This Strawberry Cream Cheese Bread is probably the best quick bread recipe I’ve ever made! My whole family loves it.

Strawberry Cream Cheese Bread
Ingredients
  • 1/2 cup butter softened
  • 1 cup sugar
  • 1 3 ounce cream cheese, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk half 'n half
  • 1 1/2 cups strawberries chopped
  • 1/2 cup finely chopped pecans optional
Instructions
  1. With and electric mixer cream the butter, sugar and cream cheese until fluffy. Add the eggs one at a time. Mix in the vanilla.
  2. In separate bowl, mix the flour, baking powder, baking soda and salt. Blend the flour mixture with the butter mixture just until blended. Add half 'n half and only stir just to blend -- do not overstir!
  3. Drain the strawberries and blot dry. Carefully just fold in the strawberries and nuts. The dough mixture will be thick.
  4. Grease and flour a 9x5 inch loaf pan. Bake in a 350 degree oven for 50 to 60 minutes. Let the bread mellow for one day and then serve.

Delicious, delicious, delicious. Outstanding shortcake! This dessert is so easy to put together and so easy to devour, too! It hardly takes any time at all. Everybody ate it up.

The biscuit is perfectly crispy on the outside and tender on the inside, with an amazing butter flavor.

It sops up the strawberry juice perfectly, while still holding its shape and never gets mushy. I love strawberry shortcake and this one is a winner in my book. My friends were in heaven.

Easy & Tasty Strawberry Shortcake

Ingredients

For the strawberries

1 1⁄2 lbs strawberries, stemmed and quartered
3 tablespoons sugar

For the cake

2 cups all-purpose flour
2 teaspoons baking powder
1⁄4 teaspoon baking soda
2 tablespoons sugar
3⁄4 teaspoon salt
1 1⁄2 cups heavy cream

For the whipped cream

1 1⁄2 cups heavy cream, chilled
3 tablespoons sugar
1 1⁄2 teaspoons vanilla extract
1 teaspoon freshly grated lemon zest

Directions

Mix the strawberries with 3 tablespoons of sugar and refrigerate while the juices develop, at least 30 minutes.

Preheat the oven to 400 degrees F.

Sift together the flour, baking powder, baking soda, remaining 2 tablespoons sugar, and salt in a medium bowl. Add the heavy cream and mix until just combined. Place the mixture in an ungreased 8-inch square pan and bake until golden, 18 to 20 minutes.

Place a metal bowl and beaters in the freezer during the shortcake cooking time.

Remove the shortcake from the pan and place on a rack to cool slightly. Cut into 6 pieces and split each piece in half horizontally.

Mix all the whipped cream ingredients in the metal bowl and whip with the metal beaters about 1 1/2 to 2 minutes.

Spoon some of the strawberries with their juice onto each shortcake bottom. Top with a generous dollop of whipped cream and then the shortcake top. Spoon more strawberries over the top and serve.

Orange Cinnamon Biscuits – Wonderful Combination

These Orange Cinnamon Biscuits make up in no time and they smell so good while baking. The flavor of the orange and cinnamon are a perfect combination.

 

This is a variation of My New Go-To Cinnamon Biscuits and they are not really like a biscuit at all, but more of an orangy cinnamon roll.

Glaze
  • 1 cup powdered sugar
  • 1 -2 tablespoons orange juice
  • 1 teaspoon orange zest
Instructions
  1. Combine the flour, baking powder and salt; cut in shortening.
  2. Add 1-2 teaspoons orange zest to milk, stir.
  3. Stir the milk mixture into the flour mixture with a fork just until dough leaves sides of the bowl, the dough might be slightly sticky.
  4. Roll the dough out, on a lightly floured surface, into a 1/4 inch thick rectangle. Brush the top with butter (I prefer to use soft butter and spread it).
  5. Combine 1 teaspoon orange zest and sugar, stir to distribute the zest, mix in the cinnamon; sprinkle evenly over dough.
  6. Roll up, starting on the long side. Cut into 1/2 inch thick rounds.
  7. Place the rounds, with sides just touching, in greased 9" round pan.
  8. Bake at 425°F for 18-20 minutes or until golden brown.
  9. Remove from the oven, cool for about 10 minutes and drizzle with glaze, serve warm.

My New Go-To Cinnamon Biscuits

I’ve now found my new Go-To Cinnamon Biscuits recipe! I made these for breakfast for some friends and then brought the extras to the neighbors. Everyone raved about them.

Cinnamon Biscuits

My neighbor thought it was an “heirloom” recipe!! So easy to make.

This is basically a kicked up biscuit dough. But you would think they are fancy cinnamon rolls from a high class bakery.

A good variation of this recipe is Cinnamon Orange  Biscuits. Delicious!

Definitely a keeper!

Ingredients
  • 2 cups flour

Cheesecake Factory Cheesecake – Unusual Crust!

This Cheesecake Factory Cheesecake is the best cheesecake I have ever made. It is so creamy and it tastes amazing! This cheesecake is out of this world!

I have had cheesecake factory cheesecake several times and I’ve made this recipe several times also. This recipe is every bit as good if not better than the real thing.

I think you will find the nut crust quite unusual. Sometimes I double the crust portion of the recipe just so I can have a thicker crust.

Cheesecake Factory Cheesecake
Ingredients
Crust
  • 1/4 cup finely chopped pecans
  • 1/4 cup finely chopped almonds
  • 1/4 cup finely chopped walnuts
  • 3/4 cup finely chopped vanilla wafer
  • 2 tablespoons melted butter
Filling
  • 1 1/2 pounds cream cheese
  • 1 1/3 cups sugar
  • 5 large eggs
  • 16 ounces sour cream
  • 1/4 cup flour
  • 2 teaspoons vanilla extract
  • 2 teaspoons lemon juice
Instructions
Crust:
  1. Mix all the nuts and vanilla wafer crumbs with melted butter and press into a 9 inch buttered spring form pan, trying to line the sides as much as possible about 1 1/2" up the sides of the pan, set aside.
Cheesecake:
  1. All above ingredients should be at room temperature before your begin. Start by beating the cream cheese until light and fluffy. Keep the mixer on a low setting throughout the beating and mixing process.
  2. Add the sugar a little at a time and continue beating until creamy. Add one egg at a time and beat after each egg. When eggs have been mixed into the cream cheese add flour, vanilla and lemon juice, mix well. Add the sour cream last and beat well.
  3. Pour cream cheese into the spring pan.
  4. Place on the top rack in the middle of a 325 degrees preheated oven for one hour and 15 minutes.
  5. When time is up, turn oven off, prop open oven door and leave in oven for one hour. After one hour, remove from oven.
  6. Let cool enough before the cheesecake is put into the refrigerator for 24 hours. A cheesecake should season. The wait is worth it. The flavor ripens and becomes enriched.

Mom’s Special Chocolate Cake. So nice to visit my childhood memories! My mom used to make this all of the time! She would just use a double boiler frosting instead of the cream cheese.

Mom’s Special Chocolate Cake with With a Surprise Ingredient

Ingredients

2⁄3 cup margarine
1 1⁄2 cups sugar
3 eggs
2 1⁄4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1⁄2 cup cocoa
1⁄2 teaspoon salt
1 cup water
1 tablespoon vanilla
2⁄3 cup sauerkraut, well drained and finely chopped

Frosting

1⁄2 cup margarine
6 ounces Philadelphia Cream Cheese
2 1⁄2 cups powdered sugar
1⁄4 cup cocoa
1 teaspoon vanilla

Directions

Cake:

Cream the margarine and sugar well. Add the eggs, one at a time, beating well.

Sift the dry ingredients. Add to the first mixture alternating with the cup of water. Add vanilla. When well mixed, add sauerkraut.

Bake at 350 degrees in desired pan.

Frosting:

Mix ingredients well. Spread over cooled cake.

  2. For the frosting, melt the butter in a saucepan on medium heat. Stir in the sugar and milk and bring to a boil, stirring frequently. Boil and stir 1 minute, then remove from heat.
  3. Stir in the chocolate chips and marshmallows until melted. Add the vanilla and quickly spread over brownies.
  4. Sprinkle with walnuts if desired.

Impossible Coconut Pie – It Really Works

This Impossible Coconut Pie is well named. The first time I saw this I thought, how can this turn out as it claims, but it does!!

The flour will settle to the bottom to form a crust, the coconut rises to the top and forms the topping, the center is an egg custard filling.

Impossible! Nope. Works every time plus it’s delicious.

No-Bake Chocolate Peanut Butter Cornflakes Bar

For some reason, guys always seem to go gah-gah over these No-Bake Chocolate Peanut Butter Cornflakes Bar. They are very easy to make, and it’s a great way to use up the end of the corn flakes.

I also like this recipe because it uses fewer ingredients than all the other ones I have seen.

They are very tasty, very easy, and very cost efficient. Tastes just like a Crispy Crunch bar!!!

No-Bake Chocolate Peanut Butter Cornflakes Bars
Ingredients
  • 3 cups corn flakes crushed
  • 1 cup crunchy peanut butter
  • 1/2 cup sugar
  • 1/2 cup white corn syrup
  • 6 ounces chocolate chips
Instructions
  1. Heat the peanut butter, sugar and corn syrup over low heat to melt. Stir in the cereal.
  2. Pat into a 8x8 lightly greased pan. (I line my pan with foil and then lightly spray it. When it is time to cut them, the foil lifts right out.).
  3. Melt the chocolate chips over low heat or in the microwave and spread over the top. Cool until firm.

Peach Brown-Sugar Pie

This Peach Brown-Sugar Pie is great recipe that gives a little “oomph” to the standard peach pie. The almond and lemon enhance the flavor of the peaches and the light cinnamon flavor gives it a comfort food feeling.

This is a great recipe as is but I do like to brush the top crust with an egg wash and sprinkle ever so slightly with sugar before cutting the vents for a beautiful presentation and lovely browned crust.

Peach Brown-Sugar Pie
Ingredients
  • 2 9 inch pie crusts
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 3 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 5 cups fresh peaches peeled and sliced
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract
  • 2 tablespoons butter
Instructions
  1. Preheat your oven to 425.
  2. Stir the dry ingredients together.
  3. Sprinkle the peaches with lemon juice and almond extract. Add the dry ingredients and toss gently to mix.
  4. Dump into pastry lined 9" pie pan, dot with butter and add the top crust. Cut vent holes.
  5. Bake until it bubbles and the crust is browned. About 35-45 minutes.
