18 ounce box Jiffy cornbread mix or scratch
115 ounce can whole kernel corn, drained
115 ounce can creamed corn (not drained)
1cupsour cream
1/2cupmelted butter
Homemade Corn Muffin Mix
2/3cupflour
1/2cupyellow cornmealNote 2
3tbspwhite sugar
1tbspbaking powder
1/4tspsalt
2tbspvegetable oil
Instructions
Homemade Corn Muffin Mix
Whisk ingredients in a bowl until mostly lump free. Use in place of Jiffy corn muffin mix per recipe.

Mix all ingredients and pour into (greased or sprayed with cooking spray) 8x8" casserole dish.
