turkey carcass
practically picked clean
2
bay leaves
2
onions
peeled and quartered
2
carrots
2
stalks of celery rough chopped
1
sprig thyme
Instructions
Toss everything into a large stockpot. Add enough water to cover. Bring to a boil, then lower heat to a slow simmer.
Simmer all day or if you're in a hurry at least for one hour.
Strain.
