Mom’s potato salad was delicious but it wasn’t Richmond Potato Salad. Mom didn’t know the secret to this recipe or she would have used it too.

Richmond Potato Salad

This is the best potato salad I have had or made for that matter. The trick to the entire recipe is the addition of egg yolks into the mayonnaise and mixing will.

So simple but what a difference.

Blissful in my book. Now my go-to recipe!!

Richmond Potato Salad
Ingredients
  • 3 hard cooked egg yolks
  • 3/4 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 3 tablespoons sweet pickle juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground celery seed
  • 3 teaspoons sugar
  • 1 small onion chopped
  • 2 celery ribs sliced thinly
  • 5 medium red potatoes boiled, peeled, cubed, slightly mashed
Instructions
  1. In large bowl, mash the egg yolks and incorporate into the mayonnaise. Add the mustard, sweet pickle juice, salt, pepper, ground celery seeds and sugar. Add the onions, celery and potatoes; mix to the desired consistency.

My Mom Didn’t Know About the Special Ingredient in This Cucumber Salad

Cucumber-Salad

A great spring recipe that my mom made but she didn’t include the special ingredient that’s in this recipe. You can’t believe what a difference it makes!

Excellent, a very refreshing salad.

Nutmeg is the twist that that makes this special. This cucumber salad is oh so good! I actually ate some of this for breakfast.

It’s Spring Special Cucumber Salad

Ingredients

1 English cucumber, thinly sliced
1⁄2 cup sliced onion
3 -4 tablespoons salt
1⁄2 cup vinegar
1⁄4 cup oil
1 tablespoon sugar
nutmeg
pepper

Directions

Sprinkle the salt over the cucumber slices and allow to sit for several hours, shaking occasionally.

Wash the salt off the cucumbers.

In a separate bowl, mix the oil, vinegar, sugar, salt (to taste), and pepper (to taste). Sprinkle with nutmeg.

Add the cucumber and onion slices and mix well.

Chill thoroughly before serving. The longer it sits the better it tastes!

Almond Orange Salad

This Almond Orange Salad is my sister-in-law’s recipe — always in demand at family potlucks. It’s really a very good salad. I loved the buttery almonds – they are my favorite part.

Almond Orange Salad

Ingredients

1⁄2 cup canola oil
3 tablespoons red wine vinegar
1 tablespoon freshly squeezed lemon juice
1 tablespoon white sugar
1⁄2 teaspoon salt
1⁄2 teaspoon dry mustard
1⁄2 teaspoon onion flakes
1 can mandarin oranges in juice, well drained
2 tablespoons butter
2 tablespoons brown sugar
1⁄2 cup slivered almonds
1 head romaine lettuce, washed and dried

Directions

Tear the lettuce into bite-size pieces and set aside.

Combine the dressing ingredients (oil through to dried onion flakes) and whisk well– you can do this in your processor if you wish.

In a nonstick frying pan, melt the butter and add the brown sugar– over low or med-low heat. Add the slivered almonds and, stirring constantly, allow almonds to candy.

Remove and cool.

Shortly before serving, toss the lettuce with the dressing, drained oranges and candied almonds.

Low Calorie Low Fat Broccoli Salad
Ingredients
  • 4 cups broccoli florets or 4 cups Broccolini
  • 1/4 cup red onion minced
  • 2 tablespoons splenda artificial sweetener Granulated
  • 2 tablespoons cider vinegar
  • 2 tablespoons light mayonnaise
  • 2 tablespoons sunflower seeds roasted and salted
  • 3 tablespoons seedless raisins
Instructions
  1. Discard the broccoli stems and finely chop the florets or broccolini. Set aside.
  2. In a medium mixing bowl, whisk the Splenda, vinegar and mayonnaise toghether until it is an even, smooth consistency.
  3. Stir in the broccoli and the remaining ingredients. Toss until well coated.
  4. Chill until ready to serve.


Serve it up with Lemon Chicken and Balsamic Green Beans!

  • 1 14 1/2 oz can whole tomatoes
  • 1 sleeve saltine crackers crushed (leave a bit chunky)
  • 4 tablespoons mayonnaise
  • 6 large eggs hard-boiled, chopped
  • 1 medium onion chopped
  • 1 medium bell pepper chopped
  • salt and pepper
Instructions
  1. Pour the tomatoes (including the juice) in a large bowl. Using your hands, squeeze each tomato through your fingers (be careful you don't squirt the juice on you -- I poke each one good with my fingers gently before I commence squeezing) until they look crushed but still chunky.
  2. To the tomatoes, add remaining ingredients and stir. If appears to dry for you, add a little more mayo.
  3. Salt and pepper to taste.

 

Tips and Tidbits

Yes, you can buy already crushed tomatoes but I don’t like their texture — almost like a sauce instead of crushed tomatoes.

Cracker Salad tastes just as great either freshly made or after being refrigerated.

Ingredients
  • 2 medium bananas diced
  • 2 medium apples diced
  • 1 lemon juice of
  • 1 20 ounce can pineapple tidbits, drained, juice reserved
  • 2 cups sliced strawberries
  • 2 cups grapes
  • 1/4 cup pecans chopped
  • 1 1/2 ounce box sugar-free instant vanilla pudding mix
  • 1/2 cup water
Instructions
  1. Combine the bananas, apples and lemon juice in large mixing bowl. Toss until evenly coated.
  2. Add the pineapple, strawberries, grapes and pecans.
  3. In small mixing bowl, combine the pudding mix, water and pineapple juice with a wire whisk until smooth.
  4. Add pudding mixture to fruit. Mix gently until throughly coated.
  5. Refrigerate until ready to serve.

  • 2 cans yellow kernel corn well drained
  • 1/2 red bell pepper sliced and chopped
  • 1/2 green bell pepper sliced and chopped
  • 1/2 purple onion chopped
  • 1 cup mayonnaise

  • 5 ounces of chili cheese flavored Frito corn chips

Bacon Broccoli Salad
Ingredients
  • 1 -2 head fresh broccoli do not use frozen!
  • 1/2 cup red onion chopped
  • 1/2 lb bacon
  • 2 1/2 tablespoons vinegar
  • 1 cup Hellmann's mayonnaise
  • 1/3 cup sugar
  • 1 1/2 cups grated mozzarella cheese
Instructions
  1. Cook bacon (You can make it easy and buy the already cooked bacon in the refrigerator section) and crumble into pieces.
  2. Chop up top of broccoli into bite size pieces.
  3. Mix the broccoli, onions, bacon and mozzarella in large bowl.
  4. In separate bowl combine vinegar, sugar and mayo.
  5. Pour over broccoli mixture and toss to coat.
  6. Best if made a day ahead.

Some people say they just don’t like broccoli. But Before you decide you won’t like this broccoli salad, try it. It’s easy to make.

 

And like they say nothing ventured, nothing gained.

There’s something about this salad recipe that’s more than the sum of its parts. Even those people that say they don’t even like broccoli love this stuff.

I think it has to do with the combination of ingredients. You’ve got sweet and sour with the sugar and vinegar. And you have texture variations with the chewiness of the raisins, the crunch of the almonds, and the crispiness of the broccoli and onion.

Don’t forget the bacon. Everything tastes better with bacon!!!

Altogether it’s a real crowd-pleasing salad that will be a huge hit, not only at home but as a pot luck dinner dish.

This is a good ‘base’ recipe to which you can add many things. In the past, I have added seedless purple grapes, diced apples, and varied the nuts with chopped walnuts or pecans.

Reduce the mayo by about a third and replace the sugar with Splenda and you have a lower calorie version.

Adding some chopped raw cauliflower makes this salad even better.
