Ingredients
  • 2 cups zucchini shredded
  • 1 1/2 cups sugar
  • 3/4 cup canola oil
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1/3 cup cocoa
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup walnuts chopped (optional)
Frosting
  • 1/4 cup butter
  • 1 cup sugar
  • 1/4 cup milk
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup miniature marshmallow
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts chopped (optional)
Instructions
  1. Combine the zucchini, sugar, vanilla and oil. Add the dry ingredients (sifted together if you'd like) and mix well. Pour into a greased 9x13 pan and bake at 350 degrees F for 35-40 minutes. Cool 30 minutes.
  2. For the frosting, melt the butter in a saucepan on medium heat. Stir in the sugar and milk and bring to a boil, stirring frequently. Boil and stir 1 minute, then remove from heat.
  3. Stir in the chocolate chips and marshmallows until melted. Add the vanilla and quickly spread over brownies.
  4. Sprinkle with walnuts if desired.
