Cherry Tomato & Corn Salad

This salad is sooo good. It’s quick, easy and delicious. It is from Taste of Homes, Weeknight Cooking Made Easy. I used frozen sweet white corn. Perfect summer flavors!

The dish works fine with frozen corn but it’s such a wonderful way to use fresh summer produce.

Excellent salad.

Cherry Tomato & Corn Salad


1⁄4 cup fresh basil, minced
3 tablespoons olive oil
2 teaspoons lime juice
1 teaspoon sugar
1⁄2 teaspoon salt
1⁄4 teaspoon pepper
2 cups frozen corn, thawed
2 cups cherry tomatoes, halved
1 cup chopped seeded peeled cucumber


In a jar with a tight fitting lid, combine the basil, oil, lime juice, sugar, salt and pepper, shake well.

In a large bowl, combine the corn, tomatoes and cucumber. Drizzle with dressing and toss to coat.

Refrigerate until serving.

Super Easy Macaroni Salad

This is a nice, basic macaroni salad. I used mayonnaise and added some sugar and vinegar to add some tanginess. The diced red onions are nice for crunch as well as flavor.
