2lbsyellow squashsliced
2cupschopped onions
2teaspoonssalt
1teaspoonblack pepper
1/2teaspoonground nutmegdo not omit this secret ingredient
8ouncessharp cheddar cheesegrated (2 cups)
1cupmilk
2whole eggs
16saltine crackers or 16 Ritz crackerscrushed
1/2teaspoonpaprika
Instructions
Steam the squash and onions for 10 minutes or until tender. Drain.
Add 1-3/4 cups of the cheese and all the other ingredients (except paprika) together. Pour into a 2-quart casserole dish (9x13x2-inch). Sprinkle the remaining cheese on top.
Just before baking, sprinkle the top with paprika, and bake at 350 degrees for 45 minutes or until slightly browned on top.
