Totally Addictive Cheese Bites

Believe me when I tell you that these Totally Addictive Cheese Bites are ridiculously delicious appetizers. Great for get togethers for any reason. Especially nice for football couchgatin’.

What’s really nice about these cheese bites is that they freeze so well and can be baked from frozen! Make up a huge batch and individually freeze and you’ve got appetizers anytime the need pops up.

Totally Addictive Cheese Bites
Ingredients
  • 2 lbs sharp cheddar cheese shredded
  • 2 cups unsalted butter softened
  • 5 cups all-purpose flour
  • 1 teaspoon salt
  • 1 ⁄2 teaspoon cayenne pepper
  • 1 8 ounce jarsmall pimento-stuffed green olives, well drained (optional)
  • raw pecan halves optional
Instructions
  1. Combine the cheese, butter, flour, salt, and cayenne in a large bowl and knead into a dough. Roll the dough into 1 inch balls and place on an un-greased baking sheet.
  2. If using olives, form each ball around 1 olive.
  3. If using pecans, press 1 pecan half onto each ball.
  4. You can bake them right now or freeze for later at this point.
For freezing:
  1. Place the cheese balls on trays in the freezer for 30 minutes until partially frozen. Remove from the freezer and place in freezer bags or a freezer container. Seal and freeze.
  2. You can bake them straight from the freezer.
For baking:
  1. Preheat your oven to 425°F. Place the cheese balls 3 inches apart on an un-greased baking sheet.
  2. Bake 15-17 minutes if frozen, 13-15 minutes if thawed.

Tips and Tidbits

If you like spicy you can quadruple the cayenne pepper the way I like. They’ll be nice and spicy. They are also very good with some finely diced jalapenos!

If you’re using pecans and/or olives you can alternatively dice them finely and incorporate into the dough.
