Ingredients
  • 4 ounces uncooked pasta
  • 1/2 pound smoked sausage cut into 1/2 inch slices
  • 2 cups fresh sliced mushrooms
  • 2 cloves garlic minced
  • 1 1/2 teaspoons dried basil
  • 1 tablespoon olive oil
  • 2 cups julienned seeded plum tomatoes
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
Instructions
  1. Cook the pasta.
  2. On another burner, in a large non-stick skillet saute the sausage, mushrooms, garlic, and basil in oil until the mushrooms are tender.
  3. Drain the pasta and add to the sausage mixture. Add the tomatoes, salt, and pepper. Toss gently and heat through.

In my opinion, you can never have too many mac and cheese recipes. This Macaroni with Fontina and Gorgonzola Cheese is quicker than any other homemade Mac-n-cheese I’ve made. Just cook the noodles and stir everything together, all stove top.

Macaroni with Fontina and Gorgonzola Cheese
Ingredients
  • 1 lb elbow macaroni uncooked
  • 1/4 pound Fontina cheese shredded
  • 1/4 pound Gorgonzola crumbled
  • 2 tablespoons butter
  • 1/2 cup half-and-half
  • fresh ground black pepper
  • 1/2 cup fresh chives Chopped
Instructions
  1. In a medium pot, bring 4 quarts of water to a boil. Add a pinch of salt and the macaroni. Cook until tender, about 8 to 10 minutes. In a colander, drain the macaroni and return it to the pot.
  2. Fold in the cheese, butter and half-and-half. Season with the pepper. Warm through.
  3. Garnish with chopped chives.

Greek Penne Pasta – Another great pasta recipe I just had to add to my collection. The toasted pine nuts put this over the top. Delicious, easy and quick to make!

Great for a busy day. Add Greek seasoned chicken for a delicious meal!

Whats not to like? It’s quick, inexpensive, healthful and tastes great. This will be made often in my house.

Greek Penne Pasta
Ingredients
  • 12 ounces uncooked penne
  • 1 teaspoon olive oil
  • 2/3 ounce pine nuts about 2 tbsp
  • 1 1/2 teaspoons minced garlic
  • 10 ounces frozen chopped spinach thawed (I used freshly cooked spinach and it was just fine)
  • 1 lb plum tomato chopped
  • 4 ounces feta cheese crumbled
  • 6 medium olives black,pitted and chopped (I prefer the green Greek or Italian olives)
Instructions
  1. Cook the pasta according to the package directions (without butter or oil), drain and set aside.
  2. Coat a large skillet with cooking spray. Add the olive oil and heat over medium-high heat until the oil sizzles. Add the pine nuts and garlic. Cook and stir until pine nuts are golden brown, about 3 minutes.
  3. Stir in the spinach and tomatoes and cook until heated through, stirring occasionally, about 3 minutes.
  4. Add the spinach mixture to the pasta and toss until combined.
  5. Serve the pasta sprinkled with feta cheese and black or green olives.

Garlic Shrimp Pasta – Quick & Easy

This Garlic Shrimp Pasta is great to make on a weeknight. It’s so quick, easy and delicious! It’s nice that the cook is in control of the outcome of this recipe.

You can do so many different things to create a variety of dishes.

Add some lemon juice to the shrimp just before tossing in the pasta and toss in a good amount of Parmesan cheese, allowing it to melt in before serving.

You can also add a little wine and Alfredo sauce, plus some chives and mushrooms.

For seasonings in addition to salt, pepper and Italian seasonings, add in some McCormick’s Perfect Pinch “Roasted Garlic & Bell Pepper” and “Lemon Herb.”

Most anything you do it’ll come out fantastic!

Pasta tossed with a garlicy shrimp and butter sauce!

Ingredients
  • 1 lb medium shrimp deveined and tails removed
  • 1 lb spaghetti noodles more or less, depending on family size
  • 6 -8 garlic cloves according to personal taste, minced
  • 1/4 cup butter
  • olive oil 3 drizzles
  • Italian seasoning
  • fresh ground pepper
  • red pepper flakes
  • salt
  • herbs according to taste
Instructions
  1. Boil the pasta in the water until tender, save 1 cup of pasta water for use later. I always put some oil, salt, and fresh herbs in with my pasta when I boil it. Drain and set aside when done.
  2. While the pasta is boiling, wash the shrimp. Melt the butter over medium heat. Add shrimp and let it cook until a little pink and starting to curl. Then add the garlic.
  3. Cook 5-7 min., add oil. Continue to stir till shrimp is pink and curled.
  4. Add the pasta to the skillet. Add the seasonings. Add just enough saved pasta water till it is not dry but not swimming in liquid either. Depending on amount of pasta this requires 1/2 the cup or all of it. Start with adding 1/4 of it then work up from there.
  5. Keep tossing all the ingredients around in the skillet until all is incorporated and hot. Enjoy!

Creamy Garlic Penne Pasta

This Creamy Garlic Penne Pasta is a delicious, super quick side or main dish. Believe it or not it came from the back of a pasta box and it is yummy!

This recipe is garlicky and so creamy and sooooo easy to make. Perfect for when you get home from work, are incredibly tired and just want a filling meal.

This recipe works perfectly because it really doesn’t take much more than 15 minutes and tastes wonderful.

Try adding some frozen peas and sliced mushrooms, but the recipe is great as is. Some stir-fried sliced chicken sauteed in garlic would be a great addition too.

Creamy Garlic Penne Pasta
Ingredients
  • 1 1 lb box penne or penne rigate, cooked as directed, drained and kept hot
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 garlic cloves minced
  • 2 tablespoons flour
  • 3/4 cup chicken broth or 3/4 cup beef broth
  • 3/4 cup milk
  • 2 teaspoons parsley flakes
  • salt and pepper to taste
  • 1/3 cup grated Parmesan cheese
Instructions
  1. Melt the butter and add garlic in a medium sauce pan. Cook over medium for 1 minute. Add the flour and cook 1 minute, stirring constantly.
  2. Stir in the broth and milk and cook, stirring frequently, until the sauce boils and thickens. Add the parsley, salt, pepper and cheese. Stir until the cheese is melted.
  3. Toss the hot pasta with the sauce and serve immediately.

Cajun Bean and Pasta Stew

This hardy Cajun Bean and Pasta Stew stew recipe is something that I feel would definitely be served in Cajun country. Spicy with lots of herby flavors and DELISH!

That’s Cajun for sure! It’s quick, easy and most items can be found on your pantry shelf.

You can substitute beef or chicken broth for the vegetable broth for a more hearty stew.

Throw in a can of creamed corn to make a complete protein with the beans. Or some Andouille or kielbasa sausage to make it even more Cajun.

Cajun for sure. Love the slight hint of heat from the green chiles.

Ingredients
  • 1 16 ounce can black beans, drained
  • 1 16 ounce can red beans, drained
  • 1 14 ounce can diced tomatoes with green chilies
  • 3/4 cup small shell pasta uncooked
  • 1/4 cup onion chopped
  • 1 teaspoon dried basil leaves
  • 1 teaspoon Worcestershire sauce
  • 1 garlic clove finely chopped
  • 1 -14 ounce vegetable broth
  • 1/4 cup bell pepper chopped
  • 1/4 cup celery chopped
  • 1 teaspoon cajun seasoning
Instructions
  1. Mix all the ingredients in a 2 quart saucepan. Heat to boiling, stirring occasionally. Reduce the heat and cover. Simmer for 15 minutes until the pasta is tender.

Mom’s Homemade Italian Hamburger Helper

My mother never heard of hamburger helper I’m sure. But she made Homemade Italian Hamburger Helper often and us kids just loved it.

 

I don’t think she even had a name for it. I’m sure she just had quick and easy on her mind but we thought it was great.

Hers was healthier too. It didn’t have all the unhealthy additives like partially hydrogenated oils. And when it comes to taste the box mixes lag way behind Moms.

This is not her dish exactly because it uses jarred sauce but the taste is very familiar.

Company Turkey Lasagna is an excellent dish to use up some of that leftover turkey you always have from Thanksgiving or Christmas. Much better than your standard leftover turkey sammies.

The white sauce is very hearty, compliments the red sauce nicely, and they blend perfectly with the turkey and veggies. This is definitely one of the best lasagna recipes I’ve ever tried.

Company Turkey Lasagna
Ingredients
  • 9 lasagna noodles cooked
  • 2 cups mozzarella cheese grated
Tomato Sauce
  • 1/4 cup butter
  • 2 cups sliced mushrooms
  • 1 onion diced
  • 4 cups tomato sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
Broccoli Sauce
  • 1/3 cup butter
  • 1 cup chicken broth
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cups milk
  • 2 cups cooked turkey
  • 2 cups chopped fresh broccoli
  • 1/2 cup Parmesan cheese
Instructions
  1. For The Tomato Sauce: Melt the butter in a sauce pan and saute the mushrooms and onions until slightly tender. Add the rest of the tomato sauce ingredients and simmer slowly for about 10 minutes so the flavors blend.
  2. For The Broccoli Sauce: Melt the butter in a sauce pan and add the flour salt and pepper. Stir constantly until the mixture is well combined.
  3. Add the chicken broth and continue to stir. Pour in the milk and add the broccoli. Cook for about 5 minutes and then add the turkey. Simmer for about 5 minutes, remove from the heat and stir in the Parmesan cheese.
  4. Lasagna Assembly: Place 1/2 of the tomato sauce mixture on the bottom of a 9x13 inch pan. Top with 3 noodles.
  5. Add 1/2 of the broccoli sauce followed by 3 more noodles. Add the rest of the broccoli sauce, add the last 3 noodles.
  6. Top with the last of the tomato sauce and finish with the mozzarella cheese.
  7. Bake at 350 degrees for 30 to 40 minutes.

Ingredients
  • 1 egg lightly beaten
  • 1 ⁄4 cup prepared Italian salad dressing
  • 1 1 ⁄2 cups Italian bread crumbs
  • 2 tablespoons fresh parsley minced
  • 2 garlic cloves minced
  • 1 ⁄2 teaspoon dried oregano
  • 1 ⁄2 teaspoon pepper
  • 1 ⁄4 teaspoon salt
  • 1 ⁄2 lb ground pork
  • 1 ⁄2 lb ground sirloin
  • 3 ounces fresh mozzarella cheese
  • 2 tablespoons vegetable oil
  • 1 26 ounce jar marinara sauce
  • hot cooked pasta
Instructions
  1. In a large bowl, combine the first eight ingredients. Crumble the pork and beef over the mixture and mix well.
  2. Cut the mozzarella into 18 1/2-inch cubes. Divide the meat mixture into 18 portions; shape each around a cheese cube.
  3. In a large skillet, cook the meatballs in oil in batches until no pink remains; drain.
  4. In a large saucepan, heat the marinara sauce; add the meatballs and heat through.
  5. Serve over pasta or as meatball sandwiches.

Grannies Mac and Cheese – Celebration Time

Grannies Mac and Cheese is pure comfort food. I remember her serving it often but I could always count on it being served at any holiday celebration.

I make it often and I don’t change a thing.

If you do want to kick it up a notch I would suggest adding some diced jalapenos and pancetta.

  • 3 tablespoons flour
  • 2 cups milk

  1. Preheat your oven to 325°F.
  2. Cook the macaroni in boiling salted water until tender, drain and rinse.
  3. Melt the butter and add the flour. Cook for a minute or two over low heat and then add warmed milk and whisk till smooth. Let thicken over heat and then add 2/3 of the cheese and stir until melted.

  4. Pour the entire combination over the cooked macaroni in a greased baking dish and sprinkle with remaining cheese over the top and bake for 30 minutes.
