Christmas-Crackers

For as long as I can remember, my family has had these highly addictive crackers every year at Christmas time for parties, get togethers, etc… They are super-easy, super-quick and they will have you addicted at first bite.

This is very similar to other recipes such as the one from Hidden Valley Ranch. But there’s one big exception… This one does not use the oven!

Christmas Crackers

Ingredients

1 (11 ounce) box oyster crackers
2/3 cup popcorn oil (I prefer Orville Redenbachers)
1/2 teaspoon dill
1/2 teaspoon lemon pepper
1 ounce dry ranch dressing mix (1 packet)

Directions

Put the crackers in a large mixing bowl.

Combine the remaining ingredients in a large measuring glass or small bowl and whisk together.

Pour over the crackers and start turning with a plastic spatula or wooden spoon; try not to break the crackers. Stir for a few minutes so that there is no pool of oil at bottom of bowl and the crackers have absorbed the majority of it.

You can let them sit to dry out a bit, but I usually can’t wait that long! Enjoy!

Betcha can’t eat just one handful!

*** Make sure to use Ranch DRESSING mix, NOT the dip mix!***.

Slow Cooker Root Beer Chicken Wings
Ingredients
  • 3 lbs of wings
  • 2 tsp of salt
  • 2 tsp of pepper
  • 1 cup of bbq sauce
  • 16.9 fl oz of root beer
  • more bbq sauce
  • brown sugar
Instructions
  1. Season the chicken wings with salt and pepper.
  2. Spray your slow cooker pot with cooking spray, add the chicken wings, bbq sauce and root beer. Cover, cook on low for 4 hours.
  3. Remove the wings from the slow cooker and place on a parchment lined tray. Brush more bbq sauce onto wings, sprinkle with some brown sugar.
  4. Put under the broiler for 8 -10 minutes. Enjoy!

These leftover turkey and mashed potato balls are excellent as an appetizer for the big game or as an entree for dinner. The flavor is just incredible.

Leftover Turkey and Mashed Potato Balls

A great use of leftovers.

Servings: 6
Calories: 285 kcal
Ingredients
  • 8 ounces leftover turkey shredded
  • salt and pepper
  • 2 tablespoons vegetable oil
  • 2 portabella mushrooms chopped (1/2 cup)
  • 5 ounces frozen chopped spinach thawed and squeezed dry
  • 1 teaspoon garlic powder
  • 3 tablespoons lemon juice
  • 1/2 teaspoon nutmeg
  • 1 cup cooked leftover mashed potatoes
  • 1 egg beaten
  • 1/4 cup asiago cheese grated
  • 3/4 cup breadcrumbs
  • 1/2 cup sweet hot chili sauce or 3⁄4 cup of your favorite barbecue sauce
Instructions
  1. In a large skillet heat a tbsp of vegetable oil, the mushrooms and cook for 3 minutes, add the turkey and stir until heated through. Add salt & pepper to taste.
  2. Add the spinach, garlic powder lemon & nutmeg. Stir to mix well and heat through. Remove from the pan place the mixture in a large bowl to cool.
  3. When cooled add the mashed potatoes and beaten egg; mix well.
  4. Roll the mixture into 3/4" balls.
  5. Mix the Asiago cheese and bread crumbs. Roll the balls in the breadcrumb/cheese mixture.
  6. At this point, you may cover the balls and place in the fridge for several hours before completing the final steps or continue.
  7. Heat the second tbsp of oil in a large skillet over medium heat and brown the balls, be gentle turning them but get them brown and crisp on all sides, approx 10 minutes.
  8. Add the chile or BBQ sauce to the skillet turn heat to low and turn the balls to coat with the sauce - this last step takes approx 5 minutes.
  9. Insert toothpicks and serve.

11 Minute Easy Cheesy Bread Sticks
Ingredients
  • 1 10 ounce can prepared pizza crust
  • 1 tablespoon butter melted
  • 1/2 cup provolone cheese shredded
  • 1 tablespoon Parmesan cheese
  • 1 tablespoon dried basil
  • 1/4 teaspoon garlic salt
Instructions
  1. Preheat oven to 425.
  2. Unroll the pizza dough onto a greased cookie sheet and brush with butter. Sprinkle the cheeses and spices evenly over the dough.
  3. With a pizza cutter, cut the dough lengthwise into 12 long strips. Then cut those in half to make 24 strips.
  4. Do not separate the strips. Bake for 10-12 minutes or until light golden brown.
  5. Recut along each strip and remove from the cooking sheet.
  6. Serve sticks warm with marinara sauce.

  • 1 8 ounce package sliced pepperoni
  • 1 8 ounce package cream cheese

Instructions
  1. Preheat your oven to 350 degrees F.
  2. Take out the crescent rolls and separate into the individual triangles. Flatten each triangle and slice it so that it becomes three small triangles.
  3. Dice or chop the pepperoni into tiny, tiny pieces.
  4. Mix the pepperoni into the cream cheese, stir very well so all of the pepperoni pieces are mixed into the cream cheese.
  5. Take a little spoonful of your cream cheese/pepperoni mixture and put it in the middle of one of your crescent rolls triangles. Pinch up all of the sides around the filling.
  6. Repeat and place them all on a cookie sheet.
  7. Bake for 11 minutes. Let cool for a few minutes before serving!

Ingredients
  • 2 sheets puff pastry
  • 1 1/2 cups cranberry sauce
  • 1 10 oz triangle brie cheese
Instructions
  1. Cut each sheet of puff pastry into 12 squares and place inside mini muffins cups. (You may want to lightly spray to ensure they won't stick). Try not to leave any part of the muffin cup uncovered by dough or the cheese and cranberry will stick.

Quick and Easy 3 Ingredient Glazed Nuts
Ingredients
  • 1 1 ⁄2 cups whole almonds blanched (or cashews, peanuts, pecan halves, etc.)
  • 1 ⁄2 cup sugar
  • 2 teaspoons butter or 2 teaspoons margarine
Instructions
  1. In a heavy 8 inch skillet combine nuts, sugar and butter.
  2. Cook over med heat, stirring constantly until sugar is melted and golden in color and nuts are toasted (about 7 minutes).
  3. Spread nuts on a buttered cookie sheet or aluminum foil, separating nuts.
  4. Sprinkle lightly with salt.

Tips and Tidbits

Make a batch with a combination of whole pecans and whole almonds and add some apple pie spice to the sugar. It raises these nuts to a new level!

There is a difference in beet sugar and cane sugar! If you have trouble getting your sugar to melt add a tiny splash of water. That will do the trick and your nuts will come out perfectly.

Totally Addictive Cheese Bites
Ingredients
  • 2 lbs sharp cheddar cheese shredded
  • 2 cups unsalted butter softened
  • 5 cups all-purpose flour
  • 1 teaspoon salt
  • 1 ⁄2 teaspoon cayenne pepper
  • 1 8 ounce jarsmall pimento-stuffed green olives, well drained (optional)
  • raw pecan halves optional
Instructions
  1. Combine the cheese, butter, flour, salt, and cayenne in a large bowl and knead into a dough. Roll the dough into 1 inch balls and place on an un-greased baking sheet.
  2. If using olives, form each ball around 1 olive.
  3. If using pecans, press 1 pecan half onto each ball.
  4. You can bake them right now or freeze for later at this point.
For freezing:
  1. Place the cheese balls on trays in the freezer for 30 minutes until partially frozen. Remove from the freezer and place in freezer bags or a freezer container. Seal and freeze.
  2. You can bake them straight from the freezer.
For baking:
  1. Preheat your oven to 425°F. Place the cheese balls 3 inches apart on an un-greased baking sheet.
  2. Bake 15-17 minutes if frozen, 13-15 minutes if thawed.

Tips and Tidbits

If you like spicy you can quadruple the cayenne pepper the way I like. They’ll be nice and spicy. They are also very good with some finely diced jalapenos!

If you’re using pecans and/or olives you can alternatively dice them finely and incorporate into the dough.
