Smoked Ham Salad on Potato Coins is delicious and different. The potato coins make a fabulous base for the salad. They are so different from the usual, expected crackers or bread.

Smoked Ham Salad on Potato Coins

The salad is very nice! But I think the star of the show here are the Gruyere potato coins and they’re so easy!

Just slice peeled potatoes, toss with olive oil, top with the cheese and bake until crispy on the outside and creamy on the inside!

They make fabulous bases for things other than this particular salad. But this smoked ham salad is delicious and the perfect topper for the potato coins!

Smoked Ham Salad on Potato Coins
Ingredients
  • 2 long thin potatoes cut into 1/8 inch thick slices
  • 1 tablespoon olive oil
  • salt & freshly ground black pepper
  • 1 cup shredded gruyere cheese about 4 ounces
  • 1/2 pound lean smoked ham finely chopped
  • 3 tablespoons mayonnaise
  • 1 scallion finely chopped
  • 1 tablespoon finely chopped cornichon
  • 1 tablespoon finely chopped capers
  • 1 teaspoon finely chopped tarragon
  • 2 teaspoons Dijon mustard
Instructions
  1. Preheat the oven to 350° and line a baking sheet with parchment paper or foil.
  2. Using a 2-inch round biscuit cutter, cut the potato slices into rounds.
  3. In a bowl, toss the potatoes with the olive oil and arrange them in a single layer on the baking sheet.
  4. Season lightly with salt and pepper, then sprinkle with the cheese.
  5. Bake the potato rounds for about 45 minutes, or until deep golden; let cool. Transfer the potato coins to paper towels.
  6. In a small bowl, combine the ham with the mayonnaise, scallion, Cornichons, capers, tarragon and mustard.
  7. Season with salt and pepper.
  8. Spoon the ham salad onto the potato coins and serve.

I have made these several times and everyone always loves them.

Ingredients
Salsa Verde
  • 2 tomatillos diced
  • 4 ounces mild green chilies drained and diced
  • 1 green onion minced
  • 2 tablespoons fresh cilantro minced
  • 1 1/4 teaspoon granulated sugar
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 pinch ground black pepper
For Tomato Salsa
  • 1 medium tomatoes diced
  • 1 tablespoon minced Spanish onion
  • 1 tablespoon fresh cilantro minced
  • 1/4 teaspoon lime juice
  • 1/2 small jalapeno seeded and minced
  • 1 dash salt
  • 1 dash ground black pepper
For Southwestern Sauce
  • 1/2 cup mayonnaise
  • 1 teaspoon white vinegar
  • 1 teaspoon water
  • 3/4 teaspoon granulated sugar
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1 pinch cayenne pepper
  • 1 pinch onion powder
  • 1 dash salt
  • 1 dash garlic powder
For Cakes
  • 1 1/2 cups frozen sweet corn
  • 1/2 cup butter softened
  • 3 tablespoons sugar
  • 1 pinch salt
  • 1/2 cup corn masa harina flour corn flour
  • 2 tablespoons all-purpose flour
For Garnish
  • 1/4 cup sour cream
  • 1/2 avocado diced
  • 2 tablespoons fresh cilantro chopped
Instructions
  1. Prepare salsa verde by combining all prepared ingredients. Chill.
  2. Prepare tomato salsa by combining all prepared ingredients. Chill.
  3. Prepare southwestern sauce by combining all ingredients. Chill.
  4. Preheat oven to 400°F.
  5. Prepare the tamale cakes by chopping 1 cup of the frozen corn in a food processor until it's coarsely pureed. Combine the pureed corn with softened butter, sugar, and salt. Blend well.
  6. Add the masa and flour and blend well. Mix in the remaining 1/2 cup of frozen corn kernels by hand.
  7. Measure 1/2 cup portions of the mixture and form it into 3" wide patties with your hands. Arrange the patties on a baking sheet and bake for 25 to 30 minutes or until the cakes are browned on the bottom.
  8. Carefully flip all the cakes with a spatula and bake for an additional 5 to 7 minutes or until other side is browned.
  9. Assembly: Place all three cakes on a warmed serving platter. Dollop each with one of the three sauces.
  10. Garnish with diced avocado, cilantro and a dollop of sour cream.

Ingredients
Wasabi Cucumber Ranch Dip
  • 1/2 cup bottled ranch dressing Hidden Valley is best
  • 1/4 cup cucumber peeled, seeded, minced
  • 1 tablespoon milk
  • 1 1/2 teaspoons prepared horseradish
  • 1 teaspoon cider vinegar
  • 1 teaspoon wasabi powder
  • 1/8 teaspoon salt
  • 1 pinch cayenne pepper
Green Beans
  • 1 egg beaten
  • 1 cup milk
  • 4 cups vegetable broth or chicken broth
  • 6 -8 ounces fresh green beans
  • 1 cup flour
  • 1 cup plain breadcrumbs or 1 cup seasoned dry bread crumb
  • 3/4 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/9 teaspoon garlic powder
  • vegetable shortening for frying or vegetable oil
Instructions
  1. Combine the dip ingredients in a blender. Blend until smooth. Place in a bowl; cover and chill until ready to use. The dip will thicken as it chills.

  2. Place the beans in the broth. Bring to a boil and cook 15 minutes, then place in cold water to stop the cooking process.

  3. Mix the beaten egg with the milk in a shallow bowl.

  4. Measure 1 cup of flour into another shallow bowl.

  5. Combine the bread crumbs, 3/4 teaspoons salt, black pepper, onion powder, and garlic powder into a third bowl.

  6. Take a handful of beans out of the water and shake off excess liquid. Coat the beans with the flour, shaking to remove excess flour.

  7. Dip the beans, one at a time, into egg/milk mixture, then dip in breadcrumb mixture. Place the beans on a plate until all are coated.

  8. Heat the shortening or oil to 350°F in a heavy skillet(or use a deep fryer). Use enough to cover the beans, about 1 1/2 inches.

  9. Fry until golden brown, about 1 1/2 minutes.

  10. Drain on paper towels.

Recipe Notes

To serve, place on a large platter and serve with the wasabi cucumber ranch dip.

Parmesan Chips – Low Carb and Delicious

Parmesan Chips are a great low-carb snack that is just sooo very easy to make. I like them on a Caesar salad, or just to nibble on their own. Great football watching snacks!

 

I’ve made these with Parmesan and Asiago cheese both equally good.

I haven’t tried it yet but I think it would be nice to add some chili powder or cumin to these. Next time I make them I’ll try that.

This Frito Lay Bean Dip Copycat is the recipe I came up with because I love Frito Lay bean dip but hate that the stuff is so expensive!

 

Tired of paying the high price I decided to try and make my own!

I’m not going to say that this was as good as Lays…

…because it’s better! OMG! This is a perfect clone.

Really, I’d have to taste them side by side to try to tell the difference but that won’t happen because I won’t buy the overpriced Frito Lay dip anymore.

  • 1 15 ounce can refried beans
  • 5 slices bottled jalapenos nacho slices
  • 1 tablespoon brine from bottled jalapeno slices
  • 1/2 teaspoon salt
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
Instructions
  1. Combine the refried beans with the other ingredients in a food processor. Puree ingredients on high speed until smooth.
  2. Cover and chill for at least an hour before serving.
Recipe Notes

A great use for this other than dip is to buy one of the hard/soft taco kits. Spread a tablespoon or more of this dip over the soft taco then using the adhesive quality of the dip wrap it around the crunchy taco and then fill as usual.

I started making Alton Brown’s Perfect Pot Stickers after I saw Alton’s show and they are incredible! Not difficult to make and a wonderful taste!

 

Pot stickers are so much easier to make than I thought they would be.

I have also prepared the filling and stuffed the wontons, then flash froze them on a cookie sheet, and bag them when frozen. Just take them out 30 minutes before planning to cook them, and they are great.

  • 1/2 pound ground pork
  • 1/4 cup finely chopped scallion
  • 2 tablespoons finely chopped red bell peppers
  • 1 egg lightly beaten
  • 2 teaspoons ketchup
  • 1 teaspoon yellow mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon light brown sugar
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 35 -40 small wonton wrappers
  • water for sealing wontons
  • 3 -4 tablespoons vegetable oil for frying
  • 1 1/3 cups chicken stock divided
Instructions
  1. Preheat oven to 200 degrees F.
  2. Combine the first 11 ingredients in a medium-size mixing bowl (pork through cayenne). Set aside.
  3. To form the dumplings, remove 1 wonton wrapper from the package, covering the others with a damp cloth. Brush 2 of the edges of the wrapper lightly with water. Place 1/2 rounded teaspoon of the pork mixture in the center of the wrapper. Fold over, seal edges, and shape as desired. Set on a sheet pan and cover with a damp cloth. Repeat procedure until all of the filling is gone.
  4. Heat a 12-inch saute pan over medium heat. Brush with vegetable oil once hot. Add 8 to 10 potstickers at a time to the pan and cook for 2 minutes, without touching. Once the 2 minutes are up, gently add 1/3 cup chicken stock to the pan, turn the heat down to low, cover, and cook for another 2 minutes.
  5. Remove wontons to a heatproof platter and place in the warm oven. Clean the pan in between batches by pouring in water and allowing the pan to deglaze.
  6. Repeat until all the wontons are cooked. Serve immediately.

  • 1/4 cup butter melted
  • 1 1 1/4 ounce package chili seasoning mix

  1. Mix the nuts, butter and seasoning well. Place in the crock pot on low for about 2 hours.
  2. Remove the lid and turn heat to high and cook for about 10 more minutes or so.
  3. Can eat warm or put into nut dishes.

Ingredients
  • 12 shrimp Jumbo sized, peeled, deveined, & tails intact
  • 2 tablespoons olive oil
  • 2 garlic cloves crushed with the side of a knife
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon steak seasoning Montreal Seasoning by McCormick is recommended
  • 1 teaspoon lemon zest of
  • 2 teaspoons lemon juice
  • 1 tablespoon fresh parsley chopped
Instructions
  1. Heat a large skillet over medium high heat. Add the olive oil, garlic, red pepper flakes, and shrimp. Season with grill seasoning or salt & pepper.
  2. Cook the shrimp 3 minutes or until just pink. Toss with lemon zest, juice, & chopped parsley.
  3. Remove shrimp to a serving platter, leaving the garlic cloves in the pan.
