This is a really good pork chops casserole. Even with lean pork chops. The potato and soup add some texture and a little fat to the dish.
Pork chops were a special treat in my family when I was growing up. Mostly we had chicken on Sundays and during the week it was pinto beans, potatoes, and cornbread.
Well, I can afford pork chops now and they’ve bred all the fat out of today’s hogs! Darn. I can’t win for losing.
However, this casserole is really good and not hard at all. In fact, it’s fall down easy!

A really easy to make pork chop dinner.
- 4 boneless pork chops
- 1 10 1/2 oz can Campbell's cream of mushroom soup
- sliced onion
- 1 large baking potato sliced 1/4-1/2 inch thick
Layer potatoes onion and pork chops. Add soup (add no water or milk).
- Cover and bake at 350 for 45 minutes to an hour.
