1lbboneless skinless chicken breastcut into bite-size pieces
1lbboneless skinless chicken thighscut into bite-size pieces
2cupsmushroomshalved
2cupswater
1cupfrozen small whole onionsor 3/4 cup chopped onion
1cupcelerysliced, 1/2 inch slices
1 1/2cupscarrotsthinly sliced
1teaspoonpaprika
1/2teaspoonsaltto taste
1teaspoondried rubbed sage
1/2teaspoondried thyme
1/2teaspoonpepperfreshly ground, to taste
14 1/4ounceschicken broth
6ouncestomato paste
1/2cuplow sodium chicken broth or 1⁄2 cup vegetable broth
3tablespoonscornstarch
2cupsfrozen green peas
Instructions
Combine the first 14 ingredients in an electric slow cooker. Cover with lid and cook on high setting for 4 hours or until carrot is tender. You can also cook on low for 8 hours!
Combine the water and cornstarch in a small bowl, stirring with a whisk until blended. Add the cornstarch mixture and frozen peas to the slow cooker, stir well.
Re-cover and cook on high-heat setting an 30 additional minutes.
