- 2 pounds boneless skinless chicken breasts
- 1/4 cup fresh lemon juice
- 1/4 cup white wine
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 2 cloves garlic minced
- 2 tablespoons butter or olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon fresh parsley chopped
- Season the chicken breasts with the kosher salt, black pepper, and the dried oregano. Rub the herbs and spices into the flesh on both sides.
- Heat the butter or olive oil in a large skillet and brown the chicken breasts on both sides, about 3 to 5 minutes, then put them in the bottom of a crockpot.
- In the same skillet, sauté the minced garlic just until it has turned golden. Add the white wine and scrape up any brown bits in the bottom of the skillet.
