This grilled chicken recipe is made a cut above with mango salsa that includes mango and garlic. Delicious addition for guests at a BBQ!

  • 4 boneless skinless chicken breasts
  • 2 medium mangoes peeled, seeded and diced
  • 1/2 inch piece of fresh ginger peeled and minced
  • 2 small cloves garlic minced
  • 1 tablespoon olive oil
  • 2 tablespoons cider vinegar
  • 1/4 cup chopped fresh cilantro leaves only
  • 2 tablespoon fresh lime juice
  • 1/4 teaspoons crushed red chili flakes
  • Kosher salt and ground black pepper to taste
  1. Season the chicken breasts with kosher salt and black pepper. Sprinkle 1 tablespoon of the lime juice over both sides of each breast and refrigerate for about an hour.
  2. Heat the olive oil in a small skillet and lightly saute the minced garlic. Add the cider vinegar and the minced ginger, lower the heat and simmer just until the ginger is slightly soft.
  3. Remove the pan from the heat and set aside.
  4. Mix the diced mangoes with the chopped cilantro and the crushed red chili flakes. Season to taste with a little of the kosher salt and black pepper. Add the sautéed garlic and ginger with the cider vinegar and toss well to blend all the ingredients. Refrigerate in a covered container until ready to use.
  5. Light a charcoal barbecue or a gas grill.
  6. Cook the chicken breasts, turning once, until they are cooked through. Remove them to a warm platter, or individual serving plates, and spoon a mound of the mango salsa over each breast and serve.
Recipe Notes

You can also serve the cooked chicken breasts at room temperature if you are cooking for a crowd or a buffet.

On Your Own – You can intensify the tropical flavors of this dish by using some of the same ingredients to marinade the chicken. Mix some minced ginger and garlic with a little olive oil, cilantro, crushed red chili flakes and lime juice.

Shake the marinade off the chicken breasts before you grill them.
