespoon Parmesan cheese
  • 1 tablespoon dried basil
  • 1/4 teaspoon garlic salt
Instructions
  1. Preheat oven to 425.
  2. Unroll the pizza dough onto a greased cookie sheet and brush with butter. Sprinkle the cheeses and spices evenly over the dough.
  3. With a pizza cutter, cut the dough lengthwise into 12 long strips. Then cut those in half to make 24 strips.
  4. Do not separate the strips. Bake for 10-12 minutes or until light golden brown.
  5. Recut along each strip and remove from the cooking sheet.
  6. Serve sticks warm with marinara sauce.
