Dinner just couldn't be any easier than this Simple Baked Chicken recipe.

Ingredients
  • 4 chicken breasts with bone and skin
  • 1/4 cup butter melted
  • 1 -2 teaspoon Season-All salt I use McCormick's
Instructions
  1. Preheat oven to 400°F. Spray a shallow baking dish with non-stick cooking spray.

  2. Rinse the chicken breasts under cool running water. Pat chicken dry with paper towels. Place the chicken in dish.

  3. Brush the melted butter over the chicken, using all the butter. Sprinkle with seasoned salt.

  4. Bake for 50-60 minutes or until cooked through.

  5. Chicken takes only 50 minutes in my oven. Don't over cook, as they might turn out tough.

Chicken & Dumplings

Very satisfying! These were exactly the light and fluffy Chicken & Dumplings we were looking for. My mom made a similar recipe for this comforting dish, and I still remember the wonderful aroma of chicken and dumplings cooking throughout the house.

She didn’t make it often, but when she did, what a treat. I especially loved the light, tender dumplings, which is still my most favorite part of this dish.

For those of you who like a more Southern style of dumpling (heavier, chewier), the recipe is at the bottom.

Chicken & Dumplings
Ingredients
  • 1 large broiler-fryer chicken cut up
  • 2 celery ribs sliced
  • 4 carrots peeled and sliced
  • 1 medium onion diced
  • 1 14 1/2 ounce can chicken broth
  • 2 tablespoons dried parsley
  • 2 teaspoons chicken bouillon granules
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon teaspoon pepper
  • water
Dumplings
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup milk
  • 4 tablespoons oil
Instructions
  1. Combine the chicken, celery, carrots, onion, chicken broth, parsley, chicken bouillon granules, salt and pepper in a large pan or dutch oven; add enough water to cover chicken. Bring to a boil; reduce heat, cover and simmer for 2 hours or until chicken is done.
  2. Remove the chicken and let stand until cool enough to handle. Remove the skin from the chicken and tear meat away from bones. Return the meat to the soup; discard skin and bones. Add more salt and pepper to taste, if desired.
  3. Return the soup to a simmer.
  4. In a mixing bowl, combine the dumpling ingredients and mix well to form a stiff dough. Drop by tablespoonfuls into simmering soup.
  5. Cover and simmer for 15 to 20 minutes.
  6. Serve immediately.
  7. *SOUTHERN STYLE DUMPLINGS (heavier and chewier) 2 cups flour, 1 cup chicken broth, 2 tsp baking powder, 2 beaten eggs. Combine flour, broth, baking powder and eggs; mix well to form a stiff batter. Drop by tablespoonfuls into simmering soup. Cover and simmer for 15 to 20 minutes.

Ingredients
  • 4 boneless skinless chicken breast halves
  • salt and pepper
  • 1/2 cup Italian breadcrumbs
  • 1 egg beaten
  • 4 teaspoons butter
  • 2 cups spaghetti sauce
  • 4 slices mozzarella cheese
  • 1 teaspoon grated Parmesan cheese
Instructions
  1. Pound the chicken to flatten. Salt and pepper to taste.
  2. Dip the chicken in egg; then in bread crumbs.
  3. Fry in the butter in hot skillet, turning and browning for 10 minutes or until chicken is done. Remove the from skillet.
  4. To the skillet add the spaghetti sauce. Heat thoroughly. Add the chicken. Place slices of mozzarella on top of the chicken. Sprinkle with Parmesan. Cover and cook until the cheese is melted.

Serve with a side of spaghetti.

Bayou Pasta With Chicken ( Copycat Chili’s Cajun Chicken Pasta )

I got this Bayou Pasta With Chicken recipe from a place that claimed it as a copycat of Chilis Cajun Chicken Pasta, so I had to try it, and was pleasantly surprised that it DID taste a lot like it!

Bayou Pasta With Chicken
Ingredients
  • 12 ounces penne
  • 3 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups half-and-half
  • 1/2 cup grated Parmesan cheese
  • salt and pepper
  • 1 lb boneless skinless chicken breast
  • 1 1/2 tablespoons Cajun seasoning
  • 1/4 teaspoon cayenne pepper optional
  • 2 teaspoons vegetable oil
  • 2 firm-ripe roma tomatoes cored and diced
Instructions
  1. Bring a pot of salted water to a boil. Cook the penne according to package directions.
  2. Melt the butter over medium heat. Add the flour; stir for 1 minute. Add half-and-half; stir until thickened, 6 minutes. Remove from heat; add parmesan, salt and pepper. Cover.
  3. Pound the chicken to 1/2-inch thickness. Rub the Cajun seasoning and cayenne evenly over the chicken. Warm the oil in a nonstick skillet over medium-high heat. Add the chicken and cook, turning once, until no longer pink in center, 6-8 minutes. Slice the chicken.
  4. In a bowl, toss the pasta with the sauce. Top with the chicken and tomatoes and serve.

This is hands down the best juicy fried chicken ever! I never would have thought to use this ingredient for chicken batter.  The chicken fries up so wonderfully.

It’s juicy and moist with a crispy crunchy coating on the outside.

Ingredients
  • 6 boneless skinless chicken breasts
  • 1 10 3/4 ounce can condensed cream of chicken soup, undiluted
  • 1 large egg
  • 1/2 teaspoon seasoning salt
  • 10 tablespoons all-purpose flour 1/2 cup plus 2 tablespoons
  • 10 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon seasoning salt
  • 1 teaspoon ground black pepper
  • 1 pinch cayenne pepper optional
Instructions
  1. In a shallow dish or bowl combine the egg with the soup and 1/2 teaspoon seasoned salt; mix until thoroughly combined.
  2. Add the chicken pieces and using your clean hands toss to coat completely; set aside or you may refrigerate until ready to finish making the recipe.
  3. In a medium bowl mix together the flour with the cornstarch, 1 teaspoon garlic powder, paprika, 1 teaspoon seasoned salt and black pepper.
  4. Working with one piece of chicken at a time, place the soup-coated chicken into the flour mixture and toss to coat completely.
  5. Add more flour and/or cornstarch if necessary adding them in equal parts (there should be an equal amount of each in the mixture, if you add in 2 tablespoons flour you must add in 2 tablespoons cornstarch with the flour).
  6. Place the coated chicken on a rack and allow to sit until it becomes doughy (THIS IS A CRUCIAL STEP to ensure crispiness when fried).
  7. Heat oil in a deep skillet over medium heat (be certain to use enough oil to cover the chicken pieces).
  8. Once the chicken is doughy test oil by dropping in a piece of the "dough" into it. The oil is ready when it starts to fry immediately.
  9. Fry the chicken pieces in oil for about 10 minutes or until cooked through and juices run clear.
  10. Drain on a rack.

I wanted a basic way to cook drumsticks since they are cheaper than the breasts. This Simple Baked Chicken Drumsticks recipe filled the bill!

There’s not a lot of spice or sauce on it so if you are looking that, this is not the recipe for you.

We found it just right for us, the flavor of the chicken really comes through.

I served with corn and twice baked potato casserole.

Simple Baked Chicken Drumsticks
Ingredients
  • 5 -6 chicken drumsticks
  • garlic powder
  • pepper
  • salt
  • olive oil
Instructions
  1. Put some olive oil in the bottom of a 9X13 pan (just enough to put the drumsticks on ). Add the drumsticks (space enough apart so they aren't touching each other). Sprinkle generously with pepper and garlic powder. Sprinkle lightly with salt.
  2. Bake at 375 for half an hour. Turn drumsticks over and add more garlic powder, pepper and salt (same as before).
  3. Bake another half an hour (or until cooked til 160 degrees)).

OMG! This Bourbon Chicken is so tender, juicy and delicious. When my friends ate this all I heard was, oh, my god how delicious and tons of moans, not to mention plenty of finger licking.

It’s named Bourbon Chicken because it was supposedly created by a Chinese cook who worked in a restaurant on Bourbon Street.

Bourbon Chicken
Ingredients
  • 2 lbs boneless chicken breasts cut into bite-size pieces
  • 1 -2 tablespoon olive oil
  • 1 garlic clove crushed
  • 1/4 teaspoon ginger
  • 3/4 teaspoon crushed red pepper flakes
  • 1/4 cup apple juice
  • 1/3 cup light brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon cider vinegar
  • 1/2 cup water
  • 1/3 cup soy sauce
Instructions
  1. Heat oil in a large cast iron skillet. Add the chicken pieces and cook until lightly browned. Remove the chicken.

  2. Add the remaining ingredients, heating over medium heat until well mixed and dissolved. Add the chicken back in and bring to a hard boil. Reduce the heat and simmer for 20 minutes.

  • 4 garlic cloves minced
  • 4 tablespoons brown sugar

  1. Preheat oven to 450°F. Line a baking dish or cookie sheet with aluminum foil and lightly coat with cooking spray or lightly brush with oil.
  2. In small sauté pan, sauté the garlic with the oil until tender. Remove from the heat and stir in the brown sugar. Add additional herbs and spices as desired.
  3. Season the chicken with salt and pepper. Place the breasts in a prepared baking dish and cover with the garlic and brown sugar mixture.
  4. Bake uncovered for 15-30 minutes, or until the juices run clear. Cooking time will depend on the size and thickness of your chicken.
