Another great Zucchini dish. What a great way to use up extra zucchini. Tastes like a quiche. It’s good right out of the oven but also warms up nicely the next day,
I like it not only because it’s simple and quick but also because it’s easily customized.

1 cup Bisquick
1⁄2 cup chopped onion
1⁄2 cup grated cheese
1⁄2 teaspoon salt
1⁄2 cup vegetable oil
3 cups thinly sliced zucchini
Mix all ingredients and pour into greased 9X13 pan.
Bake at 350 degrees for 30 minutes.
Love this recipe. It’s one that I’ve memorized because it’s so easy. This is my go-to breakfast recipe for weekends and I love how flexible it is–I’ve used bacon, sausage, ham, added mushrooms, and have also added extra onion.
