Instructions
Melt the butter in a med. size pot over medium high heat. Add in the veggies and stir to coat in the butter.
Add in the remaining ingredients and bring to a boil.
Reduce the heat to medium and cook until the carrots are fork tender, not mushy, about 10-12 minutes.
