Creamy Burrito Casserole
Ingredients
  • 1 lb ground beef or 1 lb ground turkey
  • 1/2 medium yellow onion chopped
  • 1 1 1/4 ounce package taco seasoning
  • 6 large flour tortillas
  • 1 16 ounce can refried beans
  • 2 -3 cups shredded taco cheese or 2 -3 cups cheddar cheese
  • 1 10 3/4 ounce can cream of mushroom soup
  • 4 ounces sour cream
  • jarred hot sauce if desired to spice it up
Instructions
  1. Brown the ground meat/turkey & onion; drain. Add the taco seasoning and stir in the refried beans.
  2. Mix the soup and sour cream in a separate bowl. Spread 1/2 sour cream mixture in the bottom of a casserole dish.
  3. Tear up 3 tortillas and spread over sour cream mixture. Put 1/2 the meat bean mixture over that. Add a layer of cheese.
  4. You could put some hot sauce on this now.
  5. Repeat the layers.
  6. Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.

Paula Deen Old Time Beef Stew is my favorite beef stew of all time. I eat it year around. If it’s from Paula you know it’s good!!!

I trust Paula!

This recipe makes a really thick stew. Rich, flavorful and a great meal for any weather.

Now I would be the last to make corrections to a Paula Deen recipe. But when I want a little thinner stew with lotsa’ gravy I do add a couple more cups of water.

That’s not really messing with the recipe. Just making it a little thinner. That’s all!

Ingredients
  • 2 lbs stewing beef
  • 2 tablespoons vegetable oil
  • 2 cups water
  • 1 teaspoon Worcestershire sauce
  • 1 garlic clove minced
  • 1 -2 bay leaf
  • 1 medium onion sliced
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 dash ground allspice or 1 dash clove
  • 3 large carrots sliced
  • 4 red potatoes quartered
  • 3 celery ribs chopped
  • 2 tablespoons cornstarch
Instructions
  1. Brown the stew meat in the hot oil. Add the water, Worcestershire sauce, garlic, bay leaves, onion, salt, sugar, pepper, paprika, and allspice. Cover and simmer 1-1/2 hours.
  2. Remove the bay leaves. Add the carrots, potatoes, and celery. Cover and cook 20-30 minutes longer or until the vegetables are cooked.
  3. To thicken the gravy, remove 2 cups hot liquid. Using a separate bowl, combine 1/4 cup of water and the cornstarch until smooth. Mix with the hot liquid and return the mixture to the pot. Stir and cook until bubbly and thickened.

  • 1 egg
  • 1/2 cup cola divided
  • 1/2 cup crushed saltine crackers
  • 6 tablespoons French dressing divided
  • 2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1 1/2 lbs hamburger
Instructions
  1. Combine the egg, 1/4 cup of the cola, crackers, 2 tbsp. dressing, cheese and salt. Add the beef and mix well.
  2. Shape into six patties.
  3. In a bowl, combine the remaining cola and dressing.
  4. Grill or pan fry the patties, uncovered, for about 3 minutes per side. Brush with cola mixture.
  5. Cook 8-10 minutes longer or until the juices run clear basting and turning as needed.
  6. Serve on buns.

Tips and Tidbits

I hate to fire up my grill just for 10 minutes of burger grilling. So I usually make a double or triple batch of these and freeze the leftovers.

After thawing I wrap in foil and reheat in a 250F degree oven until warm. This reheating method helps keep them from cooking additionally so they stay juicy.

Be sure to use regular ground beef for these. Excessively lean ground beef will dry out more and not have the juicy flavor.

Southwestern Taco Casserole
Ingredients
  • 1 lb ground beef
  • 1 1 1/4 ounce envelope taco seasoning
  • 1 10 1/2 ounce can mushroom soup
  • 1 8 ounce can beef broth
  • 1 14 ounce can rotel
  • 6 slices cheddar cheese
  • 1 8 ounce bag tortilla chips
Instructions
  1. Brown the ground beef. Add the taco seasoning, mushroom soup, beef broth, and Rotel tomatoes. Bring to a simmer. Simmer for about 5-10 minutes.
  2. Pour the tortilla chips into bottom of casserole dish (leave whole). Pour the beef mixture over the chips. Place the sliced cheese on top.
  3. Bake at 375° for about 10 minutes or until cheese is melted.

Tips and Tidbits About Southwestern Taco Casserole

I used Taco flavored Doritos and added shredded lettuce, sour cream and salsa after coming out of the oven and putting on the plate – very yummy!!

Add some onion and jalapeño while cooking, and some sour cream when served.

Ingredients
  • 1 1/2 cups flour
  • 1 1/2 teaspoons salt
  • 2 teaspoons pepper freshly ground
  • 1 teaspoon cayenne
  • 2 eggs
  • 1/2 cup cream
  • 1/2 cup bock beer
  • 2 cups vegetable oil
  • 4 round steaks tenderized (about 1/2 pound each)
  • 1/4 cup unsalted butter
  • 2 tablespoons flour
  • 1 1/3 cups milk
  • salt
  • teaspoon cracked pepper
Instructions
  1. Prepare the flour spice by blending the flour, salt, pepper, and cayenne. Set aside on a plate or wax paper.
  2. Prepare the batter by mixing the eggs with a whisk, in a large bowl. Add the cream, and beer. Whisk to blend. Set aside.
  3. In a deep, heavy skillet, heat the oil to 350 degrees. While the oil is heating, prepare the round steaks by dredging them in the flour spice, taking care to evenly coat the meat. Shake off any excess.
  4. Dip the meat into the batter, and then again in the flour spice, evenly coating the batter so it is dry on the outside.
  5. When the oil temperature reaches 350 degrees (when a drop of batter sizzles when dropped in it), gently slide one steak into the hot oil. Cook the steak about 5 minutes.
  6. Turn, taking care not to break the coating, and cook the meat 5 more minutes, or until the batter is nicely browned. Drain the cooked steak on paper towels. Repeat with the other steaks.
  7. Hold the cooked steaks in a 225 degree oven until all four are done. Pour Cracked-Pepper Gravy over the steaks and serve. Yield: 4 servings.
Cracked Pepper Gravy
  1. Melt the butter in a heavy saucepan. When the foam goes down, whisk in the flour. Continually whisk until the flour cooks, becoming a fragrant light brown.
  2. Slowly add the milk, continuing to whisk to keep lumps from forming. Season with salt and cracked black pepper.
  3. Simmer gravy for 10 minutes to cook and reduce. Serve hot.

Tips and Tidbits For Chicken Fried Steak With Cracked Pepper Gravy

Try using onion salt in the gravy and be sure to use fresh cracked pepper. This gravy is also great over sausage and biscuits.

Instead of butter for the gravy, you can use a bit of the frying oil for even more flavor.

  5. Bake for 40-45 minutes until eggs are firm. Remove from oven and sprinkle with remaining cheese. Allow to stand for 5 minutes before cutting.

I have added olives, green and red bell peppers, peas and carrots, hash browns, etc. All good.

Poverty Meal – Easy, Budget Friendly & Delicious

I wasn’t exactly raised in poverty but I ate this poverty meal as a child. My grandmother and mother were both very frugal cooks. They were very frugal cooks because money was tight.

I didn’t realize that until I was an adult. To me they just served great food!

Whether you are in no money times, or not, this is a super meal to have! It’s very easy to make, extremely budget friendly and doggone delicious!

I keep it simple by serving just crusty rolls and a salad.

This is comfort food to me and it’s just doggone good! Leftovers are even better!

Yummy and filling. Simple home style goodness in one pan. Nice on the budget, great comfort food.

Chicken Fried steak is a classic and it just has to have cream gravy with it!

Ingredients
  • oil or shortening for frying
  • 6 -8 beef cutlets tenderized (round or cube steak)
  • 3 -4 cups seasoned flour flour with savory seasonings of your choice
  • 3 eggs
  • 2 cups milk
Instructions
  1. Heat about 1/4-1/2 inch of oil or shortening in a frying pan.
  2. Beat the eggs then combine with the milk.
  3. Dredge tenderized beef cutlets in the flour, then egg-milk wash, then a second time in the flour.
  4. Place the dredged cutlets into the heated oil and fry until golden, about 10 minutes. Turn steak over and cook for another 5 minutes or so until both sides are golden.
  5. Remove to a plate lined with paper towels and allow to drain.
Time to Make The Gravy:
  1. Drain all but 1-2 tablespoons of drippings from the frying pan; leave all the cooked bits you can.
  2. Combine the flour and seasonings with the milk, then pour into the pan with drippings and bits.
  3. Continually stir/whisk the gravy over medium heat for 10-15 minutes, or until desired consistency.
  4. Taste and add more salt or pepper if necessary.
  5. Serve generously over each piece of chicken fried steak. Sop up any extra gravy with a biscuit.

With this Tex Mex Rice Casserole you can feed six hungry people with just a pound of ground beef, a cup of rice, a jar of salsa and a can of corn. Now that’s frugal!

You’re not just filling bellies either. This is delicious food with a Tex/Mex flair. It’s seasoned with chili powder and topped with creamy cheddar cheese!

Choose mild, medium or hot salsa. I use the hot and add an additional diced jalapeno pepper because I’m a heat lover.

Tex Mex Rice Casserole Recipe

Tex Mex Rice Casserole

Ingredients

1 lb ground beef
1 cup long grain rice
2 cups water
1 (16 ounce) jar salsa
1 (11 ounce) can mexicorn
1 teaspoon chili powder
1/2 teaspoon salt
1 cup cheddar cheese, shredded

Directions

Place the 2 cups of water and long grain rice in a medium sauce pan and bring to a boil. Reduce heat to a simmer, place a lid on, set timer for 20 minutes and cook rice until done.

Preheat oven to 350°F.

In a skillet, brown the ground beef and drain off any excess fat. Place in a large mixing bowl.

Add the jar of salsa to the ground beef. Also add the chili powder, Mexicorn, rice and salt. Mix with a wooden spoon until combined well.

Spray a 2 quart casserole dish. Put rice mixture into dish. Cover with a lid or foil and bake in preheated oven for 30 minutes.

After 30 minutes, take off the lid/foil, add the shredded cheddar cheese evenly over the top and bake for an additional 5 minutes.

Remove from the oven, serve and enjoy!

Hearty Hamburger Soup
Ingredients
  • 2 lbs lean ground beef
  • 1 white onion peeled and diced
  • 1/4 teaspoon ground black pepper more to taste
  • 1/2 teaspoon dry oregano more to taste
  • 1/2 teaspoon dry basil more to taste
  • 1/4 teaspoon seasoning salt
  • 1 1 1/2 ounce envelope onion soup mix
  • 6 cups water more to desired consistency
  • 1 8 ounce can tomato sauce
  • 1 tablespoon soy sauce
  • 1 15 ounce can diced tomatoes, undrained
  • 1 15 ounce can corn, drained
  • 1 cup celery sliced
  • 1/4 cup celery leaves coarsely chopped
  • 1 cup fresh carrot sliced
  • 1 cup white potato peeled and cut into small cubes
  • garlic salt to taste
  • shredded Parmesan cheese to serve
  • sour cream to serve
Instructions
  1. Brown the ground beef and onion in a large pot. Drain if needed. Add the spices and the onion soup mix.
  2. Stir in the water, tomato sauce and soy sauce. Bring the mixture to a boil; then reduce heat, cover, and simmer for 15 minutes.
  3. Add the rest of the ingredients up to the potatoes bring to a boil; reduce heat, and simmer uncovered until the potatoes and carrots are tender about 30 minutes. (Add more water if needed).
  4. Season to taste with garlic salt.

Serve with shredded Parmesan cheese and sour cream.

Tips and Tidbits For Hearty Hamburger Soup

Add a splash of red wine and a splash of Worcestershire sauce for even more depth of flavor.

Substitute beef broth or stock for some of the water. Or instead of adding any water at all, put in 4 cups of beef stock and 2-3 cups of Clamato tomato juice–the juice is the magical ingredient here!

Try adding in 3 cloves of minced garlic, red pepper chili flakes and a bit of cayenne to pack on a little heat!
