Quick and Easy Spicy Garlic Shrimp
Ingredients
  • 12 shrimp Jumbo sized, peeled, deveined, & tails intact
  • 2 tablespoons olive oil
  • 2 garlic cloves crushed with the side of a knife
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon steak seasoning Montreal Seasoning by McCormick is recommended
  • 1 teaspoon lemon zest of
  • 2 teaspoons lemon juice
  • 1 tablespoon fresh parsley chopped
Instructions
  1. Heat a large skillet over medium high heat. Add olive oil, garlic, red pepper flakes, and shrimp. Season with grill seasoning or salt & pepper.
  2. Cook the shrimp 3 minutes or until just pink. Toss with lemon zest, juice, & chopped parsley.
  3. Remove shrimp to a serving platter, leaving the garlic cloves in the pan.

Ingredients
  • 1 lb ground beef
  • 1 1 1/4 ounce envelope taco seasoning
  • 1 10 1/2 ounce can mushroom soup
  • 1 8 ounce can beef broth
  • 1 14 ounce can rotel
  • 6 slices cheddar cheese
  • 1 8 ounce bag tortilla chips
Instructions
  1. Brown the ground beef. Add the taco seasoning, mushroom soup, beef broth, and Rotel tomatoes. Bring to a simmer. Simmer for about 5-10 minutes.
  2. Pour the tortilla chips into bottom of casserole dish (leave whole). Pour the beef mixture over the chips. Place the sliced cheese on top.
  3. Bake at 375° for about 10 minutes or until cheese is melted.

Tips and Tidbits About Southwestern Taco Casserole

I used Taco flavored Doritos and added shredded lettuce, sour cream and salsa after coming out of the oven and putting on the plate – very yummy!!

Add some onion and jalapeño while cooking, and some sour cream when served.

  • 1/4 cup extra virgin olive oil
  • 1/4 cup white vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons chopped garlic
  • 5 cups mushrooms about 1 pound
  • 2 tablespoons thinly sliced green onions or more
Instructions
  1. Combine the oil, vinegar, soy sauce, garlic and mushrooms in a sauce pan.
  2. Bring to a boil then reduce heat and simmer 15 minutes or until liquid is mostly absorbed stirring occasionally.
  3. Cool, strain, add green onions and serve with toothpicks.

Ingredients
  • 6 boneless skinless chicken breasts
  • 1 16 ounce bottle light Italian dressing
  • 1/2 cup light ranch salad dressing
  • 2 tablespoons olive oil
  • 5 tablespoons minced garlic divided
  • 2 1/4 cups shredded Parmesan cheese divided
  • 1 tablespoon dried parsley
  • olive oil flavored cooking spray
  • 1/3 cup finely chopped white onion
  • 1 8 ounce can tomato sauce
  • 1 6 ounce can tomato paste
  • 3 tablespoons dried basil divided
  • 3 tablespoons dried oregano divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 1/2 cups mozzarella cheese grated
Instructions
  1. The morning or the night before serving, combine Italian dressing, ranch dressing, 3 tablespoons minced garlic, and 2 tablespoons olive oil in a large zip lock bag.

  2. Squish bag around to combine all the ingredients. Add the chicken breasts to the bag, close and squish until they are well coated in the dressing mixture. Put the bag in a bowl (to prevent spills) and refrigerate all day or overnight up 24 hours.

  3. When ready to cook, Preheat your oven to 400F. Then mix 2 cups Parmesan cheese, with parsley, 1 1/2 tablespoons of the basil and oregano (each).

  4. Spray a large baking dish (big enough for all six breasts) with olive oil cooking spray.

  5. Remove the chicken from the baggie one by one and "dredge" in the cheese and spice mixture, until thoroughly coated. Then place the chicken in a single layer in the dish.

  6. When all the chicken is coated, place it in the oven and bake for 20-25 minutes (or until the internal temp is 155F).

  7. While the chicken bakes make the sauce.

  8. Spray the saucepan with olive oil cooking spray (or use 1 tablespoon olive oil but do not use another flavor spray). Then saute the onions and the remaining garlic until tender and onions are translucent.

  9. Add the tomato paste and tomato sauce to the garlic and onions. Stir until smooth. Then add the remaining, oregano and basil and the other spices including the bay leaf. (At this point if the sauce looks too thick for your liking add 1 tomato sauce can of water)

  10. Allow the mixture to simmer for the remainder of the baking time until you need it.

  11. When the chicken has baked 20 minutes, remove from the oven and top each breast with sauce (to your liking, we cover the whole thing) and then top with 1/4 cup of mozzarella cheese (again to your liking) put the baking dish back into the oven for 10 more minutes or until the cheese is bubbly. Then switch your broiler on to brown the cheese (optional).

  12. Remove from the oven and sprinkle with the remaining Parmesan cheese.

 

Serve it up, I have never had anyone not finish this!

Tips and Tidbits For Easy Baked Chicken Parmesan

You can definitely speed up the process by using a jarred sauce from the grocery. Personally I prefer homemade but if you like the jarred then use it.

You can kick up the jarred sauce a bit by adding some wine, a can of diced tomatoes, sauteed onion, bell pepper, and garlic.

You could also make the sauce the night before and then just bring it to room temp before cooking.

You can also save time by making a huge batch of the marinara sauce and freezing it so you have it handy for this recipe, pizza, or spaghetti.

Serve it with spaghetti noodles and garlic bread.

Company’s Coming Mac and Cheese Recipe

Company's Coming Mac and Cheese
Ingredients
  • 1 16 ounce box rigatoni pasta
  • 8 ounces sharp cheddar cheese shredded
  • 8 ounces monterey jack cheese shredded
  • 4 ounces parmesan cheese grated
  • 2 cups heavy cream
  • salt and pepper
Instructions
  1. Preheat oven to 350°F.
  2. Prepare rigatoni noodles according to package directions, but add a good bit of salt to the water. Once cooked, drain but do not rinse the pasta.
  3. Transfer pasta to a large mixing bowl. Add half the cheddar, Monterrey jack and Parmesan cheeses, as well as the heavy cream. Stir well to combine, season with pepper to taste.
  4. Transfer the mixture to a 9"x13" casserole dish. Sprinkle the remaining cheeses on top and bake for 30 minutes until golden brown and bubbly.

Ingredients
  • 1 1/2 cups flour
  • 1 1/2 teaspoons salt
  • 2 teaspoons pepper freshly ground
  • 1 teaspoon cayenne
  • 2 eggs
  • 1/2 cup cream
  • 1/2 cup bock beer
  • 2 cups vegetable oil
  • 4 round steaks tenderized (about 1/2 pound each)
  • 1/4 cup unsalted butter
  • 2 tablespoons flour
  • 1 1/3 cups milk
  • salt
  • teaspoon cracked pepper
Instructions
  1. Prepare the flour spice by blending the flour, salt, pepper, and cayenne. Set aside on a plate or wax paper.
  2. Prepare the batter by mixing the eggs with a whisk, in a large bowl. Add the cream, and beer. Whisk to blend. Set aside.
  3. In a deep, heavy skillet, heat the oil to 350 degrees. While the oil is heating, prepare the round steaks by dredging them in the flour spice, taking care to evenly coat the meat. Shake off any excess.
  4. Dip the meat into the batter, and then again in the flour spice, evenly coating the batter so it is dry on the outside.
  5. When the oil temperature reaches 350 degrees (when a drop of batter sizzles when dropped in it), gently slide one steak into the hot oil. Cook the steak about 5 minutes.
  6. Turn, taking care not to break the coating, and cook the meat 5 more minutes, or until the batter is nicely browned. Drain the cooked steak on paper towels. Repeat with the other steaks.
  7. Hold the cooked steaks in a 225 degree oven until all four are done. Pour Cracked-Pepper Gravy over the steaks and serve. Yield: 4 servings.
Cracked Pepper Gravy
  1. Melt the butter in a heavy saucepan. When the foam goes down, whisk in the flour. Continually whisk until the flour cooks, becoming a fragrant light brown.
  2. Slowly add the milk, continuing to whisk to keep lumps from forming. Season with salt and cracked black pepper.
  3. Simmer gravy for 10 minutes to cook and reduce. Serve hot.

Tips and Tidbits For Chicken Fried Steak With Cracked Pepper Gravy

Try using onion salt in the gravy and be sure to use fresh cracked pepper. This gravy is also great over sausage and biscuits.

Instead of butter for the gravy, you can use a bit of the frying oil for even more flavor.

Ingredients
  • 1 lb pork tenderloin
  • 2 green peppers
  • 4 slices pineapple
  • 6 cups peanut oil
Pork Marinade
  • 2 teaspoon salt to marinate pork
  • 1/2 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1 egg yolk
Sauce
  • 3 tablespoons vinegar Seasoning Sauce
  • 4 tablespoons sugar
  • 4 tablespoons tomato catsup
  • 4 tablespoons cold water
  • 3 teaspoons cornstarch
  • 1 teaspoon salt
  • 1 teaspoon sesame oil
  • 3 tablespoons cornstarch
Instructions
  1. Make the marinade by mixing all the ingredients together thoroughly. Do the same with the sauce ingredients.
  2. Pound pork with the back of a cleaver (this is to tenderize the pork), and then cut into 1-inch squares.
  3. Soak with marinade for at least half an hour.
  4. Cut the green pepper into halves, remove seeds and membrane, and cut into 1" squares.
  5. Next cut 4 slices of pineapple into the same size squares.
  6. Set aside.
  7. Heat 6 cups oil.
  8. While oil is heating, coat each piece of pork in cornstarch.
  9. When oil is ready, fry pork until brown and done (about 2 minutes), take out, reheat oil then fry once more until crispy. Remove pork and drain off oil from frying pan.
  10. Pour out the oil and put back 2 Tablespoons; fry the green pepper and pineapple, stirring constantly. Add the seasoning sauce continuing to stir fry, until thickened.
  11. Turn off the heat.
  12. Add the pork, mix well and serve immediately.

Serve over rice!

The flavor of this Italian Sausage and Tortellini Soup is just incredible, and anyone that tries it falls immediately in love with it! Very easy to make, and smells so good while simmering, too.

Italian Sausage and Tortellini Soup
Ingredients
  • 1 lb Italian sausage casings removed
  • 1 cup chopped onion
  • 3 garlic cloves minced
  • 5 cups beef broth
  • 2 cups chopped tomatoes
  • 1 8 ounce can tomato sauce
  • 1 large zucchini chopped or sliced
  • 1 large carrot sliced
  • 1 green bell pepper chopped
  • 1/2 cup dry red wine
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 10 ounces cheese tortellini
  • salt and pepper
  • fresh grated parmesan cheese
Instructions
  1. In a 5 quart saucepan or chili pot, saute and crumble the Italian sausage until no longer pink. Drain the sausage well on paper towels and pour off all but 1 tablespoon of drippings from saucepan.
  2. Add the onion and garlic to chili pot. Saute until translucent.
  3. Return the sausage to the pan; add the beef broth, tomatoes, tomato sauce, zucchini, carrot, bell pepper, wine, basil, and oregano.
  4. Simmer until vegetables are tender, 40-60 minutes.
  5. Add tortellini and cook until tender. Season to taste with salt and pepper.
  6. Ladle into individual soup bowls and sprinkle with Parmesan cheese.

They are extremely rich and not for people with a fear of chocolate and peanut butter (if those people actually exist)!!! Very easy no bake 5 ingredient recipe!

Amazingly delicious! Super-easy to put together. They taste exactly like Reese’s when you eat them at room temperature.

If you eat them right out of the fridge, the texture isn’t quite right. (Well, unless you usually refrigerate your Reese’s Peanut Butter Cups, I guess.)

These would be a great addition to Holiday plates for family and friends.

5 Ingredient No Bake Reese's Squares
Ingredients
  • 1 1/2 cups graham cracker crumbs
  • 1 lb confectioners' sugar 3 to 3 1/2 cups
  • 1 1/2 cups peanut butter
  • 1 cup butter melted
  • 1 12 ounce bag milk chocolate chips
Instructions
  1. Combine graham crumbs, sugar and peanut butter and mix well. Blend in the melted butter until well combined. Press the mixture evenly into a 9 x 13 inch pan.
  2. Melt chocolate chips in microwave or in double boiler. Spread over the peanut butter mixture.
  3. Chill until just set and cut into bars (these are very hard to cut if the chocolate gets "rock hard".)
