This Impossible Coconut Pie is well named. The first time I saw this I thought, how can this turn out as it claims, but it does!!

The flour will settle to the bottom to form a crust, the coconut rises to the top and forms the topping, the center is an egg custard filling.

Impossible! Nope. Works every time plus it’s delicious.

It seems impossible but this technique really works. Delicious coconut pie.

Ingredients
  • 4 eggs
  • 1/2 cup margarine
  • 1/2 cup flour
  • 2 cups milk
  • 1 cup sugar
  • 1 cup coconut
  • 2 teaspoons vanilla
Instructions
  1. Blend all ingredients in a blender for a few seconds, until well mixed. Pour the mixture into a 10” greased pie plate.
  2. Bake at 350 degrees Fahrenheit for 1 hour or until center tests firm.
