6 boneless skinless chicken breasts
3 tablespoons fresh lime juice
1 tablespoon lime zest, grated
2 large cloves garlic, minced

2 tablespoons olive oil
Kosher salt and ground black pepper

Directions

Whisk together the lime juice, lime zest, garlic, thyme, crushed red chili flakes and olive oil.

Season the chicken breasts with the kosher salt and black pepper.

Put the chicken breasts into a resealable plastic bag and pour in the marinade. Seal the bag and refrigerate the chicken for at least 1 hour.

Light a charcoal barbeque or heat a gas grill for medium high heat. Lightly oil the grate.

Shake the excess marinade from the chicken and grill the breasts about 6 to 8 minutes per side, or until there is no pink in the center of the breast.

Food For Thought – So if you would like spicy hot, add 1 teaspoon hot chili oil and 1 teaspoon of chili garlic paste, both found in the Asian food section of the market, to the marinade.

It will still be there when the chicken is cooked and comes off the grill – it does not fade away!

The chicken is grilled until the skin is charred and the juices run clear, all the while absorbing the smoke of toasting garlic and spoonfuls of the beer and butter sauce.

As I said, it’s unique. Try it and it will make a believer out of you.

Great Recipe For Grilled Chicken

Ingredients

1 whole chicken, about 3 pounds, split lengthwise
2 teaspoons kosher salt
2 teaspoons lemon pepper
2 teaspoons garlic powder
1 bottle or can (12 ounces) beer – your choice
1/2 cup unsalted butter
2 tablespoons garlic powder
1 tablespoon lemon pepper

Directions

Light a charcoal barbeque for medium-high heat and lightly oil the grate.

Combine the 2 teaspoons of kosher salt, 2 teaspoons of lemon pepper and 2 teaspoons of garlic powder. Sprinkle half of the spice mix over both halves of the chicken.

In a small saucepan, melt the butter, then whisk in the bottle of beer and the remaining spice mixture. Keep the mixture warm.

Place the seasoned chicken onto the grill bone-side down. Close the cover and let the chicken cook for about 30 to 45 minutes – the skin should start blistering at this point.

Turn the chicken over so now the skin side is down and the bone side is up.

With the tip of a sharp knife, pierce the membrane of the bones. Ladle some of the beer butter into the hollow formed by the breast bones. Sprinkle some of the garlic powder over the charcoals, close the cover and close the vents.

Repeat this process of beer butter and garlic on the charcoals every 5 minutes until the beer butter is used up.

The skin and bones will be blackened from the charring, but the meat will be moist and tender.

Good To Know – If you think your own junior ranch hands might object to the sight of burnt chicken for dinner, you can make it “green horn” style – cut the chicken into pieces and bake it in the oven for 40 minutes or so at 400F.

Baste it regularly with the beer butter, but don’t try to smoke the garlic powder – it’s not quite the same!

Food For Thought – To really bring out the garlic flavor, mince 6 large cloves of garlic and add them to the beer butter sauce.

You can also rub some of it underneath the skin on the breasts, thighs and legs.

Whisk them into the marinade and make sure the brown sugar is well dissolved.

The sugar will get a little charred on the grill and make the skin crispy-sweet and tangy.

Good To Know – This recipe takes a long time on the grill.

You can also bake the chicken in the oven at 350F for about 45 minutes to an hour or until the juices run clear.

Putting the breasts on a rack in a sheet pan will let the air circulate around them to cook them evenly.

Shake off the excess marinade from the chicken and grill the pieces until they are cooked through – no pink in the center, and the temperature near the bone should be 180F. Cook the chicken for about 50 minutes, turning once. Serve hot or cold.

Good To Know – If baking this chicken in the oven, time it for about 1 hour, although some pieces may cook faster than others.

On Your Own – A whole chicken is not necessary for this recipe to be successful – all thighs, drumsticks or breasts are just as flavorful. Marinate the chicken for the same amount of time.

Properly grilled the breasts are moist and tender. The heat of the grill lightly chars the honey and gives the finished chicken a hint of caramelized smoke.

Food For Thought – Make double or triple the batch of sauce – it is perfect for a salad dressing, as a dip for chicken wings, and even lightly spread on toasted bread for sandwiches.

You can add a little zip by whisking in 1 tablespoon of lemon juice, 1/4 teaspoon of cayenne or 1 teaspoon of hot pepper sauce, such as as Tabasco.

On Your Own – You can make this recipe spicier by adding a dash or two of cayenne pepper to the melted butter.

Good to Know – If you don’t have a grill, or if it’s not barbecue weather, bake the marinated chicken wings on a large sheet pan in a 350F oven.

Turn them occasionally to keep from burning – all that cola will caramelize and they can get stuck to the sheet pan.

The reduced sauce will keep for at least a week in the refrigerator but I don’t recommend freezing it.

  2. Heat a small saucepan and melt the butter over medium heat. Whisk in the hot pepper sauce, honey, cayenne kosher salt, black pepper and granulated garlic. Simmer the sauce for about 10 minutes and keep it warm while you grill the wings.
  3. When the grill is ready, cook the chicken wings until they are cooked through, about 8 to 12 minutes per side, until there is no pink near the bones.
  4. Remove the cooked wings to a large bowl and pour the butter pepper sauce over them. Stir or toss them until every piece is evenly coated. Serve hot.

Good To Know – The cooking of the wings can be done in a hot oven or even deep fried if you have an electric fryer.

However you choose to cook them, make sure they are cooked all the way through before you add them to the sauce. There’s no further cooking after they are mixed together.

Food For Thought – This sauce is definitely hot and sweet – for a milder style, try mixing a bottle of your favorite barbecue sauce with half the amount of honey and only 1/2 cup of hot pepper sauce.

The flavor will be a little richer and not so hot, but will still have plenty of spice.
