Justin Wilson’s Fried Catfish

This batter is great on any fish. My favorite is catfish but tilapia is just as good. An absolutely wonderful recipe! Gives a nice crispy crunch!

Sometimes I like to kick up the spices quite a bit. Old Bay is good!

Very good and very easy. After frying I season with coarse salt, lemon and parsley.

Justin Wilson’s Fried Catfish


10 lbs catfish
1 cup milk
cooking oil
1 cup plain flour
2 1⁄2 cups cornmeal
1⁄2 teaspoon salt
1⁄8 teaspoon red cayenne pepper
1 teaspoon garlic powder
1 teaspoon butter-flavored salt


Soak fish in milk.

Mix the dry ingredients thoroughly in a bowl or bag.

Roll the fish in dry ingredients Fry in hot cooking oil deep enough to float the fish.

(Be sure grease or oil is not too hot, about 350 degrees).
