The family loves it as well as guests.

This Italian Pepper and Sausage Dinner is a restaurant quality meal that's easy to make at home.

Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 lb Italian sausage sweet and taken out of the casing
  • 1 red bell pepper sliced thinly
  • 1 yellow bell pepper sliced thinly
  • 1 large yellow onion sliced
  • 3 garlic cloves finely minced
  • 2 1/2 cups stewed tomatoes
  • 2 tablespoons fresh basil chopped
  • salt
  • fresh ground pepper
  • 2 tablespoons Romano cheese
  • grated Parmigiana-Reggiano cheese
  • top with a few fresh basil leaf
  • 1 lb rotini noodles cooked al dente
Instructions
  1. In a large skillet brown the sausage until it is cooked through. Drain the fat and drain the sausage on paper towels.
  2. In the same pan heat the olive oil and add and sauté the peppers, and onions, until the onion is translucent and then add the garlic and sauté gently but do not brown. The vegetables should be tender.
  3. Stir in the tomatoes, spices, Romano cheese and sausage. Cover the pan and simmer all over medium-low heat for 8-10 minutes. If your mixture seems too thick you can add a little water or red wine.
  4. While the meat mixture is cooking, the pasta can be prepared as per directions. You do not want to overcook the pasta. You want a little firmness to the noodles.
  5. When you are ready to serve use a large platter. The noodles first, then spoon the meat mixture over.
  6. Mix slightly. Sprinkle with the Parmigiano-Reggiano and place fresh basil leaves atop.
  7. This goes well with a green salad with Italian oil and vinegar dressing, and most of all a good hard-crusted peasant bread.

Cabbage Sausage Skillet With A Twist

This Cabbage Sausage Skillet With A Twist is a must-try recipe! I make cabbage and sausage often! It’s a cheap, nutritious and filling dinner that also just happens to be super yummy.

This dish is incredibly easy to make and so tasty! The sum of its parts shouldn’t equal such good taste but it does!

Smoked sausage, onion, cabbage and some hot and spicy Rotel Tomatoes cooked up in a skillet. It just doesn’t get any easier than that!

The Rotel tomatoes are everything here because any smoked sausage is always better when kicked up a notch with a little heat, right?

It’s also a great meat stretcher dish. The sausage and tomatoes are flavoring for the cabbage.

Do you want to stretch it even further? Add some cooked wide egg noodles. When I add noodles I usually cook half of a one-pound package. That’s about right for me!

I love Rotel tomatoes and I don’t know why I’ve never thought to add them to this dish before.

This with a slice of cornbread and you’ve got a top-notch meal! Awesome!!

  • 1 small head of cabbage chopped

Instructions
  1. Melt the butter in large skillet. Add the cabbage and onion and cook on medium high for about 5 minutes stirring to keep from sticking to pan.
  2. Add the remaining ingredients, cover and simmer for 20 – 25 minutes.
  3. Makes about 8 servings.

  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon sugar
  • 1 teaspoon oil
  • 1 cup warm milk
Instructions
  1. In a large bowl, combine all of the ingredients except the oil to make the dough. Shape into round disks.
  2. Heat the oil in the skillet until hot over med-high heat, but not smoking. Fry shaped dough in hot oil till brown and crispy.
  3. Serve hot.

 

Traditionally you would eat this with stew. Or top with some honey. I personally like to spread a little butter on it.

Pile Chili on top and add a little cheese, lettuce, and tomato for a”Navajo Taco” Or use the round as your base for a Tostada, add taco meat, beans, cheese, lettuce, tomato, and Guacamole.

I love Cajun food but all the commercial Cajun seasoning blends have waaaay to much salt for me.

You know the kind. They say when it’s salty enough it’s seasoned just right? That doesn’t work for me!

So I have been searching for the longest time to find the best Homemade Cajun seasoning blend, this is it! My new Tony’s replacement.

Move over Emeril!… you will never purchase Creole or Cajun seasoning again once you taste this one.

The Best Homemade Cajun/Creole Seasoning Mix

Ingredients

2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons dried oregano
2 tablespoons dried basil
1 tablespoon dried thyme
1 tablespoon fresh ground black pepper
1 tablespoon white pepper (or 2 use tablespoons black pepper)
3 teaspoons cayenne pepper
5 tablespoons paprika
4 -5 tablespoons Lawry’s seasoning salt

Directions

Mix all ingredients in a glass jar.Store in the refrigerator to keep the spices fresh.

Shake the jar before using.

Tips and Tidbits

Four tablespoons of seasoned salt will not be overly-salty if you prefer a more salty taste then add in some white salt — this makes a fair amount of seasoning.

Store in a tightly-sealed glass jar in the refrigerator to use in ground beef recipes, soups, or stews, homemade pasta sauce recipes, or use it to season roasts, chickens, pork, beef, I use it on just about everything!

If you like extreme spice then increase the cayenne up to 4-5 teaspoons.

This makes a great gift for a spice-lover!

Southern Style Fried Cornbread

This Southern Style Fried Cornbread is southern for sure! Just like my grandmother used to make except she added in diced hot peppers!

 

She called ’em “pepper patties”. Delicious.

I still remember as a child eating the crunchy bits and trying to avoid the hot pepper bits!!!

Fried cornbread goes well with any boiled leafy greens, cabbage, lima beans, black-eyed peas, fried fish, or pork chops. You just can’t beat fried cornbread!

This Southern Style Fried Cornbread reminds me of my childhood!

Ingredients
  • 1 cup White Lily self-rising cornmeal mix
  • 2/3 cup water
  • 1 cup vegetable oil for frying
Instructions
  1. Mix the first two ingredients to make a batter --- add more or less water depending on how thick or thin you want your cornbread patties. The best way would be to mix in small amounts of water at a time to get the consistency you want.
  2. In a skillet or frying pan bring the oil up to medium heat and test 1/2 teaspoon drop of batter, You do not want it to fry too fast. I normally cook mine on #6 and then turn down to #5 on my stove.
  3. Drop the batter by tablespoons full and pat out with the back of a spoon to make a pattie. Turn over when the bottom is light brown.

 

Serve and enjoy this tasty bread!

  2. Add the soup, sherry, cream cheese, and water and stir until smooth. Simmer for 5 minutes.

  • 6 medium boneless skinless chicken breasts
  • 2 tablespoons garlic butter
  • 2 tablespoons garlic minced or 1 tablespoon garlic paste
  • 3 cups chicken stock
  • 1/4 cup heavy cream
  • 1 1/2 tablespoons lemon vinegar
  • 1 cup dry white wine
  • 1/4 cup lemon juice to taste
  • 1 1/2 teaspoons flour
  • 2 tablespoons capers drained and chopped
  • 1 tablespoon fresh parsley chopped
Instructions
  1. In a nonstick skillet, heat the olive oil over medium-high. Stir in the butter until melted and then add the chicken. Cook 5 min to brown and then reduce heat to medium

  2. Turn the chicken and cook about 4-5min more until juice runs clear when pierced. Transfer chicken to a warm dish.
  3. Lower the heat if needed to maintain medium-low to medium heat so as not to scorch the garlic and then add the garlic to the drippings in the skillet.
  4. In a cup, mix the stock, wine, lemon juice, and 1 1/2 teaspoons of flour until smooth. Stir into the mixture in the skillet. Scrape the skillet to incorporate any browned bits from the chicken.
  5. Heat to a boil, boil 1 minute. Stir in the capers and the remaining 1 tablespoon of butter, simmer until thickened.
  6. Pour the sauce over the chicken, sprinkle with parsley and garnish with additional lemon slices.

  • 5 slices bacon
  • 5 -6 small yellow squash sliced
  • 1 medium onion chopped
  • salt
  • pepper
Instructions
  1. Fry the bacon until crisp and remove from the skillet.
  2. Add the chopped onion and cook until translucent. Add the sliced squash fry stirring frequently until the squash is tender.
  3. Season with salt and pepper.
  4. Crush the bacon and add back to pan. Serve it up!

Perfect Southern Sweet Tea – Here’s The Secrets

I finally found out how my Granny made perfect southern sweet tea. Why did my southern Granny neglect to pass along these secrets?

 

Well, I don’t know the answer to that. Maybe she figured everybody already knew.  But I’ll bet this technique is why her tea was always so much better than mine.

I’m passing these Southern Sweet Tea secrets on to you so you can make it regardless of where you live! This is the true “House Wine of The South!”.

Use The Right Tea: Use Lipton or Luzianne family-sized tea bags. These are black tea which is classic southern. They’re labeled as “iced tea bags” because they don’t turn cloudy when refrigerated. These are not cold brew bags, but iced tea bags that require hot water.

Add Baking Soda: A pinch of baking soda makes a world of difference in a pitcher of freshly brewed sweet tea. It neutralizes the tannins in black tea, giving it a smoother taste.

Use your own judgment for the amount of sugar!

  • 1 1/2 - 2 Cups Sugar.
  • 1/4 teaspoon Baking Soda
Instructions
  1. Sprinkle the baking soda into a pitcher

  2. Add the tea bags to the pitcher/baking soda, Pour boiling water over the tea bags, cover and allow to steep for 15 minutes.

  3. Remove and toss out the tea Bags. Add the sugar and stir until completely dissolved. Add cool water.

  4. Refrigerate until cold and ready to drink.

  5. Serve over ice with a squeeze of lemon if you like. Take a nice long sip. Swoon. Repeat.

  3. Bake the pizza according to directions on the pizza crust package.
