Low Calorie Low Fat Broccoli Salad
4 cups broccoli florets or 4 cups Broccolini
1/4 cup red onion, minced
2 tablespoons splenda artificial sweetener, Granulated
2 tablespoons cider vinegar
2 tablespoons light mayonnaise
2 tablespoons sunflower seeds, roasted and salted
3 tablespoons seedless raisins
Discard the broccoli stems and finely chop the florets or broccolini. Set aside.
In a medium mixing bowl, whisk the Splenda, vinegar and mayonnaise toghether until it is an even, smooth consistency.
Stir in the broccoli and the remaining ingredients. Toss until well coated.
Chill until ready to serve.
Serve it up with Lemon Chicken and Balsamic Green Beans!
