This Zucchini Bread is delicious! It’s moist and cake-y in the middle, and the crust is sweet and surprisingly crunchy.
I cannot believe that this is so easy to make. Talk about maximum flavor for minimum effort. It’s easily thrown together in one bowl

Zucchini Bread
Ingredients
- 2 1/2 cups sugar
- 3 eggs
- 3 cups flour
- 3 teaspoons vanilla
- 1 cup oil
- 2 cups zucchini grated
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 cup nuts optional
- 3 teaspoons cinnamon
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients. Pour into two greased loaf pans.
- Bake for one hour.
